This Keto Oreo Icebox cake is beyond decadent. After falling in love with my Keto Cookies and Cream Fudge and finding Keto Oreos at Costco on sale, I just knew I needed to come up with yet another easy keto dessert recipe that would be packed with Oreo cookies.
Filled with layers of Oreos, which add both creaminess and crunch, and then layering thick and luscious whipped cream frosting, this no bake keto dessert is so easy to make yet absolutely decadent to eat!
Something about all the chunks of cookies layered into the frosting is just transformative. The whole thing is crowned with additional cookie crumbs and a dusting of black cocoa powder that just takes everything to another level.

Ingredients
This super easy keto dessert recipe only requires 4 basic ingredients:
Cookies - You can not make a keto cookies and cream dessert without cookies! I used Catalina Crunch Vanilla Chocolate Cookies that I found at Costco. You can also buy this brand of cookies on Vitacost or Amazon.
Heavy Cream - Make sure that you use heavy cream which is sometimes also called Heavy Whipping Cream. Keep your cream in the fridge until you are just ready to whip it as it will whip much quicker if the cream is really cold. Pro tip - I will place my bowl and by beaters in the freezer for about 10-20 minutes to make sure that the cream whips well.
Sweetener - I used allulose for this recipe as allulose does not crystalize when it cools, unlike erythritol-based sweeteners. Since I did not want overly sweet whipped cream, I opted for ¼ cup of sweetener. For a less sweet frosting, use only 2 tablespoons and if you like your frosting really sweet, use ½ cup of allulose.
Vanilla - I used homemade pure vanilla extract but you can also use imitation vanilla.

Instructions
As much as I have been trying to include pictures of each of the steps in my recipes lately, like my Keto Double Chocolate Zucchini Bread Recipe as well as my Easy Keto BBQ Oven-Baked Ribs with Homemade Sugar-free BBQ sauce, this recipe was just so easy that I ended up assembling it late one night and forgot to take any pictures!
However, since it is so ridiculously simple to assemble, I am pretty confident that you do not need progress shots.
Are you ready?!
Step 1: In the bottom of an 8 x 8-inch baking dish, place a layer (16 keto chocolate vanilla cookies) in 4 x 4 rows.
Step 2: In a large bowl, add the heavy whipping cream, vanilla and allulose. Whip until stiff peaks form (about 3 minutes)
Step 3: Take half of the whip cream frosting and spread it over the cookie layer. Smooth the whipped cream and add an additional layer (about 16 cookies) over the whipped cream. Spread the remaining whipped cream over the cookies and decorate with any leftover cookie crumbs, black cocoa powder or chocolate chips.
Hint: I like to use a small offset spatula to smooth the sugar-free whip cream frosting. Also, I like to use my Keto Stabilized Whipped Cream recipe so that the whipped cream frosting holds together longer.
Recipe Tips
- To get neat, clean slices of this no bake keto dessert, pop the whole thing in the freezer for just 30 minutes before you’re going to serve it. This won’t freeze the whole dessert, but it will firm it up just enough so that it’s easy to cut.
- Make it ahead of time: Keto Oreo Icebox cake like this one can generally be made and then stored in the freezer for up to 1 month or in the refrigerator for up to 3 days.
- Use any type of Keto Cookies: This cake will be delicious if made with different flavoured cookies. Try High Key or make your own cookies like these Easy Keto Monster Cookies or these Keto White Chocolate Macadamia Nut Cookies
- Make a Chocolate Icebox Cake: Just add some cocoa powder to the whipped cream frosting for a chocolate version!
Equipment
I used a 9 x 9-inch baking pan and it was slightly too big for a row of 4 cookies but was not big enough for 5 cookies. Ideally, an 8 x 8-inch pan would be perfect.
If you only want to use 1 box of cookies, you can always use a 9 x 5-inch loaf pan instead and place 8 cookies on the bottom instead of 16.
Storing Tips
Keep this icebox cake covered, in the refrigerator, for up to 3-4 days. I actually like to keep mine in the freezer and just remove a slice whenever I get a craving. If the cake is frozen, simply let it rest at room temperature for about 10 minutes.
If you freeze this keto cookies and cream cake, it can be stored in an airtight container for up to 3 months.
Top tip
To ensure that the sugar-free whipped cream frosting holds together, I add a half a teaspoon to the allulose and whip it into the whipped cream. The xantham gum helps to hold the texture of the whipped cream. Click here to learn How to Make Keto Stabilized Whipped Cream.
If you do not add the xanthan gum, the keto cookies and cream icebox dessert will taste just as good but will either need to be frozen or eaten within 3 days.
FAQ
Can I use different types of cookies to make icebox cake?
Yes, you can use any type of cookie depending on what you can find in your local store or online. If the cookies are thinner or thicker, the resulting no bake keto dessert may end up either shorter or taller and may require a different number of cookies, depending on their size.
Does icebox cake go in the fridge or the freezer?
That is completely up to you!
Since there are only 2 of us in our house, I will divide the cake into 2 portions and place them in containers in the freezer. When we are craving a keto dessert, we simply pull out a container or place a container in the fridge overnight to soften slightly.
The great thing about this keto cookies and cream cake is that it can be eaten either frozen or directly from the fridge.
Can I make Oreo icebox cake with Sugar-Free Cool Whip?
You can make a similar dessert using sugar-free Cool Whip whipped topping instead of fresh whipped cream. Personally, I like my whipped cream version better! If you want to use sugar-free Cool Whip, I suggest briefly dipping the Oreos in almond milk before layering them, since they won’t absorb as much liquid from the whipped topping as they do with the fresh cream.
Can I use a different pan?
Two layers of 16 keto vanilla chocolate sandwich cookies (for a total of 32 cookies) each fit perfectly in an 8×8 cake pan, so that’s what I recommend using. You can use a 9×9 pan, but you’ll need a few extra Oreos, cut in half, to fill in that space. If you like, you can carefully layer the Oreos and cream on a plate to create a round Oreo Icebox cake too.
Lastly, if you only have 1 box of cookies, you can always make this Keto Oreo Icebox Cake in a loaf pan.
How do I slice this cake?
You can place the icebox cake in the freezer for 30 minutes before slicing and although this will help to create nice edges, the keto cake will still look a little messy.
Another way to modify this recipe would be to crush the cookies and add layers of crushed cookies instead of whole cookies since the cookies are harder to slice through when they are whole.

Ingredients
- 2 cups heavy whipping cream
- 2-6 tablespoon powdered sweetener (I used 4 tbsp but for sweeter, use 6 tbsp and less sweet, use 2 tbps)
- 1 tsp vanilla extract
- 32 Catalina Crunch Chocolate Vanilla Sandwich cookies
- Optional - 3 cookies, crushed or unsweetened black cocoa powder for decorations
Instructions
- Line the bottom of an 8 x 8-inch pan with a sheet of parchment paper. This is simply to protect your pan when slicing the keto cake using a sharp knife and therefore, you do not need any overhand of parchment paper.
- Line 16 cookies on the bottom of the pan - you should be able to make 4 x 4 rows for a total of 16 cookies. Set the baking dish to the side.
- In a large bowl, add the powdered sweetener (and xanthan - *see bottom note for details), vanilla and heavy cream. Whip until stiff peaks form.
- Spread half of the whipped cream over the cookie layer. Repeat with a second cookie layer, followed by remaining whipped cream. Top with cookie crumbles or unsweetened black cocoa powder, if desire.
- Place the cake in the fridge for at least 4 hours or preferably overnight. Slice into 9 pieces.
Notes
- to stabilize the whipped cream, whisk in ½ teaspoon of xanthan gum into the sweetener before adding it to the heavy cream.
- This keto dessert is over 70% fat which is what is recommended to stay in ketosis.
