This incredible no-bake keto strawberry cheesecake made with a quick skillet cookie crust is not only gluten-free but sugar-free too! Also, since we are using gelatin, this recipe is also a keto no bake cheesecake which means that you don't have to even turn on your oven during the upcoming hot summer months.
Also, if you are not in the mood for making it into a cheesecake, you can easily take this recipe and cut in half and pipe it into dessert cups for the perfect individual keto dessert.

No-Bake Keto Cheesecake Recipe Ingredients
This easy keto cheesecake recipe is delicious and truly the perfect dessert for sharing. You won’t believe how easy it is to make! Here’s everything you’ll need to make it:
For the Sugar-free No-Bake Strawberry Cheesecake
- Main Ingredients: Cream Cheese and Strawberries - you will need to take out the cream cheese at least 30 minutes ahead of time to softenen and also allow time for the frozen strawberries to thaw so make sure you plan ahead!
- Remaining Wet ingredients: Sour cream, heavy cream and water form the rest of the wet ingredients.
- Dry ingredients: Sweetener (I highly suggest using allulose as it will not crystalize in the fridge), and gelatin are the only 2 dry ingredients needed for this keto strawberry dessert.
For the Keto Chocolate Cookie Crust and Drizzle:
- Dry Ingredients: You will need almond flour, sweetener (any type will work for the cookie base), unsweetened cocoa powder are needed for the crust and sugar-free chocolate for the chocolate drizzle
- Wet Ingredients: Melted butter or coconut oil can be used for the crust and heavy cream will create the most dreamy chocolate drizzle!

Making this No-Bake Keto Strawberry Cheesecake
As I have stated several times already, this keto strawberry desserts comes together very quickly. Then, all you have to do is be patient enough to allow it to set before digging in!
Step 1: Prepare the Crust
- Add all the crust ingredients to a large skillet and heat the skillet on medium heat. Stir everything together until the butter or coconut oil has melted
- Press the mixture into the bottom of a lined springform pan, allowing some of crust to work its way up the side.
- Place in the fridge to cool
Step 2: Prepare the Strawberry Puree
- Place the thawed strawberries in the bowl of a food proccessor (or blender) and blend until nice and smooth. Set to the side.
Step 3: Prepare the Cheesecake Mixture
- Place the heavy cream in a large cold bowl and beat on high until stiff peaks form. Set the bowl in the fridge.
- In a large bowl, beat with a handheld mixer the cream cheese, sour cream and sweetener. Add the mixture to the bowl with the strawberry puree and beat until combined.
- In a small saucepan, sprinkle the gelatin over the cold water. Let stand for 2 minutes. Place the saucepan over medium-low heat and cook just until the gelatin melts. Pour the gelatin in a thin stream into the cream cheese-strawberry bowl.
- Fold in the whipped cream carefully (this may take some time)
Step 4: Assemble the keto no bake cheesecake
- Remove the crust from the fridge and pour the strawberry cheesecake into the crust.
Step 5: Allow the cheesecake to set and then drizzle
- Return the cheesecake to the fridge to firm (at least 2 hours but preferably overnight)

- Place 1 tablespoon of heavy cream and sugar-free chocolate in a small glass bowl. Microwave on high for 30 seconds before stirring until all chocolate has melted.

- Remove ring from cheesecake and drizzle chocolate sauce over cheesecake before serving.
Keto No-Bake Strawberry Cheesecake Tips:
- I highly suggest using allulose for the cheesecake as it will not crystalize when cold. For the crust, feel free to use any sweetener you wish
- Add additional sweetener so suit your taste - we don't like overly sweet desserts so you may wish to add additional sweetener
- If your strawberries are not overly flavourful, feel free to add some strawberry extract
- For additional pop of colour, add some natural red food dye

Ingredients
For the Crust:
- 1 cup almond flour
- ¼ cup unsweetened cocoa powder
- ½ cup sweetener of choice
- ¼ cup unsalted butter
For the Cheesecake:
- 1 cup heavy cream
- 16 oz frozen strawberries, thawed
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 cup allulose
- 0.5 oz (2 0.25 packages) unflavoured gelatin
- ½ cup cold water
For the Thick Chocolate Drizzle:
- 4 oz semisweet sugar-free chocolate
- 1 tbsp heavy cream
Instructions
- Preheat the oven to 350 degrees F. Place a piece of parchment paper in the bottom of the pan and spray the 9-inch springform pan well with cooking spray.
- In a skillet, add the butter, sweetener, almond flour and cocoa powder. Heat, while constantly stirring, on medium-low until the butter has melted and the almond flour just begins to turn fragrant, about 5 minutes. Remove pan from the heat and carefully press the crust into the base and up ½- in-1-inch up the springform pan pan. Place springform pan in the fridge.
- Place the heavy cream in a large cold bowl and beat on high until stiff peaks form. Set the bowl in the fridge.
- Place the thawed strawberries in the bowl of a food proccesor (or blender) and blend until nice and smooth. Set to the side.
- In a large bowl, beat with a handheld mixer the cream cheese, sour cream and sweetener. Add the mixture to the bowl with the strawberry puree and beat until combined.
- In a small saucepan, sprinkle the gelatin over the cold water. Let stand for 2 minutes. Place the saucepan over medium-low heat and cook just until the gelatin melts. Stir until all chocolate has melted (if chocolate does not fully melt, return the bowl to the microwave for 15 second intervals). Remove springform pan and drizzle chocolate sauce over the top before serving.
