Bacon-Wrapped Mustard Chicken Bites are an easy-to-assemble, four-ingredient appetizer that's perfect for parties, snacking, and Sunday football. These flavourful keto chicken bacon bites make a fantastic finger food snack!  By simply marinating chicken in a sugar-free mustard-maple glaze and wrapping each piece in bacon, you end up with the easiest, yet most delicious, low-carb finger food!

  1. Preheat oven to 425 degrees. Line a baking sheet with foil and place an oven-safe cooling rack on top. This helps drain and catch grease from your bites as they bake. Set aside.
  2. In a small bowl, stir together the mustard and sugar-free maple syrup and set the bowl to the side.
  3. Take your chicken and cut the chicken into bite-size cubes, about 1" in size, trying to get them to be as close to the same size for even cooking.
  4. Toss the chicken in the maple mustard sauce.  At this point, you can easily place the chicken in the fridge to marinate for 30 minutes for better flavour.
  5. When ready to bake, take a piece of chicken and lay it down on one end of a bacon slice.  Roll the bacon around the piece of chicken.  When the bacon has fully surrounded the chicken, cut the bacon and place the chicken bite onto the prepared baking sheet with a cooling rack.  Repeat with the remaining chicken, using as much bacon as needed.
  6. Bake for about 17-18 minutes, or until chicken is cooked through (your bacon will not look crispy yet). I suggest testing with a meat thermometer, or finding your largest chicken bite and slicing open to ensure they are cooked through.
  7. Remove the baking pan from the oven and sprinkle each piece of bacon with a little brown sugar substitute.
  8. Return the chicken to the oven and turn on the broiler. Broil for 1-2 minutes, or until the tops of the bites are crispy and lightly browned.
  9. Optional step - Remove from oven and carefully turn each bite over. Return to the oven and broil for another 1-2 minutes, or until the second side is lightly browned and crispy.
  10. Remove from oven and serve warm. Optionally, serve with more honey mustard as a dipping sauce.

  • the amount of bacon will depend on how many chicken bites you make
  • feel free to double this recipe for a larger crowd.
