Easy Keto Fudge
Keto Cookies and Cream Fudge is an easy keto fudge recipe that does not require any cooking or a candy thermometer. And trust me, this sugar-free fudge tastes exactly like store-bought fudge. And if you ask me or Mr. Grumbles, we think it even tastes better than anything we have ever bought!
So for all your cookies and cream fans, you just HAVE to try this rich, decadent fudge made with keto cream-filled chocolate sandwich cookies, sugar-free white chocolate chips, sugar-free cookies and a cream chocolate bar melted and then bound together with some keto sweetened condensed milk.
I use to be hesitant about making homemade fudge but after falling in love with my Easy Keto Lemon Fudge, Keto Snickers Fudge, Salted Caramel Brownie Fudge, Keto Buckeye Peanut Butter Chocolate Fudge, Peanut Butter Fudge and my Keto White Chocolate Fudge with Candied Walnuts, I feel like I am slowly mastering making sugar-free fudge.
Keto Cookies and Cream Fudge
If you love the flavour and all things "cookies and cream", then you will love this easy keto fudge. Each soft bite is perfectly sweetened and combines the creaminess of fudge with the added crunch of cookies. It’s the perfect keto dessert recipe or anytime snack to satisfy even the sweetest tooth.
Plus, since you can make this fudge as large or as small as you want, you can always fit this sugar-free fudge into your daily macros. At 76% fat, only 5 minutes of hands-on time and then a couple of hours to firm, this is by far one of my favourite easy keto recipes!
Keto Cookies and Cream Fudge Ingredients
Sandwich Cookies - Although you can find recipes online to make your own keto "Oreos", I opted for the easy route and used store-bought cookies. Catalina Crunch makes the most AMAZING tasting Vanilla sandwich cookies that I think taste better than Oreos. They are not exactly the cheapest thing on the keto market but since we are only using about 6 cookies, I think that it is well worth the splurge. IF you don't care which type of cookie you use in this recipe, you can swap out the vanilla sandwich cookies with any other type of cookie, like those made by High Key, Kiss My Keto or by Perfect Keto.
Cookies and Cream Chocolate Bar - I used Lily's Cookies and Cream bar for this recipe. IF you don't have a sugar-free white chocolate bar like this one, you can simply replace it with the same amount of sugar-free white chocolate chips.
White Chocolate - You can use whatever sugar-free white chips or melting chips to make this keto fudge. My favourite brands are ChocZero and Bake Believe Melting Wafers (do NOT use their white chocolate chips as they will not work well in this recipe!
Sweetened Condensed Milk - This is not a traditional fudge recipe, so the sweetened condensed milk is important in this sweet treat. I use my 15 Minute Keto Sweetened Condensed Milk recipe for this recipe. You will need 1 cup and this recipe will make over 1 ½ cups. Use the leftovers for this Keto Caramel Magic bar recipe!
What you need to know about sugar-free white Chocolate when using it in your Easy Keto Recipes
As I stated earlier, I have used both ChocZero White Chocolate Chips as well as Bake Believe Melting Wafers.
Although both brands of keto white chocolate taste amazing, they can not be "completely" swapped out due to the difference in their ingredients.
As it turns out, the FDA officially requires that anything labelled "White Chocolate" must contain cocoa butter. ChocZero White Chocolate Chips contain cocoa butter whereby Bake Believe White Melting Wafers contain palm oil.
White chocolate made with cocoa butter creates a slightly more creamy confection. However, white chocolate is also softer in structure than White Melting Wafers (that do not contain cocoa butter). With that being said, you will need to use MORE sugar-free white chocolate than white melting wafers.
I actually REALLY like the Bake Believe White Melting Wafers. I do not really care for any of their other products but actually prefer their melting chocolate to ChocZero's White Chocolate Chips!
Also, since they are much cheaper (9 oz for $5 for Bake Believe versus $7 for 7 oz for ChocZero chips), and require a smaller quantity to make this fudge, the sugar-free melting wafers of my first choice for this recipe.
However, if you only have ChocZero or Lily's on hand, you can absolutely use these instead but you will need to add more sugar-free white chocolate chips to the recipe.
Keto Cookies and Cream Fudge Instructions
MELT. Put the sugar-free white chocolate chips and keto sweetened condensed milk in a microwave-safe bowl. Place the bowl in the microwave for 30 seconds. Stir until the white chocolate has melted. If it still does not fully melt, return it to the microwave for 15-second intervals until all the white chocolate has melted and the mixture is perfectly smooth.
ADD-INS. While the white chocolate mixture cools, chop up the sugar-free Cookies and Cream bar (if using). Stir it into the warm mixture. It is ok if the bar melts a little. This gives the bars some added texture. Next, break the cookies into chunks and fold them into the mixture.
POUR. Pour the keto cookies and cream fudge recipe into a 9 x 5-inch loaf pan that has been lined with parchment paper. Sprinkle a few more crushed sandwich cookies on top.
FIRM - Refrigerate or freeze for 4-6 hours or until the sugar-free fudge has set. Cut into small squares and trim edges if desired. ENJOY!
Easy Keto Fudge Variations
The great thing about this white sugar-free fudge recipe is that you can easily substitute the Oreo cookies for another delicious treat and create an entirely different dessert.
- Swap out the vanilla sandwich cookies with chunks of mocha brownie, peanut butter cookies, or chocolate chip cookies.
- Use edible cookie dough like this Edible Cookie Dough or any of these 3 Protein-Packed Flavours
- Try using candy bars such as this Copycat Payday Candy Bars chopped up into small chunks
- Add nuts such as candied nuts or chopped macadamia nuts
- Have some fun with cereal. Catalina Crunch, Magic Spoon and Kashi all are surprisingly good keto cereals.
TIPS FOR PERFECT FUDGE
- Melting - Stir together the sweetened condensed milk with the white chocolate before placing it in the microwave. This will ensure that the white chocolate does not seize. Also, stir the mixture for at least one minute after microwaving it...most of the time, the stirring will cause all the chocolate to melt and therefore not need to be microwaved a second time. The hotter the sweetened condensed milk becomes, the longer it will take to cool the fudge.
- Forming - I use a silicone loaf pan that I bought on Amazon and I LOVE it. The silicone means that the pan is flexible and non-stick so I do not have to line it with any parchment paper. When the fudge is set, I can simply "pop" it right out of the pan. However, if you don't have a silicone pan, line a loaf pan with parchment paper with an overhang to make removing the fudge from the pan easier.
- Cutting Fudge - When you cut the fudge you are going to want to make sure that the fudge is completely set! Once you’re sure that it is set you will want to remove the fudge from the pan by lifting on the parchment paper. Once the fudge is on a flat surface it is much easier to cut! If you don't think the fudge has set, simply place it in the freezer. The fudge can be sliced and eaten directly from the freezer (this is how I prefer to eat it!)
- Crushing the Sandwich Cookies - If you want big pieces of cookies you can break them by hand, but if you want more of a crushed effect consider using a food processor or blender.
HOW TO STORE Sugar-Free FUDGE
STORE your fudge in an airtight container. You can keep it in the fridge for up to 2 weeks.
To FREEZE your fudge, wrap the block tightly with plastic wrap and again with aluminum foil. Label and freeze for up to 3 months.
