Easy Keto Dip
If you love Chinese takeout, then you will ADORE this dip!
This highly flavorful dip is packed with shredded carrots, delicious shredded rotisserie chicken and the most delicious sweet and spicy Asian Sauce. Add some chopped green onions, sliced almonds and some edamame and you end up with the yummiest dip EVER!
This dip can also be made ahead of time which makes it perfect for the holiday season or for any gathering! And if you are like me, appetizers can easily replace dinner, especially since this dip contains all the basic food groups!
Why this recipe is so AMAZING!
- Big on flavor - The homemade sweet and sour adds just the right zip to the dip. Everyone loves a good layered taco bowl, this is similar but with an Asian flair.
- Can add on toppings galore - I added sliced green onions and sliced almonds but you can modify these ingredients to suit your taste or whatever ingredients you have lying around in your fridge or pantry! Sometimes I will add a layer of shredded cabbage or some shelled edamame or cashews for a little extra crunch!
- Comes together quickly - Each layer takes about 2-5 minutes to make so this entire dish is ready in under 15 minutes!
- Can be made ahead of time - The flavors are even more delicious when the ingredients have had time to sit. Make the elements up to 24 hours in advance and simply assemble before serving.
- Healthy and nutritious - This recipe has only a handful of healthy ingredients including tons of veggies. And if you want to make it dairy-free, vegan or plant-based, you can easily swap out the dairy ingredients with dairy-free choices, remove the chicken altogether or replace the chicken with some marinated tofu.
- So DELICIOUSLY GOOD!
Keto Dip Ingredients:
For the Chicken and Cream Cheese Layers:
Cooked Chicken - I made this dip using leftover rotisserie chicken. However, if you don't have any rotisserie chicken, you can simply cook or boil a chicken breast instead.
Veggies - Shredded carrots and green onions are added to the chicken mixture to add some flavour, a little crunch as well as a nice pop of colour. Use a bag of shredded coleslaw mix (which is simply shredded cabbage and carrots) on top of the cream cheese layer for a little more crunch and an extra serving of veggies. Finally, the entire dip can be studded with edamame for a nice contrast in colour as well as adding some additional Asian flare. Feel free to change or eliminate any of these ingredients to suit your likings.
Cream cheese and Sour Cream - These are the two ingredients for the base of the dip. The first time I made this recipe, I only used cream cheese and it solidified a little too much so since then, I have been adding a little cream cheese to make it easier to scoop. You can omit the sour cream and used "whipped" cream cheese instead or add some heavy cream to the cream cheese and whip it together until it becomes slightly fluffy.
Soy sauce, Minced Garlic and Ginger - I don't think you can call a recipe "Asian" without including soy sauce! If you want to make this dish gluten-free, make sure that you use Tamari or Coconut Aminos instead of soy sauce. As for the garlic and ginger, I use Gourmet Garden Stir in Paste to keep the recipe uber easy!
For the Delicious Asian Sauce
Sugar substitute - I used a Lakanto brown sugar substitute but any type of sweetener will work.
Water - Adding water to the sauce will dilute the sauce so that it is not too salty
Xanthan Gum - Xanthan gum acts like cornstarch (without all the carbs) to help to thicken the sauce. You will want to sprinkle the xantham while the sauce is hot and make sure to whisk the sauce as you add it to ensure that it does not clump together
Sugar-free ketchup - I used G. Hughes Sugar-free Ketchup that I found both at Walmart and Publix. If you don't have any sugar-free ketchup, you can replace it with a tablespoon of tomato paste or with sugar-free barbecue sauce.
Apple cider vinegar, Soy Sauce and Hot Pepper Sauce, sesame seeds - You can replace the apple cider vinegar with any type of vinegar. As for the hot sauce, feel free to adjust the amount you add to suit your taste.
Tips to making the best Asian Chicken Dip
- Add some crunch to the dip with sliced almonds, sunflower seeds, sesame seeds or cashews.
- Prepare the chicken mixture in advance - That way the chicken absorbes the flavours of the Asian sauce. Plus, making it ahead makes this dip super easy to assemble whenever you are ready to serve it!
- To shred chicken easily, you can either use 2 forks or for a larger amounts, take your cooked chicken and shred them using a stand mixer fitted with a paddle attachment. It’s the easiest way of all time to shred chicken!
- Make each layer ahead and store them individually - You can make each layer ahead and when you are ready to serve this dip, simply layer the ingredients.
- Switch it up! You can use celery and peppers instead of the carrots and shredded brocolli instead of the cabbage
Can I Make this ahead of time?
Yes!
If making the day ahead, store all three layers separately and then just assemble before serving.
If you're prepping the day you want to serve the dip, you can assemble it immediately and just cover it with plastic wrap to store in the fridge.
