This is my favourite Easy Homemade Blueberry Pie Filling Recipe. I use this keto recipe for just about everything you can imagine – and pie too!
We love it on all sorts of desserts and it’s our favourite waffle topping too.
You can use this blueberry pie filling to make Keto Blueberry Blondies as well as these Keto Blueberry White Chocolate Chip Cookies. You can also use this sugar-free dessert recipe and make my Easy Blueberry Greek Yogurt Tart and replace the blueberries with this easy keto blueberry pie filling instead!
Making Homemade Blueberry Pie Filling From Scratch
This easy keto blueberry pie filling recipe is so simple!
If you’ve never made a sugar-free pie filling from scratch before, you are in the right place. I am going to walk you through the whole process. Blueberries shine in this sugar-free dessert. The blueberry pie filling is lightly sweetened with a touch of spice from cinnamon. And then, a little splash of lemon juice gives it the brightness to lighten any day...I just absolutely love it so much that you can easily find me stealing a spoonful of it right from the jar in our fridge!
When blueberries are in season, what better to do with them than make blueberry pie filling.
The other day, I picked up packs of fresh blueberries for only $1! Of course, at that price, I had to pick up 5!
And since blueberries have been found to be a "superfood", I did not feel the least bit guilty.
Blueberries are reported to neutralize free radicals, protect your heart, improve your vision, and protect against degenerative brain diseases.
Plus, since half of a cup of blueberries has only 40 calories and 9 grams of net carbs, they are not only super healthy but also one of the fruits that can be eaten on a keto diet.
Blueberry Pie Filling 4 Main Ingredients
Let’s talk about the ingredients first. Here’s what you’ll need to make this easy keto blueberry pie filling (the full recipe is below):
Blueberries — these can be fresh (my preferred option) or frozen. Frozen blueberries will need to be thawed before using to make the pie filling.
Sweetener - I used allulose for this recipe since I did not want this easy keto blueberry pie filling to crystalize when stored in the fridge. Keto recipes that require refrigeration do better with allulose as erythritol-based sweeteners, such as Lakanto, will crystalize a little. However, if you plan on using this blueberry pie filling in keto recipes that do not require refrigeration, feel free to use any sugar substitute. Xanthan Gum - Xantham gum is very popular when it comes to gluten-free and keto recipes. Xantham gum is a thickener that creates the "thick and gooey" factor that typically recipes get from either adding gluten or cornstarch. You are going to stir the xantham gum together with the sweetener so that the xanthan gum will dissolve well and not form a "clump"
Lemon Juice - The acid in the lemon juice balances the sweetness of the fruit. The lemon juice also helps to enhance and bring out the fruit's natural flavour. When I first tasted the blueberry pie filling, it fell a little flat. Once I added the juice from a single lemon, the blueberry pie filling went from good to spectacular!
That's it for the 4 main ingredients. All the other ingredients are either optional or are ones that are added to nearly EVERY recipe so I don't count them as "ingredients".
Water - You are going to add only ¼ cup of water to the blueberries and sweeteners. This will help break down the blueberries as well as make sure that the sweetener does not burn.
Cinnamon and Salt - Both the cinnamon and salt help to compliment the blueberry flavour as well as bring out the natural fruity taste. These ingredients are optional so feel free to omit them if you don't have any on hand.
Butter — Adding just a tiny bit of butter makes the filling shiny and extra delicious on top.
How To Make Blueberry Pie Filling
Have you made a homemade pie filling before? It’s super easy and I love having it on hand for waffles!
It tastes much better than the canned version too. This recipe is simply water, blueberries, sweetener, and xantham gum.
The lemon juice in the recipe isn’t required for the pie filling to work, but it does brighten the flavour nicely. (I highly recommend including it!)
Everything cooks together in a saucepan for just a few minutes until it is nice and thick and the fruit does a great job at giving it a gorgeous colour.
Blueberry Pie Filling Recipe
- In a heavy, medium saucepan. Whisk together the xantham gum and sweetener until there are no xantham lumps.
- Add the water, blueberries and lemon juice. Cook over medium heat, stirring frequently until thick. If you are using cold blueberries, this could take anywhere between 3-5 minutes. Stir in the cinnamon, salt and butter if you are using these ingredients.
- Remove from heat and cool. Use as desired. To store the easy keto blueberry pie filling, place it in a tightly covered jar in the fridge for one week.
The Best Blueberries to Use for Blueberry Pie
Fresh, in-season blueberries from a local source are the best to use for this pie. However, buying organic blueberries and be quite costly so feel free to use frozen blueberries instead. The only difference is that the frozen blueberries need to be thawed first. Once thawed, use any leftover juice measured with the water. For example, if you ended up with 2 tablespoons of blueberry juice, reduce the amount of water by 2 tablespoons so that you still end up with ¼ cup (or 4 tablespoons) total.
Blueberry Pie Filling substitutions
If you don't have all the ingredients on hand, there are some swaps you can make for this easy blueberry pie.
- Swap the xanthan gum for about 1-2 tablespoons of chia seeds. The chia seeds will create a gelatin texture but you will have to wait for a couple of hours before this happens so I suggest starting with only 1 tablespoon and adding more chia seeds if needed after about 2 hours.
- Swap half the blueberries for another berry such as strawberries or raspberries
- If you don't have fresh lemons, use bottled lemon juice

Ingredients
- 3 cups blueberries, fresh or frozen
- ½-1 cup allulose (depending on how sweet you like your filling!)
- ¼-½ teaspoon xantham gum (depending on how thick you want your filling)
- ¼ cup water
- 1 lemon, juiced
- ¼ tsp salt
- 2 tbsp butter (optional)
- ¼ tsp cinnamon (optional)
Instructions
- In a small saucepan, stir together the allulose and xantham gum. Add the blueberries and water and stir to coat. Heat the saucepan on medium-high heat while stirring. Once the mixture comes to a boil, continue to boil until the blueberries begin to break down (about 3 minutes) and then remove it from heat. Add the lemon juice and salt and stir. If using, add the butter and cinnamon and stir until the butter has fully melted. Allow cooling before storing in fridge.

I have not tried canning the blueberry pie filling but I currently have some in my freezer so I know for a fact that you can easily freeze it and use it at a later time. Hope this helps!
