There is nothing I look forward to more than the holiday season! It’s truly the most magical time of year: decorations, spending time with the family and friends, and making treat after treat after treat!
My favorite thing to make and share with friends and family during this special season is fudge. It’s so easy to make and I haven’t met a person yet who doesn’t love fudge.
Today I’m sharing this amazing Keto Snicker's Fudge recipe – so decadent, so rich, so wonderfully scrumptious, you’re going to want to share it with everyone you know.
One of the things I love about this fudge recipe is that although it is cooked, it does not require a candy thermometer. That's one of the reasons why I love this simple and easy recipe as it is IMPOSSIBLE to mess it up.
Powered sweetener, heavy cream, peanut butter, chocolate, chopped peanuts, and a quick and easy gooey caramel...Did your mouth just start watering?

It’s super fast and every time I make it I get requests for the recipe.
There’s a lot to love about this fudge but that ooey, gooey caramel layer is my favourite.
The picture above shows the fudge directly from the refrigerator.
If you freeze the fudge, the caramel will be completely set up, which can be a good thing for cutting into pieces.
Ingredients
Heavy cream- Heavy cream is heated and helps to melt the chocolate. Make sure that you use Heavy cream (sometimes also called Heavy Whipping Cream) and not whipping cream. Heavy Cream must contain a minimum of 36% fat whereby a carton of Whipping cream may contain only 30% fat. Technically speaking, they are both contain the same ingredients but the whipping cream is watered down and therefore will not produce as creamy fudge and may also interfere with the fudge solidifying.
Unsweetened Chocolate - I use either Baker's or Ghiradelli depending on which is on sale. You will need to cut the unsweetened chocolate bar into smaller pieces. Cut the chocolate using either a serrated knife (like a bread knife) for really small pieces or a chef's knife for larger chunks of chocolate. After you add the chocolate to the hot heavy cream, let it sit for a couple of minutes to soften, and then stir it until it has completely melted.
Allulose - Since this fudge needs to be kept in the refrigerator or freezer, you will need to use a sweetener that will not crystallize when cooled. Erythritol sweeteners tend to crystallize so I do not suggest using this type.
Peanut Butter - I used Jif Natural as my peanut butter. The peanut butter is going to be added to the fudge to give this fudge an extra peanut butter kick!
Peanuts - Adding peanuts to the caramel sauce will create that crunch that we all love when it comes to a Snicker's bar. You can keep the peanuts whole but that will make the fudge a little more difficult to cut so I prefer to chop the nuts before adding them to the caramel sauce.
Caramel Sauce - For this recipe, I used my simple Keto Microwave Caramel Sauce. This recipe comes together in about 8 minutes using your microwave. If you want to make a "cheater" caramel sauce, follow the caramel recipe in this Keto O'Henry Bar recipe that uses nut butter, a sticky sweetener like Lakanto Maple Syrup, coconut oil, and caramel extract. I like to add 2 additional tablespoons of peanut butter to the caramel since I am somewhat of a peanut butter freak!
Vanilla and salt - Adding vanilla and salt to the fudge help to round out the flavours.

What is powdered Allulose?
- Allulose is a low-calorie sugar with the same clean, sweet taste you expect from sugar.
- it is one of many different sugars that exist in nature in very small quantities.
- it was initially identified from wheat and has since been found in certain fruits including jackfruit, figs and raisins
- it is not absorbed in the intestine, therefore, is considered zero-calorie and zero-carb
- it is about 70% as sweet as BochaSweet and regular sugar so you may need to adjust the quantity if you substitute
- my favourite brand is by FitLane or Splenda Allulose and I buy it on Amazon (I usually buy the 4lb bag is it brings down the price to $0.45 an ounce)
Can I use an erythritol-based sweetener instead?
I think you could probably use any sweetener but the taste and texture will be altered after the sauce cools. Erythritol will crystallize and stevia may leave a slight aftertaste as it seems to react slightly with chocolate.
I have NOT tried either of these types of sweeteners so if you do, please let me know how it turns out and I will update my post!

How do you make this Keto Snickers Fudge recipe?
- Add all the ingredients (except for the nuts and caramel) to a large microwave-safe bowl
- microwave on high for 1 minute and then reduce power to 50% and microwave in 30-second intervals until all the chocolate has melted
- stir the mixture
- pour ½ of the mixture into a lined loaf pan
- sprinkle chopped nuts on top
- carefully pour caramel over the nuts
- pour remaining reserve fudge over the caramel
- sprinkle with additional chopped nuts if desired
- place in the fridge to cool for 2-3 hours
What is the easiest way to cut Homemade fudge?
You can easily cut most fudge right from the refrigerator.
However, if the fudge is too hard, simply let it warm up slightly on the counter before slicing. If you are in a hurry, you can run your knife under hot water, wipe it clean and slice the fudge. The heat from the knife will slice through any fudge.

Recipe Substitutions
- you can replace the allulose and the unsweetened chocolate with any sugar-free chocolate chip such as Lily's or ChocZero
- you can replace the heavy cream with coconut cream
- you can replace the peanuts with any type of nut or seed
- you can replace the peanut butter with almond butter or sunflower seed butter
- you can replace the powdered allulose with any other powdered sweetener but remember that allulose is only 70% as sweet as regular sugar so you may need to use LESS sweetener (if you want to learn more about the different sweeteners, check out my Guide to Keto Sweeteners
Tips and Tricks
- Always line your pan with parchment paper that has an overhang so that you can easily remove the fudge once it solidifies.
- This fudge recipe is best kept in the fridge or in the freezer
- Store the fudge in an airtight container in the fridge for 7 days and in the freezer, for up to 3 months
- The caramel will melt at room temperature so don't leave the fudge out for too long
- If the fudge is too solid to cut, simply place it at room temperature for 5 minutes or heat a knife by running it under hot water and then wipe it dry before slicing.
- You can also freeze the fudge to make clean lines for cutting and then store it in the fridge after it has been cut.

Ingredients
- 4 oz unsweetened baking chocolate, finely chopped
- 1 cup powdered allulose
- ½ cup peanut butter or other nut butter
- 4 tablespoons heavy whipping cream
- 2 teaspoons vanilla extract
- 1 cup chopped peanuts
- ½ cup Keto Microwave Caramel Sauce
Instructions

Line 9 x 5-inch loaf pan with foil. Set it aside.

In a large microwave bowl, add all ingredients. Microwave for 1 minute ad stir the ingredients. Continue to microwwave at 50% power until the chocolate just begins to melt, thoroughly stirring between intervals.

Pour ½ of the mixture into the lined pan. Sprinkle the chopped nuts over the fudge and pour the caramel over the nuts. Carefully pour the remaining fudge over the caramel. Sprinkle additional peanuts if desired.

Freeze until fudge is set, about 1 hour. Lift up the foil to remove fudge from pan, and cut into bars. Serve cold and store any leftovers in the freezer.
