Perfect for the hot upcoming summer months, this keto collagen bar recipe is sure to become a family favourite!

Why this no-bake keto dessert recipe is so great

Ingredients
You do not need any weird or crazy ingredients to make these keto collagen peanut butter bars! The actual keto collagen bars only require 5 basic ingredients and the delicious chocolate topping only requires 2 ingredients!
For the Keto Collagen Peanut Butter Bars:
- Keto Cereal - I used Catalina Crunch cereal but you can use any type of keto cereal. You can even use my 5-Minute Skillet Keto Granola or make the keto cookie crumbs from my Homemade Keto Cookie Butter
- Collagen Powder - I used Naked Ella Vanilla Collagen powder for this recipe. Naked nutrition produces very pure collagen powders only source premium ingredients, using as few of them as possible and being transparent so you know exactly what's going into your body. It is the ONLY collagen brand I use (check out these dairy-free Clean Keto Collagen Protein Bars that contain under 100 calories per bar!)
- Peanut butter - I used Jif Natural but any peanut butter, almond butter, or seed butter will work. If you decide to use homemade nut butter, you may need to add some additional liquid, such as melted palm shortening, butter, coconut oil or even almond milk.
- Palm shortening - I love using organing Palm shortening since it lends itself to really creamy bars. However, you can easily use butter instead or even coconut oil. If you use coconut oil, your bars will end up quite firm when they are stored in the fridge.
- Sweetener - I used powdered Allulose but Swerve, Lakanto, or any other sugar-free substitute should work.
For the optional Chocolate Topping:
- Sugar-free chocolate chips - Any variety of sugar-free chocolate chips or sugar-free melting wafers will work.
- Peanut Butter - This will help to keep the chocolate topping slightly softer which will allow the bars to be sliced without the top chocolate layer cracking.

Instructions
No oven and under 10 minutes from start to finish, these keto peanut butter bars are a cinch to make!

In the bowl of a food processor, add the collagen powder and keto cereal

Pulse until the keto cereal becomes coarse crumbles.

Melt the palm shortening, sweetener, and peanut butter in a bowl. Once melted, remove from the microwave and stir in the collagen cereal mixture.

Pour the mixture into a lined 8 x 8-inch baking pan. Place in the fridge for 30 minutes to harden.

In a large glass measuring cup, add the sugar-free chocolate chips (or wafers) and peanut butter

Microwave on high for 30 seconds. Stir and repeat until the mixture is nice and smooth.

Spread the sugar-free chocolate topping over the peanut butter collagen layer. Place in the fridge to set, about 2 hours.

Cut the keto peanut butter collagen bars into 16 squares. Store in an airtight container in the fridge or in the freezer.
Hint: If you want to sprinkle some Maldon flaked sea salt on the top, place the bars in the fridge for about 5 minutes before adding the sea salt to the top. You want the chocolate to still be somewhat soft to allow for the sea salt to stick to the chocolate topping but not too soft that the salt dissolves.

Substitutions
These easy no-bake keto bars have few easily substituted ingredients that, although I have not tried, I am fairly certain they will work.
- Peanut butter - instead of peanut butter, you could use almond butter or sunflower seed butter for a nut-free version.
- Palm Shortening - use melted butter instead. You can try using coconut oil but the bars may end up fairly firm when stored in the fridge and may be too soft if stored at room temperature. If you use coconut oil, let me know how they turn out!
- Allulose - use any type of sugar-free sweetener. Just be aware that different keto sweeteners have different levels of sweetness so you may need to adjust the recipe to accommodate any changes.
Variations
Since this keto collagen bar recipe is so easy and virtually fool-proof, you can have fun and try different variations such as:
- Protein - replace some of the collagen with pea protein powder. Just keep tasting the mixture as you go to ensure that the sweetness suit your taste.
- Maple and Salt - I actually love these bars with the addition of 2 tablespoons of sugar-free maple syrup and a pinch of salt
- White chocolate - use sugar-free white chocolate chips instead of a different variation
Equipment
All you need is a large bowl, spoon, and an 8 x 8-inch pan. If you do not have a square baking dish, you can make these in a loaf pan. Just remember that the smaller the pan, the thicker the bars.
Storage
Store these keto peanut butter bars in the fridge or at room temperature is your home does not get too hot. My house can get up to 80 degrees F. during the day which will cause the bars to soften.
You can also easily freeze this no-bake keto dessert for up to 3 months.
Top tip
Since this keto collagen bar recipe does not have any eggs, you can easily taste the mixture as you go along and add or decrease the amount of sweetener used in this recipe. Mr. Grumbles does not like overly sweet treats so these bars tend to be slightly less sweet than other versions on the web.

Ingredients
For the Keto Collagen Bars:
- 1 ½ cup Catalina Crunch Cereal (see post for substitutions)
- 4 scoops (128 g) Naked Ella Vanilla Collagen Powder (or other collagen powder)
- 1 cup (250 g) peanut butter
- ½ cup (120 g) palm shortening (or butter)
- 1 cup allulose (or another sweeter)
- Optional - 2 tablespoon sugar-free maple syrup and a pinch of salt
For the Chocolate Topping:
- 1 cup sugar-free chocolate chips
- 2 tbsp peanut butter
Instructions
- Line an 8 x 8-inch square pan with parchment paper making sure to leave an overhang for easy removal of bars from the pan. Set the pan to the side.
- In the bowl of a food processor, add the keto cereal and collagen powder. Pulse until the mixture has been coarsely chopped.
- In a large bowl, melt together the peanut butter, palm shortening and allulose in the microwave for approximately 1 minute. Stir until all the ingredients have melted and are fully combined. If needed, return the bowl to the microwave for 30-second intervals until melted.
- Stir the cereal collagen mixture into the melted peanut butter. Add the optional sugar-free maple syrup and a pinch of salt if using.
- Pour the mixture into the pan and place the pan in the fridge to firm for about 10-30 minutes.
- If making the chocolate topping, add the sugar-free chocolate in a large glass measuring cup along with the 2 tablespoon of peanut butter. Place in the microwave and microwave on high for 30 seconds. Remove and stir the ingredients. If not fully melted, return to the microwave and microwave for an additional 30 seconds or until the chocolate has fully dissolved.
- Carefully pour the chocolate topping over the firm bars. Place bars back in the fridge for 5 minutes before sprinkling with sea salt, if desired.
- Return the bars to the fridge for 1 hour to firm before cutting them into 16 pieces.
