I don't think you can look at sprinkles and not help but smile! You can make them as bright as you like and personlize them to suit any dessert.
Whether it’s ice cream, or cupcakes, or a cream cheese frosted cake, sprinkles always make things brighter, don't you agree? And believe it or not, making gluten-free sprinkles at home is really easy! You can customize the flavor, choose virtually any color you like and sprinkles over your favorite desserts for an extra touch of pizazz!
This weekend, for the first time in a long time, it was actually a dull and gloomy day. Wanting to cheer myself up, I decided to do the thing that I love best, and work on a new recipe. However, I needed sprinkles for this recipe, but I really didn't want to take the time to make them from scratch.
Besides, when you add funfetti to a dessert, they actually don't really add much in terms of flavour so I knew there had to be a way of recreating the "funfetti sprinkle" look without actually "true" sprinkles.
So, I decided to try and see if I could make keto homemade coconut funfetti sprinkles. I figured that the shreds of coconut could easily resemble the size and shape of funfetti.
So, by using 2 simple ingredients (plus some water) I created an easy keto dessert decoration that is simple and healthier than traditional sprinkles!
Gluten-Free Sprinkles
I absolutely love the fact that you can make sprinkles at home. And I also love the fact that these are gluten-free and keto-friendly!
Making Keto Homemade Coconut Sprinkle Funfetti means that:
- You can choose which colors you want
- You can make as many or as few as you want
- Since they only require two ingredients, you can whip these up in under 5 minutes
- They actually hold their shape in baked goods
- They will not bleed their colour when baked.

2-Ingredient Homemade Funfetti
So, if you haven't already guessed, here is the 2-ingredient Homemade Funfetti list:
Coconut - To keep these keto and low carb, I used unsweetened coconut. It is not always easy to find "unsweetened coconut" at the grocery store so you may need to order it online or go to a more natural grocery store such as Whole Foods. Also, to keep the look similar to "funfetti sprinkles", I suggest using shredded coconut and not coconut flakes.
Food Colouring - This adds the gorgeous hues the coconut to recreate the "sprinkle" look. I used LorAnn’s professional-grade liquid food colouring which is much more concentrated than traditional grocery store food color, yielding bolder results using less product. If you use a different brand, you may need to add more colour to get the result you are looking for.
How to make Healthy Homemade Sprinkles
This recipe could not be any easier!
Simply pour 1 tablespoon of water in a small bowl. Drop anywhere between 5-10 drops of food colouring into the bowl and stir it to incorporate the colour into the water. Next, add the shredded coconut and stir until all the coconut has been coloured.
For these keto homemade coconut funfetti sprinkles, I found that the best ratio of water to food colouring to shredded coconut was 1 tablespoon water with about 5-10 drops of food dye stirred into 1 cup of unsweetened coconut.
If you want to make a smaller quantity, you can add 2 teaspoons of water to 3-5 drops of food colouring to every ⅓ cup of unsweetened shredded coconut.
Once you have made the gluten-free sprinkles, you can either leave them in the bowl to dry or to make them dry faster, you can always spread them onto a paper towel and let them air fry for a couple of hours.

How to Make Healthy Homemade Sprinkles using natural food colouring
Although the colours may not turn out quite as vibrant, you can always try to make these keot homemade coconut sprinkle funfetti using natural dyes.
Here are some suggestings:
- Pink: strawberries, raspberries
- Red: beets, tomato
- Orange: carrots, paprika, sweet potato
- Yellow: saffron, turmeric
- Green: matcha, spinach
- Blue: red cabbage + baking soda
- Purple: blueberries, purple sweet potato
- Brown: coffee, tea, cocoa
- Black: activated charcoal, squid Ink
A couple of things to consider if you are going to use natural food dyes. Because the colour comes from real food ingredients, a small amount of flavor will remain in the final icing. The more colour you add to the frosting, the more it’s going to taste like that ingredient.
Also, the actual colours will not be as intense as commercial ones. The key to achieving the most vibrant color is to start with as concentrated of a base as possible. While you won’t be able to achieve colors quite as intense, the goal with DIY colorings is to make them as opaque as possible from the get-go for the best results.
Lastly, if possible, try to get the powder or freeze-dried form of the dye ingredient. This allows you to be more specific with the colour as well as increases the intensity of the colour hues.

- Feel free to add as much food dye as you like depending on how vibrant you want these easy keto dessert decorations to be
- Make sure that you allow the coconut to dry fully before using them in any recipe - If the coconut sprinkle funfetti is still moist, the colours may bleed
- Before storing any excess gluten-free sprinkles, make sure that they are fully dried. If they are stored with any moisture, they may become moldy.
- I like to make the coconut sprinkles a couple of days ahead of time. I then simply leave them in their bowl, mix them every so often and allow them to dry over time.
- IF you are not using concentrated food colouring, you may need to add more drops then what the recipe calls for.

Ingredients
- 1 cup unsweetened shredded coconut
- 1 tablespoon water

Instructions
- In a small mixing bowl, add the water and food colouring. Stir and then add the coconut. Continue to stir until all the coconut has been covered in colour of choice.
