Can you believe that I have been blogging for almost a year and I only have 4 cookie recipes on my blog!!!
That almost seems like a sin!
I mean, what is not to love about cookies? Portion-controlled little parcels of deliciousness that can be eaten without a single dish to be washed.
Heaven, right?
And so, when my co-worker came to work with the most amazing peanut butter oatmeal cookies this past Friday, I knew that I had to create something similar that would fit my low-carb lifestyle.
And that's how these White Chocolate Peanut Butter Cookies came to be.
Just like my Chewy Keto Peanut Butter Collagen Cookies or these Easy No-Bake Keto Collagen Peanut Butter Bars, this keto peanut butter cookie recipe is not only super easy, gluten-free, sugar-free but also low carb!
Sugar-Free Peanut Butter Cookies Ingredients
This is the perfect recipe for anyone who has a hard time coming across keto ingredients as there are no special or hard-to-find ingredients in these sugar-free peanut butter cookies!
- Nuts or Seeds or Both! - This is a great recipe for using up leftover odds and ends of nuts and seeds. You can use any combination of nuts or seeds that you want for this keto peanut butter cookie recipe. I do NOT suggest using all salted nuts or seeds as they will make these sugar-free peanut butter cookies much too salty.
- Oat fibre - The two best brands are sold on Amazon - Modern Mountain Oat Fiber and Anthony's. I do NOT suggest NuNatural as it has a somewhat weird taste that the other brands do not have.
- Flaxseed Meal - Adds even more fiber to these keto cookies
- Sweetener - I like to use Swerve Brown Sugar Substitute but any type of sweetener should work.
- Nut or Seed butter - Use only smooth nut or seed butter and not chunky.
- Milk - Use any milk alternative such as almond or coconut milk that comes in a carton and does not contain any sweeteners
- Baking Soda, Vanilla and Cinnamon
- Sugar-free white chocolate chips - You can find sugar-free white chocolate chips and order them online. I use either Lily's or Bake Believe.
- Optional - Salt - Make sure you taste your cookie dough and ONLY add salt if you feel like it needs it. Most nuts and seeds that are salted do not need any additional salt.

Instructions for Keto White Chocolate Peanut Butter Cookies

Preheat oven to 350 degrees F. Line to baking sheets with parchment paper. Pulse nuts/seeds, oat fiber, flaxseed, and baking powder approximately 10 times or until nuts/seeds break down. Do NOT overprocess or you will end up with nut butter.

Melt the peanut butter, vanilla and milk together in the microwave for 30 seconds. Stir until incorporated.

Add the egg, and peanut butter/milk mixture and pulse until the ingredients come together.

Divide the dough into 18 cookies and place the cookies on the baking sheet. Bake for 8 minutes, remove from oven and allow to cool.

Hint: You can always make the cookie dough and freeze half of the dough for a later time.
Substitutions
This recipe is easy as well as very easy to customize depending on what ingredients you have on hand or which diet you are following.
- Nut-Free - instead of nuts use only seeds as well as sunflower seed butter.
- Paleo - Use coconut sugar instead of sugar-free sweetener
- Plant-based Keto - You can always make a flax egg instead of using a real egg.
Equipment
These sugar-free white chocolate chip cookies require a food processor in order to create the "flour" portion of this recipe. I love my Cuisinart Food Processor as I have had it for years and have made all kinds of great recipes like my Easy Homemade Nut Butters as well as Keto Chimichurri Sauce.
If you do not have a food processor, you can process the nuts/seeds in a high-speed blender and then mix everything else with a hand-held blender. I love my Vitamix and use it all the time for making my Homemade Keto Iced Cappuccino.
Storage
Store these cookies in an airtight container at room temperature for up to a week or in the fridge for up to 2 weeks. You can also freeze the cookie dough and allow it to thaw in the fridge before making this keto peanut butter cookie recipe.

What if I can't find white sugar-free chocolate chips
Although these chips are only available online, I did see a recent recipe on Gnom Gnom for a white chocolate bar recipe that requires only 4 ingredients. I have gotten as far as buying the mold to make these bars into chocolate chips but have yet to find the time to try out her recipe.
If you don't mind the extra sugar, both Ghiradelli and Nestle have white chocolate chips on the market. It turns out that 1 white chocolate chip has only 2.7 calories and 0.3 g of sugar.
I estimate that each cookie has about 4-6 pieces of white chocolate chips in each so in reality, using store-bought regular white chocolate chips will only add about 12-18 calories and 1-2 g of sugar to each cookie.
Not as bad as you thought, right?!
What is Oat Fibre?
Oat fiber is an ingredient made by grinding and purifying the outermost protective layer of the oat grain. It consists mainly of lignin, cellulose, and hemicellulose and, thus, is considered a rich source of insoluble dietary fiber (up to 90%).
When added to foods, beverages, and baked products, oat fiber can:
- Boost the fibre content
- Reduce caloric value
- Provide desirable textural properties
- Be used in gluten-free formulations (provided certified as such)
Oat Fiber is the perfect ingredient for low-carb baking. Oat Fiber contains zero calories per serving because it is almost entirely insoluble fibre.
What if I don't have any Oat Fibre?
I get my oat fiber from Amazon but if you can't seem to find any, you can replace the oat fiber as follows:
- replace with ⅓ cup quick oats (these will no longer be keto but they will be gluten-free
- replace with ⅓ cup almond flour
- replace with 2 tablespoon coconut flour
If you choose to replace the oat fiber, you may need to increase or decrease the quantity of milk needed.
How do I make a flax egg?
To make a flax egg, simply add 1 tablespoon of finely ground flaxseed with 3 tablespoon of water and mix the two together. Let the mixture sit for 5 minutes (or until it starts to get gooey)
Can I freeze this keto cookie dough?
Yes. You can easily freeze this cookie dough for up to 3 months.
Do these keto cookies spread?
No. Because they do not contain any butter, the cookies will not spread so you can place all the cookies on a single baking sheet. Also, press the cookies down slightly before placing them in the oven.
Is flaxseed the same as flaxseed meal?
No. Flaxseed meal are flaxseeds that have been ground into a fine powder. Do not mistake the two as this recipe will not work with whole flaxseeds.

Ingredients
- 1 and ⅓ cup mixture of salted and unsalted nuts/seeds * (I use ⅓ cup salted peanuts with 1 cup unsalted walnuts)
- ¼ cup oat fibre
- ¼ cup flaxseed meal
- ⅓ - ½ cup sugar-free sweetener (I used Swerve Brown Sugar Substitute) **
- 1 tsp cinnamon
- ⅓ cup peanut butter, softened
- ⅓ cup coconut milk, unsweetened (or almond milk)
- 1 tsp vanilla
- ¼ - ½ cup sugar-free white chocolate chips (I used sugar-free ChocZero)
- Optional - salt if needed ***
Instructions
- Preheat oven to 350 degrees F. Line to baking sheets with parchment paper or a Silpat mat
- Pulse nuts/seeds, oat fibre, flaxseed meal, and baking powder. Do NOT overprocess or you will end up with nut butter.
- In a separate bowl, combine the peanut butter, milk and vanilla. Heat in the microwave for 30 seconds and then stir the ingredients together.
- Add the egg and peanut butter/milk mixture into the food processor. Pulse until all the ingredients are combined.
- Stir in chocolate chips and let place in the fridge for 10 minutes while the oven preheats to 350 degrees F.
- Using a cookie scoop, place mounds of dough onto the cookie sheet (the keto cookies will not spread so feel free to place them fairly close to one another.
- Bake for 8-10 minutes or until the cookies just begin to brown.
- Remove from the oven and let cool 5 minutes before transferring cookies to a cooling tray.
Notes
- * I do not suggest using all salted nuts/seeds as these cookies will end up too salty. I used ⅓ cup salted nuts with 1 cup of unsalted nuts.
- ** Different nuts and seeds have varying levels of sweeteness so you may need to increase the amount to suit your taste.
- *** Taste the mixture and add additional salt if needed.
- Any combination of nuts or seeds can be used. If using raw nuts or seeds, you may need to add additional salt

I used a combination of unsalted sunflower seeds and salted pumpkin seeds and used sunflower butter to get these dairy free and nut free. They turned out perfect!
