The Secret Ingredient
These Parmesan crackers have quickly become my mainstay cracker recipe. I have made parmesan crackers for several years now and although I enjoy my old recipe, there was something that seemed to be missing.
What I realized was that if you look at almost all crackers, you will notice that there is some type of sugar listed in the ingredients. Since I find Parmesan Crisps to be somewhat "harsh" in flavour, I decided to try and add just a dash of sweetener to my recipe.
The results?
Amazingly delicious! Who would have thought that adding that one simply pinch of sweetener could take this recipe over the top!!!
Not only are they perfectly crispy but they are so easy to make with only 3 basic ingredients. Spice them however you like, these gluten-free and low carb crackers are perfect to serve alongside your keto charcuterie platter or with any dip.
And, since these keto crackers are made with sliced almonds and cheese, they are the simplest low carb way to enjoy a crunchy snack! Under 1 gram of net carbs per cracker, you now can have something crunchy to serve with all your dips and cheeses!
Plus, unlike most keto cracker recipes on the internet, there is no need for rolling or flipping the crackers half way through. This is a basic "mix and dump" recipe which makes it even easier than other recipes!

Healthy Crackers
The nutritional content of these crackers is absolutely perfect for any keto, low carb or gluten-free diet.
At only 45 calories, 0.6 grams of fiber, 3.3 grams of fat and only 0.2 grams of sugar, these crackers are not only healthy but absolutely delicious!
3 Main Ingredients
Almonds - I use sliced almonds that I then combine and crush slightly with my hands as I mix the ingredients. You can use almond flour but I the crackers will not be half as crunchy and their look and texture is not half as good as using sliced almonds. If you don't have sliced almonds, you can use any other type of nut but make sure that you dice them into very small sections.
Cheese – I used a combination of shaved Parmesan, Asiago and Romano cheese for the extra crunchiness that I wanted in these crackers. These cheeses are all fairly dry cheese which allows the crackers to crisp beautifully. Make sure that you buy grated or shaved cheese and NOT the a Parmesan Blend of cheese that is sold in the green containers near the pasta section. I buy my cheese from Sam's Club - It is a blend made by BelGioioso and you can get a 1.5 lb bag for under $10! I have also seen this same blend at Target and Walmart. You can also choose a different type of cheese such as cheddar or mozzarella cheese but the more moisture in the cheese, the less crispy the cracker may turn out.
Sweetener - This is the secret ingredient that I think most keto crackers are missing. By adding a pinch (about ⅛-1/4 tsp) of sweetener to the mixture, these crackers take on the most AMAZING flavour. You can use ANY type of sweetener in this recipe as they will all work. Homemade Cracker Flavours
This is where the fun begins!
One of the BEST things about these crackers is just how easy it is to customize the flavours. In the pictures, I simply added some freshly grated black pepper but you could also have added some garlic and onion powder. Or, go a step further and add spice mixes such as my Keto Nacho Cheese Seasoning, Curry Spice Mix Recipe (Whole30), Whole30 Onion Soup Mix or my Easy Taco Seasoning (Whole30)
How to Make Low Carb Crackers
Nothing fancy or difficult is needed to make these crackers.
All you need is just 10 minutes total (2 minutes to combine the ingredients and 8 minutes in the oven to bake!) and you can have these awesome crackers, ready for the best charcuterie board or appetizer platter!
In a large bowl, combine the sliced almonds, sweetener and the cheese. Using your hands, combine the ingredients while slightly breaking the almond slices into smaller pieces. Divide the mixture into 12 equal sections and pat them down slightly (you can use somewhat wet fingers if needed).
Place the baking tray in the oven and bake for 8 minutes. Remove the crackers and let them cool for about 2-4 minutes before removing them from the baking tray and allowing them to cool fully.
THAT'S IT!!!

Making perfectly round crackers
The trick to making these crackers perfectly round is by using a whoopie pie pan. Fill each whoopie pie well with the mixture and gently pat each cracker into the well. As the cheese melts, it creates the most beautifully round crackers!
Tips to make the best almond flour crackers
- You can choose any cheese but the "drier" the cheese, the crispier the cracker
- Press each cracker down slightly so that the ingredients stick together properly
- Use a whoopie pan for perfectly round crackers
- Feel free to add some spices into mixture instead of on top to give it some extra flavor - Just be careful about the amount of salt your spice mix contain as the Parmesan cheese is somewhat salty on its own.
- Do not overbake the crackers, as they continue to crisp up as they are cooling down. Once they have turned golden brown around the edges, remove them from the oven.
- These crackers come out fairly thin so if you are going to be serving them with a thick dip, you may want to make thicker crackers by doubling the recipe - Keep in mind that a thicker cracker may require longer time in the oven.
- Feel free to use anywhere between ⅛-1/4 teaspoon of sweetener depending on your taste preference!
Storing and Freezing Crackers
- To store crackers at room temperature- Seal the crackers in an airtight container. They will remain fresh for at least 3 days. You can also refrigerate the crackers to keep them for a slightly longer period of time.
- To freeze the crackers- Yes...you can actually freeze these crackers! Simply place the crackers in a airtight container and store in the freezer for up to 2 months. When you thaw the crackers, they may have lost some of their crispiness so simply reheat them.
- To reheat crackers - If crackers are refrigerated or frozen and have therefore somewhat softened, it’s best for you to reheat then in the oven or toaster oven for a couple of minutes to crisp them up again. Watch the crackers closely as you do not want them to burn.

Ingredients
- 1 cup shaved Parmesan cheese (or a mixture of Asiago, Parmesan and Romano)
- ¼ cup sliced almonds
- ⅛ - ¼ teaspoon sweetener (any sweetener will work)
Instructions
- Preheat the oven to 350 degrees F.
- In a small mixing bowl, combine all the ingredients and using either your fingers or a potato masher, breaking down the almond slices ever so slightly. If using a whoopie pan, divide the mixture evenly between the 12 wells. Gently flatten each cracker. If using a cookie sheet, line the cookie sheet with parchment paper and form 12 round circles. Flatten each circle ever so slightly.
- Bake in the oven for 8 minutes or until just beginning to brown. Remove from oven and allow to cool for about 2 minutes before removing from baking tray.
