Have you ever heard of Cookie Butter?
Until a couple of years ago, I had never heard of cookie butter. And then, a Trader Joe's came to town and cookie butter took over our city!
So, what is cookie butter?
Cookie butter is aromatic, rich, and indulgent with a wonderfully creamy consistency. This spread is made from ground-up spice cookies called speculoos created in the heart of Europe. Just as gingerbread cookies are a holiday tradition in the US, these speculoos cookies are being baked in ovens all across Germany, Belgium and the Netherlands when winter comes around.
If you’ve never tasted cookie butter before, it is one of the most addictive spreads around. So much so, that major keto food companies, like ChocZero and Lakanto have come up with their own versions. After ordering both and of course, trying both, I realize that neither of these two brands came close to authentic cookie butter. Lakanto was much too sweet and used sunflower butter and Choczero did not even contain any of the same spices as the original cookie butter!
So, wanted to make a copycat version, this sugar-free cookie butter recipe is ridiculously creamy, perfectly spiced and super addictive. In fact, this homemade keto cookie butter may even be more addictive than Homemade Keto Espresso Nutella.
Once learn just how to make cookie butter, you will be hooked and will never have to go without or buy keto cookie butter again.

What spices makeup Speculoos Cookies?
In order to make a copycat keto cookie spice butter, I needed to get the spices just right.
Speculoos (which are the foundation of this sugar-free cookie butter recipe) are made of a combination of spices that include cinnamon, ginger, nutmeg, cloves, anise seed and ground cardamom.
If you do not like some of these spices or if you do not have all of them handy, don't worry! You can omit almost all of the spices or change the amount called for in the recipe but just do not omit the cinnamon and ginger. Without those two flavours, this homemade keto cookie butter will not actually taste like the store-bought version.
Key points on how to make Keto Cookie Butter
Making homemade keto cookie butter is actually really easy but somewhat "backwards" when compared to other sugar-free cookie butter recipes.
Instead of baking keto speculoos into cookie shapes and then grinding them down into cookie crumbs, we are going to save ourselves some time but simply making keto speculoos crumbs!
So, the first step in this recipe is actually sautéing the cookie ingredients (and NOT making them into cookie shapes and baking them). The result will be crispy cookie crumbs in a fracture of the time.
Then, the keto speculoos cookie crumbs will be add to the remaining keto cookie spice butter ingredients and pureed until a nice smooth homemade keto cookie butter is produced!

Ingredients
This
Almond flour - I use Blue Diamond Super-Fine almond flour for this recipe.
Sweetener - I like to use Lakanto Golden Sweetener. However, you can use any type of granular sweetener in this recipe.
Spices - A combination of cinnamon, ginger, nutmeg, cloves, anise seed and ground cardamom are needed to mimic the flavour of Speculoos cookies.
Shortening - I used Organic Palm Shortening to help keep this recipe dairy-free. Palm shortening is virtually tasteless but adds the necessary creaminess needed for this keto cookie spice butter.
Salt, Vanilla Extract, Baking soda - All these ingredients are almost always added to cookies to help round out the keto Speculoos flavour.
Tapioca Fiber Syrup - This helps to add some sweetness to the end product. Soluble tapioca fiber is a source of dietary fiber on a keto diet, and it will not spike your blood glucose unlike regular carbohydrates. Instructions
This recipe is actually really simple. Here are the step-by-step direction on how to make homemade keto cookie butter

Add the almond flour, brown sugar and palm shortening to a saucepan. Heat on medium heat, stirring constantly, until almond flour begins to brown and sweetener melts (about 5 minutes)

Remove the saucepan from the heat and stir in remaining keto cookie crumb ingredients. Stir for 1 minute and allow the cookie crumbs to cool slightly.

Add the water, fiber syrup to the saucepan and heat on medium heat, whisking constantly for about 2 minutes, or until cookie crumbs dissolve.

Remove from heat and place in the bowl of a food processor. Allow to cool about 5 minutes before adding the remaining ½ cup of palm shortening, salt and vanilla.

Turn food processor on and process until nice and creamy. Taste the mixture and add additional salt, spices or sweetener to suit your taste.

Allow the homemade keto cookie butter to cool before storing it in an airtight container.
Hint: Do NOT use almond milk instead of water. Almond Milk contains thickeners so if you add the almond milk and process it on high, the mixture will turn into one big glob!
Substitutions
This keto cookie spice butter is not only sugar-free, gluten-free and low in carbs and so delicious that I do not suggest substituting the ingredients. However, these are possible substitutions that will result in a similar taste but may result in a different nutrient profile.
- Keto Ginger Cookie Crumbles - if you have any keto cookies that you have leftover, you can simply grind them down into the keto cookie crumbs and then add additional cinnamon and ginger.
- Ginger - replace the ginger with more cinnamon if you are not a fan of it.
- Palm Shortening - You can use butter or softened coconut oil instead.

Variations
You can do so much with this homemade sunflower seed butter by simply changing a few ingredients!
- Chocolate - Add in some unsweetened cocoa powder or stir in some unsweetened baking chocolate. Or, reduce some of the sweetener called for in the recipe card and stir in some sugar-free chocolate chips until they melt.
- White Chocolate Cranberry - add some sugar-free dried cranberries along with some sugar-free white chocolate chips
- Nut Butter - replace the almond flour with peanut flour or sunflower seed flour for a nut-free version. You can also grind down your own nuts or seeds to make homemade flour but just be aware that the end result of the homemade keto cookie butter may not be as smooth.

Equipment
Making Homemade keto cookie butter only requires a saucepan as well as a food processor.
If you do not have a food processor, you can use an immersion blender instead. I do not suggest using a high-speed blender as the mixture is too solid and therefore will get stuck to the walls of the high-speed blender.
Storage
Store this sugar-free cookie butter recipe in an airtight container in the fridge for up to 2 weeks. The keto cookie spice butter will be firmer directly from the fridge. However, if you want a softer cookie spread, simply remove it from the fridge for about 20-30 minutes.
You can also freeze cookie butter for up to 3 months.
Top tip
When you are making the keto Speculoos cookie crumbs, make sure that you remove the saucepan from the heat source when adding the spices. Nut flours (as well as coconut) can burn VERY quickly!

For the Keto Biscoff Cookie Crumbs
- 2 cups almond flour
- ½ cup brown sugar-free sweetener
- ¼ cup palm shortening
- 2 teaspoons ground cinnamon
- 1 tsp cardamom
- ½ tsp ground ginger
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ tsp salt
For the Cookie butter:
- keto cookie crumbs (from above recipe)
- ½ cup water
- ¼ cup tapioca fiber syrup (or sugar-free maple syrup)
- ½ cup palm shortening (or coconut oil)
- ½ tsp salt
- 1 tbsp vanilla extract
Instructions
Prepare the keto cookie crumbles:
- In a large saucepan, combine the almond flour, brown sugar sweetener and shortning over medium heat, stirring constantly until the almond flour begins to brown and the sweetner melts. Remove the saucepan from the heat and add to the saucepan the cinnamon, cardamom, ginger, nutmeg, cloves and salt. Stir all the ingredients together in the hot saucepan for about 1 minute.
Prepare the keto cookie butter:
- In the same saucepan that contains the cookie crumbs, add the water and tapioca fiber syrup. Cook over medium heat, whisking constantly, until the cookie crumbs have dissolved, about 2 minutes.
- Remove the saucepan from the heat and carefully transfer the mixture to the bowl of a food processor or immersion blender. Stir the mixture to cool it, about 5 minutes. Add in the palm shortening, slat and vanilla. Process until nice and smooth
- Transfer the keto cookie butter to an airtight container.

What is the flavour of cookie butter?
Here is what Wikipedia says "the flavor is caramelized and gingerbread-like, with a color similar to peanut butter and a consistency ranging from creamy to granular or crunchy.
Are Speculoos the same as gingerbread?
No. Speculoos are much milder and do not have the same "bite" as gingerbread.
