In Florida, we have been bouncing around in temperature - from lows in the 50s to highs in the 80s - which is definitely symbolic of spring!

Ingredients
This Keto Lemon Cream Pie only requires 5 ingredients:
- Crust - I used my Keto Graham Cracker crust but you can use this Keto Flaky Pie Crust, this No-Bake Keto Pie Crust, a Chocolate Almond Flour Pie Crust, or a plain Delicious Almond Flour Pie and Tart Crust
- Crystal Light - You will need a Lemonade Crystal Light powdered packet. You will need the packet that is used to make 2 gallons of lemonade. You will only be using the powder and not actually making the drink!
- Vanilla Pudding - I used a package of Simply Delish Vanilla Pudding mix but you can use any type of sugar-free vanilla pudding mix.
- Milk - I used unsweetened almond milk but any milk alternative should work.
- Frozen Whipped Cream - I had a container of TruWhip Keto whipped cream in my freezer so that is what I used. You can always make your own stabilized whipped cream and use it instead. 1 cup of heavy whipping cream will make 2 cups of whipped cream.
Instructions
Simplest recipe ever...Have I already said that a million times???!!
Combine the sugar-free pudding mix with the crystal light powder in a small bowl. Whisk the almond milk into the pudding mixture for 2 minutes.
Fold in the whipped topping until no white streaks remain.
Spread the keto lemon cream pie filling into the crust and place it in the fridge for 2 hours to set.
Decorate with Easy Keto Blueberry Pie Filling or additional whipped cream or chopped nuts.
Hint: Make sure that you chill the pie to allow the pudding mixture to set properly.
Variations
This no-bake keto lemon pie can be modified to add some different flavours or twists!
- Super Lemony - add some lemon extract, lemon zest or crystalized lemon powder
- Fruity - add some Keto Blueberry Pie Filling, plain blueberries or blackberries. I do not suggest adding diced strawberries as the strawberries will release moisture which will not allow this keto lemon pie recipe to firm properly.
- White chocolate - add some melted sugar-free white chocolate to the pudding mixture for a chocolate twist.

Do not follow the directions on the pudding box. Instead, use 1 cup of almond milk as stated in the directions.
Can I use any type of keto pie crust?
Yes. Just make sure that if the crust recipe calls for baking, that you bake the crust and allow it to fully cool before adding the keto lemon filling.
Can I use real lemon juice instead of powdered lemonade?
I do not suggest using lemon juice as it will add liquid to the filling which means that it may not fully set.
Can I use a different flavour of Crystal Light?
Yes. Use any flavour and follow the same recipe.

Ingredients
- 1.7 oz package keto Simply Delish Vanilla Pudding
- 1 cup unsweetened almond milk
- 1 package dry pitcher packet Crystal Light Lemonade
- 8 oz frozen Keto Whipped Cream
- 1 Easy Graham Cracker Crust
Instructions
- In a small bowl, combine the sugar-free pudding mix with the crystal light powder. Whisk the almond milk into the pudding mixture for 2 minutes.
- Fold half of the whipped topping into the pudding until no white streaks remain. Spread the mixture into the cooled crust. Top with remaining whipped topping.
- Cover and chill for 2-3 hours or until set.
