Keto Cheesecake Recipe
If you haven't noticed, I love cheesecake.
Cheesecake has got to be the easiest, low carb, keto friendly, gluten free dessert known to mankind. So, I knew I had to create a sugar-free Peanut Butter Cheesecake to satisfy my love of peanut butter, chocolate and cheesecake!
My last cheesecake recipe, Almond Joy Cheesecake, was created for my husband, so I decided to take on a new challenge with my niece and nephew in mind.
My niece, Brynn (12 years old), and my nephew, Reid (14 years old), live way up north (almost all the way to the North Pole!) in Canada's capital, Ottawa. Hence, with me living in Florida, we don't get a chance to see each other very much.
Although we live miles apart, we all share a common love of cooking and let me tell you, these two can cook! From making French Macarons to chocolate mint brownie bars, I am always in awe at what they create.

Keto Peanut Butter Chocolate Cheesecake Instructions
Here is a brief description of the steps in order to make this keto cheesecake recipe:
Step 1 - Make the Base
- Combine all the brownie ingredients in a bowl and spread the mixture into a lined 7-inch spring form pan
- Bake for 10 minutes (the brownie will NOT be fully baked but will be firm enough to hold the cheesecake)
Step 2 - Make the Cheesecake
- While the base is baking, whip together all the cheesecake ingredients and then fold in the chocolate chips.

- Spread the mixture over the top of the brownie base and place the pan in a water bath
- Bake for 40-45 minutes or until the top is set and is just beginning to brown

Step 3 - Allow time to cool
- Remove the cheesecake from the waterbath and set it on the counter to cool for at least 1 hour before placing it in the fridge to fully cool
Step 4 - Decorate
- Combine the sugar-free chocolate chips and the peanut butter - melt in the microwave and pour the mixture over the top of the cheesecake.
- Add crushed peanuts or sugar-free peanut butter cups if desired (you can also make your own following my recipe for peanut butter cups).

Ingredients
Brownie Base
- 4 tbsp butter, unsalted
- ¼ cup sugar-free milk chocolate chips
- ¼ cup almond flour
- ¼ cup sweetener
- 2 tbsp unsweetened cocoa powder
- 1 egg
- ⅛ tsp baking soda
- splash of vanilla and a pinch of salt
Peanut Butter Cheesecake Filling
- 16 oz cream cheese, softened
- ½ cup sweetener
- 1 tsp vanilla
- 2 eggs
- ¾ cup peanut butter
- ½ cup sugar-free chocolate chips
Chocolate Peanut Butter Ganache
- 2 tbsp peanut butter
- ½ cup sugar-free chocolate chips (or bar)
Optional Decorations
- Crushed peanuts
Instructions
- Preheat oven to 350 degrees F. Generously grease a spring form pan and wrap the bottom of the pan with aluminum foil.
- Combine all of the brownie ingredients in a medium bowl and stir to combine. Pour mixture into lined spring form pan and place in the oven for 10 minutes. Remove from oven and let cool.
- Using an electric mixer, beat cream cheese, sweetener, peanut butter and vanilla. Taste mixture and add more sweetener if necessary (the amount depends on the type of sweetener you use so taste the mixture BEFORE adding the eggs)
- Once mixture is to your liking, add the eggs, one at a time and beat until incorporated. Fold in the chocolate chips.
- Carefully pour the peanut cream cheese mixture onto the brownie crust.
- Fill a 9 x 9-inch baking pan with some water and set the cheesecake in the water bath. Place in oven and bake for 40-50 minutes until top is set but slightly jiggly.
- Pull cheesecake out of oven and cover with a kitchen towel. This creates steam and will stop your cheesecake from cracking.
- While cheesecake is cooling, combine ganache ingredients in a bowl and microwave on high for 1-2 minutes, stopping to stir every thirty seconds.
- Once cheesecake has cooled, gently pour ganache over cheesecake, allowing some to dribble down the sides. Garnish with chopped peanuts, if desired.
- Place the cheesecake in the fridge to fully set, at least 4 hours or overnight, before slicing.
Notes
- Use any sweetener you like but make sure to taste it as you go. I use stevia as it does not affect my blood sugar, is all natural and does not cause any stomach upset.
