What is the difference between Speculoos and Snickerdoodles?
Snickerdoodles are buttery and sweet with a cinnamon taste, and cream of tartar adds a subtle tang. Speculoos have a flavour similar to gingerbread and pumpkin spice.
These Speculoos truffles have all the traditional cookie flavour stuffed into a keto fat bomb recipe!
Keto Speculoos Fat Bomb Ingredients
- Nuts – I like to use either walnuts or pecans as they are super high in fat, low net carbs and one of the most affordable nuts on the market. If you use roasted and salted nuts, omit adding any additional salt.
- Oil – You can use either organic palm shortening or coconut oil. Either of these oils will add just the right amout of creaminess as well as healthy fats. You can also substitute grass-fed butter if you perfer. Regradless of which ingredient you use, make sure the fat is melted before adding it to the keto fat bomb mixture.
- MCT Powder – This powdered oil is great for keto for adding additional fats to this keto cinnamon fat bomb without making the keto speculoos too soft. My favourite brand is by Naked Nutrition which is one of the cleanest supplement companies on the market today!
- Allulose – This is the best sweetener to keep your snacks smooth, not gritty, with no cooling effect or aftertaste. You can also use powdered erythritol instead. I would not suggest a granulated sweetener as these keto speculoos truffles will not have the silky smooth truffle texture.
- Casein/Almond Flour - These ingredients are optional but are necessary if your keto speculoos truffles are too sticky.

How do you make the Speculoo spice for these keto truffles?
Speculoos spice is a combination of warm spices with a slight kick. To make homemade Speculoo spice mix, simply combine the following:
- Cinnamon - 3 tablespoons
- Nutmeg - 4 teaspoons
- Cloves - 4 teaspoons
- Ginger - 3 teaspoons
- Cardamom - 2 teaspoons
- White Pepper - 1 teaspoon
This should give you just approximately ⅓ cup of Speculoo spice mix.
The only difficult ingredient necessary is white pepper. You can buy white pepper on amazon or at high end grocery stores, such as Whole Foods.
Sugar-free Speculoos Recipe Instructions
You can make these keto speculoos truffles in about 5 minutes from start to finish!
Step 1 - Pulse the nuts
- Pulse the roasted nuts in a food processor, starting and stopping, until mostly broken down into small pieces.
Step 2 - Add the wet ingredients
- Add the melted coconut oil, and vanilla. Continue to puree until nut butter forms.
Step 3 - Add the dry ingredients
- Add the mct powder and sweetener gradually, a couple tablespoons at a time. Puree after each addition, until smooth.
Step 4 - Shape and Chill
- Using a cookie scoop, divide the keto speculoos fat bombs evenly and roll between your palms.
- Place the keto cinnamon fat bombs in the freezer, or fridge, until solid.

How do you roast nuts?
I roast nuts in a large skillet on the stovetop. Simply place the nuts in the skillet at heat the skillet on medium heat. Stir the nuts constantly until they just start to become fragrant, about 5 minutes. Remove the nuts from the heat immediately as nuts can go from roasted to BURNT very quickly!
How to Store Keto Speculoos Fat Bombs
- Store: Once set, you can keep your fat bombs in an airtight container in the fridge. Don’t leave them at room temperature.
- Freeze: To freeze keto fat bomb recipes, place the tray in the freezer until solid, then transfer them to a zip lock bag or freezer-safe container. This is the best way to store them for long-term freshness.
Optional Cream Cheese Drizzle
Mr. Grumbles' loves all things cream cheese so I decided to combine 1 tablespoon of cream cheese with 1 tablespoon of heavy cream and sugar-free maple syrup. I heated this in the microwave for 30 seconds and then added 2 tablespoon of Swerve Confectioner sweetener and drizzled it over the speculoos bites.
This is purely optional but Mr. Grumbles definitely appreciated the extra step!

Keto Speculoos Fat Bomb Truffles
These easy keto Speculoos fat bomb truffles are the perfect holiday treat! Rich, creamy and decadent, with just the right amount of holiday spice, these make the perfect keto snack or low carb dessert!

Ingredients
- 2 cups nuts, roasted*
- 2 tbsp coconut oil or palm shortening
- ¼ cup Naked Fat Bomb (or another MCT powder)
- ¼-⅓ cup powdered sweetener
- 1 tbsp vanilla
- 1-2 teaspoon Speculoos Spice Mix, depending on how strong you like the flavour
- optional - 1-2 tablespoon vanilla casein or almond flour if truffles are too wet
- optional - cream cheese drizzle*
Instructions
- Add roasted nuts to the bowl of a food processor. Pulse until nuts resemble coarse sand. Add the remaining ingredients, except for the vanilla casein/almond flour, and pulse until the mixture begins to stick together. If the mixture does not stick together, add a splash of water or oil until. If the mixture is too wet, add additional MCT powder, almond flour or vanilla casein.
- Using a small 1 tablespoon cookie scoop, divide the batter into 12-14 truffles. Place the truffles on a sheet of parchment paper and place them in the fridge for about 20-30 minutes to firm slighty. Next, take each truffle and roll it between your palm to form a nice tight truffle shape. Return the truffles to the fridge.
- If desired, make the cream cheese icing and dollop the icing over each truffle. Keep truffles in the fridge.
