Sugar-free Layered Mousse Dessert
I love the look of layered desserts. Like my Easy Keto Butterscotch Layered Dessert, The BEST Keto Oreo Icebox Cake or this Keto Snickers Fudge, I find that adding different colours or textures to a dessert adds a little "je ne sais quoi"!
And this keto espresso martini mousse dessert is no exception. With a homemade gelatin espresso bottom layer, followed by a light and airy espresso-chocolate whipped mousse and then topped with a creamy whipped topping, this keto layered dessert is almost too beautiful to eat!

Keto Layered Dessert with only 5 Ingredients!
Yup...you only need 5 basic, easy to find ingredients to make this sinfully delicious dessert!
Espresso Powder - You can buy espresso powder at most grocery stores or online. My favourite brand is by Modern Mountain. You will use it in both the bottom gelatin layer as well as for the keto coffee mousse. Adding espresso powder to anything chocolate helps to elevate the chocolate flavour without adding a bitter coffee taste.
Heavy Cream - Make sure that you are using heavy whipping cream which contains more fat than heavy cream. Also, keep the cream in the fridge until you use it - the colder the cream, the better and quicker the whip!
Chocolate - You can use either sugar-free chocolate chips, chocolate bar or melting wafers for this recipe. I like to use bittersweet sugar-free chocolate, but if you only have sugar-free milk chocolate, you can use i,t but you may want to decrease the amount of sweetener called for in the recipe card.
Sweetener - The best type of sugar substitute to use for this keto layered dessert is allulose. Allulose does not crystallize as it cool,s so your no-bake easy keto dessert layers stay smooth and creamy and not grainy.
Gelatin - I use Knox gelatin. It is flavourless and can easily be found in any grocery store.
Keto Layered Dessert
Here are pics of the 3 layers. You will notice that I placed half of the sugar-free layered mousse dessert in espresso glasses and half in small clear 4 oz glasses since I only have 4 martini glasses.
The first layer is a sweet espresso gelatin. You can opt to use either vodka or water to make the gelatin.

The second layer is a chocolate espresso mousse...

...and the third layer is a light and airy whipped cream!

What makes this a Keto Espresso "MARTINI" Mousse?
You may be asking yourself after reading the ingredient list, why the word "martini" is in the title but no alcohol is listed in the ingredients?
One reason is simply due to the fact that I made these desserts in martini glasses, but also because you CAN choose to add alcohol to this dessert for a more "adult" version!
By simply swapping out the water in the gelatin layer and adding some vodka, you now have an official "martini" dessert!
What if I do not have martini glasses?
If you do not have martini glasses, you can use any type of glass. You can see from the picture below that I made half of this keto layered dessert in small clear glasses.

What size martini glasses do I need?
I used 6 oz martini glasses, but any other type of small serving glasses will work. You can see from the picture above that I used small glasses that were leftover from a Costco tiramisu dessert that we had bought a long time ago. These glasses were approximately 3-4 oz each.
If you have 3-4 oz glasses, you will end up with approximately 8 desserts. However, if you end up using 8 oz glassware, you will only get 4 desserts.

Keto Espresso Martini Mousse - Only 5 Ingredients!
This keto espresso martini mousse is so easy yet so sophisticated, that it is perfect for any type of gathering! Make it with or without the alcohol, this no-bake keto layered dessert is a beautiful eye-catching dessert that requires minimal effort!

Ingredients
Bottom Espresso Layer:
- 1 ½ tbsp cold water
- 2 ¼ tsp gelatin powder
- ½ cup allulose
- ¾ cup boiling water
- 1 tbsp espresso powder
- ½ cup water (or vodka)
For the Sugar-free Chocolate Espresso Mousse:
- 2 tbsp espresso powder
- 2 tbsp hot water
- 1 ½ cup heavy cream, divided
- 6 oz sugar-free bittersweet chocolate (finely chopped if in bar form)
For the Whipped and Toppings:
- 1 ½ cup heavy cream
- ¼ cup allulose
- 12 roasted coffee beans
- espresso powder for dusting
Instructions
For the Espresso Gelatin
- Place 8 - 4 oz martini glasses (or any other type of glassware) on a tray or baking sheet. Set aside. Place the cold water in small bowl. Sprinkle the gelatin evenly over the surface of the water and let stand until set, about 2 minutes.
- Add the espresso powder and allulose to a small microwave bowl. Add in the hot water and stir to dissolve the sweetener. If the sweetener doesn’t dissolve completely within 1-2 minutes, microwave for 1 minute at 100% power and stir again until dissolved.
- Add the bloomed gelatin to the hot espresso mixture. Stir until melted and smooth. Pour in the water (or vodka). Evenly divide the hot espresso mixture between the glasses and refrigerate until set, about 3 hours or until the jelly is firm to touch.
For the second layer:
- Combine the espresso powder and hot water in a small bowl. Stir to dissolve and combine.
- Place ¾ cup of the heavy cream and the semisweet chocolate in a microwave-safe bowl. Cook at 100% power in the microwave for 1 minute. Let stand for 1 minute. Whisk together until a shiny ganache forms. Add the espresso mixture. Let cool, almost completely, about 10-15 minutes.
- Place the remaining ¾ cup heavy cream in the bowl of an electric mixer and beat until stiff peaks form. Fold the ganache into the whipped cream until no streaks of white remain.
- Place the mousse in a piping bag and evenly divide the mixture over each of the espresso gelatin layers. Smooth the mousse evenly to the edges of the glass using the back of a spoon.
For the Top Layer:
- In the bowl of an electric mixer, whip the cream until soft peaks form – it should be thickened but soft enough to fall from a spoon. Add the sweetener and whip until incorporated. Top each glass with the whipped cream, filling to the brim.
- Place three whole roasted coffee beans on the center of each glass, mimicking the garnish of an espresso martini. Sprinkle or sieve extra espresso powder over the whipped cream (you can also use unsweet cocoa powder). Serve immediately.
