After years of mediocre sugar-free strawberry pies, my expectations were pretty low. Was it possible to create a keto strawberry pie that required very little effort but could taste absolutely divine?
Biting into the first forkful was the moment of truth…

Super easy, this recipe is the perfect combination of a not-too-sweet chocolate tart crust with a perfectly sweet strawberry center. What is there not to love?!!

Sugar-Free Strawberry Pie
After buying an entire flat of strawberries for only $6, I definitely knew I had to create a keto strawberry pie.
This recipe calls for sugar-free jello. I am not a big fan of the Jell-O in general as the sugar-free strawberry Jell-O contains maltodextrin. Maltodextrin is considered "sugar-free" and has zero carbs. However, it has been known to spike blood sugar levels more than regular sugar so for a keto diet, maltodextrin is a no-no!
For this recipe, I used a box of Simply Delish. Containing Stevia and Erythritol as their sweeteners of choice, they also do not contain any artificial colours or flavourings.

All About This Easy Keto Strawberry Tart
- Texture: Since the slices aren’t as thick as traditional a strawberry cake or a strawberry pie, it is more light and refresing. Crunchy on the outide and smooth on the inside! Add a dollop of whipped cream right before serving for an extra creamy treat!
- Flavour: The not-too-sweet keto chocolate crust tastes a step above plain tart crust. For the strawberry filling, we’re essentially using a sugar-free strawberry jello and fresh sliced strawberries. Sweetened with some extra allulose, this tart will is perfectly balanced and not too sweet. Fluffy whipped cream can be added for the perfect garnish but make sure you only add the whipped cream right before serving the keto strawberry pie. Since there is a lot of moisture from the strawberries, the whipped cream can break apart after only about 1 day in the fridge.
- Baking: Par-baking the crust is imperative in order to keep this tart crust nice and crispy. Par-baking takes a little extra time, but you’ll be rewarded with an impressively tasty crust that won't get overly soggy.
- Time: Set aside 45 minutes to prep this recipe, which includes par-baking and getting the the filling prepared. This keto strawberry pie needs to be refrigerated for a couple of hours to set so feel free to make this in the morning and serve it for later at dinner. You can also make the crust in advanced and store it in the fridge for 3 days or in the freezer for a month.

How to make a Chocolate Strawberry Tart
Prepare your pie crust. The first thing you’ll want to do when making your strawberry tart is to prepare your crust. You can pick flavours such as my Easy Keto Chocolate Almond Flour Pie Crust, a Keto Flaky Pie Crust, a Delicious Almond Flour Pie and Tart Crust or this Easy Keto Graham Cracker Crust
Since I made my strawberry tart in a 10-inch removable tart pan. If you’re making any of my pie or tart shells, you will definitely have enough crust to cover the entire tart pan. However, if you use a different recipe, just make sure that it will cover a 10-inch or smaller tart pan.
Blind bake your crust. Preheat your oven to 375˚F. Press your crust into a well-greased pan. You do not have to add dried beans, rice or pie weights. If the crust lifts a little as it bakes, you can easily just press it back down when it comes out of the oven.
Bake for 20 minutes. The crust should be nice and golden when you remove it from the oven.

Prepare the strawberries. Slice the strawberries in half and add 1 tablespoon allulose and 1 packet True lemon or 1 teaspoon of lemon juice. Stir everything together and let it sit for about 5 minutes. The sweetener helps to bring out more of the strawberry flavour and the lemon helps to preserve the colour of the strawberries.

Prepare your sugar-free jello mixture. Since we are adding strawberries, we are not going to follow the package directions. Instead, take the sugar-free strawberry jello and mix it with ¼ teaspoon xantham gum. Stir in ½ cup of water and let it sit. Boil 1 ¼ cup of water and mix it into the jello mixture. Allow it to cool for about 5 minutes.
Slice and arrange your strawberries. Once your crust has cooled, pour about ½ cup of the jello mixture into the pie crust.

Next, add the sliced strawberries. Finally, carefully pour 1 cup (reserving ¼ cup) of the jello over strawberries.

Wait about 5 minutes to allow it to start to set and then drizzle the remaining ¼ cup over any strawberries that have not been covered.

Allow it to cool for 5 more minutes at room temperature before placing it in the fridge for 90 minutes to set. You can also choose to slice your strawberries and arrange them in a pretty design inside your crust.
Tips for serving your strawberry tart
- Serve your tart within a day of making it (ideally the same day) to keep the strawberries looking their best.
- Slice your tart with serrated knife to get a cleaner cut.
- Don’t forget the whipped cream! It definitely adds some creaminess to the pie but only add it right before serving!

- 1 Chocolate Almond Flour Pie Crust (or other pie crust of your choice)
- 4 cups fresh strawberries, sliced in half
- 1 tbsp allulose
- 1 packet True Lemon (or 1 tsp lemon juice)
- 0.7 oz Simple Delish Sugar-free Strawberry Gel Dessert
- ¼ tsp xantham gum
- 1 ¾ cup water, divided
Instructions
