Sugar-free White Chocolate Hazelnut Spread
Since it was revealed last year that White Chocolate Nutella would soon be hitting the shelves in Australia, I have been patiently (and some desperately!) waiting to get my hands on the delicious spread. Made with hazelnuts and white chocolate, it’s the ultimate sweet treat for all you white chocolate fans out there.
The bad news? I am still waiting, over a year later!
So, what is a gal going to do if she can't get a product? That's right...make my own copycat recipe!
Like my Copycat Coconut Keto Clusters Recipe with Pecans, Almonds and Pumpkin Seeds, Easy Keto Copycat Nacho Cheese Doritos, Copycat Payday Candy Bars (Keto, Gluten-Free), and my Homemade Keto Fasting Bars, I absolutely LOVE recreating unhealthy or high carb recipes into healthier and sugar-free versions.
And since I had already created a Homemade Keto Espresso Nutella, I knew that making a Sugar-free and Keto-friendly White Chocolate version couldn't be that hard!
Origins of Nutella
Here is what I learned from the Nutella website:
After World War II, cocoa was extremely scarce. Ferrero, originally from Piedmont in Italy, turned this tricky problem into a smart solution by creating a sweet paste made from hazelnuts, sugar, and just a little of the rare cocoa. The precursor to Nutella was born!
The sweet taste of the first recipe was shaped into a loaf that could be sliced and spread on bread, named Giandujot after a local carnival character. The ‘Giandujot’ paste was transformed into a creamy new product that was easier to spread. It was known as SuperCrema.
Then, in 1964, the recipe was improved, leading to the creation of the first-ever jar of hazelnut and cocoa cream which was called Nutella.

4-Ingredient Recipe
Sugar-Free White Chocolate - I am absolutely THRILLED that companies like ChocZero, Lily's as well as Bake Believe have all started to make sugar-free white chocolate! You can find these companies online or on Amazon, but I was actually able to buy the Bake Believe White Chocolate Melting Wafers at Walmart. I got a 9 oz bag for under $5 so this is by far your cheapest option. A word to the wise, I do not have much luck with the Bake Believe Companies White Chocolate Chips as they do not melt well and they also do not blend well into butter or when I made my Salted Caramel Fudge.
Peeled Hazelnuts - Most stores carry hazelnuts (also known as Filberts) but they almost always contain the outer skin. To remove the outer skin, you will need to roast the hazelnuts and then rub the skins off using a clean kitchen towel. However, if you want to save a TON of time and make this recipe super easy, you can buy roasted and peeled hazelnuts on Amazon. At $0.71 an ounce, when you buy them in a 3-pound bag, they are actually cheaper than regular unpeeled hazelnuts!
Palm Shortening or Palm Oil - There is a lot of controversy with regards to this ingredient. Palm oil has been and continues to be a major driver of deforestation of some of the world's most biodiverse forests. However, eliminating palm oil altogether will also be devastating. The best thing to do is to support sustainable palm oil and avoid boycotts since we know substitutions with other vegetable oils can lead to even further environmental and social harm. Check the label of the palm oil before you buy it to make sure that it is being harvested within the WWF requirements. Palm shortening is more stable at room temperature whereas palm oil is more liquid and may separate over time. I used Spectrum Organic Palm Shortening which I buy on Vitacost.
Vanilla - Vanilla extract is always added to desserts and many other types of recipes because it chemically adds more flavor, and it also brings out the flavors of other ingredients in the mixture. I typically lean towards imitation vanilla for all my "no-bake" desserts since real vanilla can sometimes leave a mild "alcohol" taste which typically burns off if the vanilla is baked.

Removing the Hazelnut skin
There are 2 ways to remove the peel from hazelnuts.
Method 1 - Baking in the oven
Roast the hazelnuts at 350 degrees for about 15 minutes on a rimmed baking sheet. Next, place the hot nuts into a slightly dampened kitchen towel and rub the skins off using the towel. This is the most common way to remove the skin. However, it is not the easiest and you will still end up with some peel. Although this will not affect the taste, you will end up with a slightly darker end product.
Method 2 - Boiling the nuts
In a medium saucepan with high sides, bring 2 cups of water to a boil. Add 3 tablespoons of baking soda to the water. Add the nuts to the boiling water and boil for about 3 minutes. The water will turn black – don’t be alarmed. While the hazelnuts are boiling, prepare a medium bowl of ice-cold water. After three minutes, remove 1 nut and place it in the ice bath. If the skin can not easily be rubbed off, keep boiling the nuts for an additional 1-2 minutes. Once you can easily peel the skin off of a test nut, add the rest of the nuts to the ice water and peel them with ease.
Finally, place peeled nuts into a kitchen towel or paper towels and dry them thoroughly. Then toast the peeled and dried hazelnuts at 350 degrees F for about 15 minutes.

How to Make Sugar-Free White Chocolate Hazelnut Spread
This easy Sugar-free white chocolate hazelnut spread recipe is simply requiring just 4 ingredients and 15 minutes from start to finish.
It’s also delicious, vegan (depending on what type of white chocolate you choose), gluten-free, sugar-free, and ridiculously close to the real thing.
Win-win!
It all starts with the hazelnuts, roasted to warm up the natural oils, and, if using unpeeled hazelnuts, loosen the skins.
Then blend away!
The nuts turn into butter and then you add the melted chocolate and give it a stir everything together and YOOHOO! – you have a homemade copycat White Chocolate Hazelnut spread!

How to use this Keto Copycat White Chocolate Hazlenut Spread
- Warm it up and drizzle some of it on some Egg Fast Belgian Waffle or some of Keto Dairy-Free Pancakes
- Spread some of some Toast or some Whole30 Nut and Seed Bread
- Use it for my Easy Keto Nutella Doughnuts - Gluten-Free

- Simply eat it directly from the jar with a spoon...go ahead...I promise I won't tell!
Recipe Tips
- Toast the Hazelnuts before using them - heating them will also make them MUCH easier to grind into a paste
- Adding coconut oil to the hazelnuts also helps the nuts to breakdown into a smooth paste
- DO NOT add the vanilla or chocolate to the food processor - if you do, the sugar-free white chocolate hazelnut spread will bind and not be spreadable - Instead, simply gently stir the chocolate and vanilla into the mixture
- If you prefer a more white chocolate taste, simply increase the amount of white chocolate or decrease the amount of hazelnuts.
HOW TO STORE YOUR COPYCAT SUGAR-FREE NUTELLA OR HAZELNUT SPREAD
Normally, you could open up a jar of the original product and store it in the pantry and not refrigerate as it will become too hard to spread. Since this homemade version has no preservatives added to it, I would suggest storing it in a sealed jar in the refrigerator and allowing it to sit at room temperature to soften up before using it. You can also quickly heat it in the microwave if you want to use it to drizzle instead of spread.

Ingredients
- 2 cups hazelnuts, skins removed
- 1 tbsp coconut oil
- ½ cup palm shortening
- 1 cup sugar-free white chocolate chips
- 1 tsp vanilla
- ¼ tsp salt
Instructions
- Heat a large skillet on medium heat and add hazelnuts. Stir constantly for 3-5 minutes or until the nuts just begin to brown (be careful as they can burn quickly). Immediately remove from heat and pour them into the bowl of a food processor (they are very hot so be careful!). Add the coconut oil and turn the food processor on. Process for about 5-10 minutes, scraping down the edges as needed, until the consistency of butter.
- In a small bowl, add the palm shortening and white chocolate chips. Place in the microwave and microwave on high for 30 seconds. Stir until all the chips have melted (if the chocolate will not completely melt, return it to the microwave for additional 15-second intervals until chocolate melts. Be careful because if the chocolate gets too hot, it can seize).
- Scrape the hazelnut butter into a bowl. Stir in the melted white chocolate, vanilla, and salt until fully incorporated. Taste the mixture and add additional salt or sweetened if desired.
Notes
- do not add the melted chocolate or vanilla to the food processor to incorporate the ingredients - if you do, the ingredients will form a paste that will not spread
- heat your chocolate in intervals to ensure that it does not seize
