Bacon makes everything better, right? If you're a bacon lover like me, you need to make this easy keto appetizer that simply involves wrapping pieces of bacon around chunks of marinated chicken.
After making the most delicious Keto Creamy Mustard Sauce (seriously, it is so good I could drink it!), I knew I needed to incorporate it into more recipes. Just like this Delicious Bay Scallop Hot Seafood Dip or this Keto Asian Chicken Dip, making easy keto appetizers is something that I truly enjoy creating.
By simply taking bite-size pieces of chicken and marinating them in a simple sugar-free mustard-maple sauce and then wrapping them up in a small strip of bacon, you have the perfect keto football appetizer or quick and easy snack. Serve this easy keto appetizer with any number of dips such as more mustard, barbecue sauce, or without any dip at all!
The best part is that this recipe is incredibly simple - you only need four ingredients to make this recipe.

Bacon-Wrapped Mustard Chicken Bites Ingredients
I have stated earlier, you only need for ingredients to make these keto chicken bacon bites! Listed below are the ingredients I used as well as substitutions!
- Boneless skinless chicken - You can use either boneless skinless chicken breast or thigh meat
- Mustard sauce - I used my favourite mustard sauce recipe. However, feel free to use a store-bought mustard instead.
- Sugar-free maple syrup - Sugar-free maple syrup keeps this a low carb chicken bacon recipe. Feel free to use sugar-free honey instead for a honey mustard version.
- Bacon - As much as I LOVE center-cut bacon, you can use any bacon you wish in this recipe. I suggest starting with an entire pack of bacon, even though you will most likely have leftover bacon.

Making Low Carb Chicken Bacon Bites
This recipe is perfect for holidays or makes a great keto football appetizer! Feel free to double the recipe for a larger crowd!

Cut the chicken into pieces and mix together the mustard and the sugar-free maple syrup.

Mix together the pieces of cut chicken with the maple syrup and mustard. Wrap each chicken bite and roll it so that you start and finish with the seam-side down to secure the bacon.

Take the wrapped chicken bites and arrange them on a baking rack set inside a baking tray. Bake for 17-19 minutes at 425˚F, or until done (Chicken is done when internal temperature reaches 165 degrees F.)

If desired, remove the baking sheet from the oven and sprinkle with a sugar-free brown sugar substitute. Turn the broiler on "hi" for 2 minutes to finish to add a nice crispy caramelization to the bacon.
Hint - I do not suggest using thick-cut bacon as it is harder to wrap around the chicken and it will take longer to cook

RECIPE VARIATIONS
I've made this recipe with yellow mustard and Dijon mustard, and sometimes I even just season the chicken and don't even add any mustard. They are all fantastic choices, but honey mustard was my personal favourite. For a low-carb version, I recommend using Dijon mustard.
Or, try this recipe with barbecue sauce! The options are endless. Your chicken bites can also be made with bacon and chicken only and served with several types of dipping sauces.
What can I use if I do not want to make homemade keto mustard sauce?
Although the Creamy Mustard Sauce does not require that much time, I can understand that this is an extra step you may not be willing to take. You can still easily make this appetizer and just replace the homemade mustard sauce with your favourite mustard.
What are the best brands of keto and sugar-free maple syrup?
I love ChocZero and Lakanto sugar-free maple syrup. I have tried Birch Benders and think the syrup is much too watery. Also, cheaper sugar-free maple syrup, such as Log Cabin, contains maltodextrin which will cause your blood sugar to spike so do not use the readily available sugar-free maple syrup if possible.
What is the best way to bake chicken in the oven?
I suggest using a baking rack that sits inside a rimmed baking sheet. Wrap the baking sheet in foil for easy cleanup.
If you don't have a baking rack, you can make these bites on a rimmed baking sheet but they will not crisp as nicely due to the fact that they will be sitting in some grease.
Why do you not specify exactly how much bacon is needed in the recipe?
The reason for not being specific is two-fold:
1 - I do not know how many pieces you will be cutting your chicken into. Since each piece needs to be wrapped, the number of pieces of chicken will vary.
2 - Each type of bacon as well as the company produces varying lengths and stretchability. If you use centre-cut bacon, you will need to cut each strip in half. However, if you use a different type of bacon, you may be able to wrap each piece of chicken with only ⅓ of a piece of bacon.
How do you wrap these keto chicken bacon bites?
To wrap your chicken bites with bacon, I recommend slicing one piece of bacon to make sure it will wrap around completely. If your bacon is not as long (for example, centre-cut bacon), you may need to use a half piece per bite.
Next, lay out your bacon and add your chicken to one end. Roll your chicken up in the bacon and, if need be, secure the bacon with a toothpick. Finally, add a sprinkle of sugar-free brown sugar substitute to the top of each bite.
How many appetizers should I make per person?
If you are having a gathering, it can sometimes be hard to estimate how many appetizers or finger foods you'll need for an upcoming event. For a dinner party, you'll want to offer about 6 bite-sized appetizers per person. If you're hosting a finger-food-only party, up that number to 8-12 per person.

You can make this recipe 1 day ahead of time.
Prepare the chicken with the bacon and store it in an airtight container; keep refrigerated until ready to use. When ready, take the chicken out of the fridge 15 minutes before cooking. Bake as directed in the recipe.
How should I store this easy keto appetizer?
You can store completely cooled bacon-wrapped mustard chicken bites in an airtight container, and keep refrigerated for up to 3 days.
To reheat, arrange chicken breasts in a baking dish; add a bit of water or chicken broth to the dish, loosely cover with aluminium foil, and pop them in a 375˚F preheated oven for 5-10 minutes, or until heated through.

Ingredients
- 8 ounces boneless skinless chicken breast
- 1 package of bacon (you will most likely have leftovers)
- 2 tbsp mustard
- 1 tbps sugar-free maple syrup
- Optional - Brown sugar substitute for sprinkling on top before broiling
Instructions

Preheat oven to 425 degrees. Line a baking sheet with foil and place an oven-safe cooling rack on top. This helps drain and catch grease from your bites as they bake. Set aside.
- In a small bowl, stir together the mustard and sugar-free maple syrup and set the bowl to the side.

Take your chicken and cut the chicken into bite-size cubes, about 1" in size, trying to get them to be as close to the same size for even cooking.

Toss the chicken in the maple mustard sauce. At this point, you can easily place the chicken in the fridge to marinate for 30 minutes for better flavour.

When ready to bake, take a piece of chicken and lay it down on one end of a bacon slice. Roll the bacon around the piece of chicken. When the bacon has fully surrounded the chicken, cut the bacon and place the chicken bite onto the prepared baking sheet with a cooling rack. Repeat with the remaining chicken, using as much bacon as needed.

Bake for about 17-18 minutes, or until chicken is cooked through (your bacon will not look crispy yet). I suggest testing with a meat thermometer, or finding your largest chicken bite and slicing open to ensure they are cooked through.
- Remove the baking pan from the oven and sprinkle each piece of bacon with a little brown sugar substitute.

Return the chicken to the oven and turn on the broiler. Broil for 1-2 minutes, or until the tops of the bites are crispy and lightly browned.

Optional step - Remove from oven and carefully turn each bite over. Return to the oven and broil for another 1-2 minutes, or until the second side is lightly browned and crispy.

Remove from oven and serve warm. Optionally, serve with more honey mustard as a dipping sauce.
