Ingredients for Copycat Brick Bars
- Cocoa butter - This is the main ingredient necessary to make these high fat protein bars. I highly suggest Wild Foods Cocoa Butter Waffers as they have the best taste in my opinion.
- MCT Powder - MCT powder (which stands for Medium-chain triglycerides) can be purchased online. I like to use either the plain or chocolate Now MCT Protein Powder with Whey
- Protein Powder - You are best to use a combination of protein powders for the best flavour and texture. I love using a combination of Magnum Quattro Milkshake series along with Nutricost Vanilla Casein.
- Baking Soda and Additional Sweetener - Adding some baking soda will help round out the flavour and then if needed, feel free to add additional sweetener for taste.
- Optional - To make these copycat Brick bars a little creamier than the original Brick bar, I like to add a little Organic Vegetable shortening or some unsweetened chocolate. If I am making a peanut butter chocolate copycat Brick bar, I will use a tablespoon of peanut butter along with some peanut butter protein powder.
Homemade Keto Bar Recipe Instructions
There are 2 ways in which you can make these high fat protein bars depending on whether you want your copycat Brick bars to be shelf stable or not.
Method 1 - Shelf Stable Copycat Brick Bar
- Take two glass bowls and add 66 grams of finely chopped cocoa butter to one and 22 grams of chopped cocoa butter to the second bowl.
- Heat the 66 grams of finely chopped cocoa butter in the microwave on high for 2-3 minutes or until the temperature of the liquid cocoa butter hits 120 degrees F.
- Pour the mixture over the 22 grams of cocoa butter and stir constantly, until the temperature lowers to 85 degrees F.
- Place this bowl back in the microwave and heat in 15-second intervals until the mixture registers 90.5 degrees F.
- Stir in the remaining ingredients and pour into molds
Method 2 - Quick Refrigerated High Fat Protein Bars
- In a large bowl, melt all the cocoa butter in the microwave until at least 75% has melted.
- Remove the cocoa butter from the microwave and stir until ALL the cocoa butter has melted.
- Add in the remaining ingredients and divide them evenly into the mold.
Easy Keto Protein Bar Variations
If you are attempting the copycat Brick bar recipe that is shelf stable, I do NOT suggest altering the recipe at all. However, if you are ok with an easy keto protein bar that is not shelf stable, have fun with this recipe are try these variations!
- Peanut butter - replace the organic palm shortening with peanut butter and use peanut butter flavoured protein powder
- Mint - use chocolate protein powder and add ⅛ teaspoon mint extract
- Cookie Dough - use vanilla protein powder, a splash of vanilla extract and 1 tablespoon of sugar-free chocolate chips.
If you modify the recipe, please note that the macros will be slightly altered.
Do I have to temper the cocoa butter?
Yes...and no. IF you want the bars to be shelf stable, you will need to temper the chocolate. However, if you do not mind that these bars will need to be stored in the fridge, then you do not need to temper the chocolate.
What does tempering chocolate mean?
Tempering involves the process of slowly heating and then cooling chocolate so that the fat molecules crystallize evenly, resulting in a smooth, shiny finish when the chocolate sets.
Can I substitute the type of protein powders in this recipe?
Yes. However, the bars may set up differently and you may need more or less of the liquid or dry ingredients.
What type of candy mold did you use for these fat fast bars?
I actually like to use silicon ice cube trays since I can easily divide the mixture into 10 "bricks" making each brick equal to 100 calories, with 9.8 grams of healthy fats in each bar with only 2.7 grams of protein and 1.1 grams of carbs!

Instructions
For Shelf-Stable Fat Fast Bars:

Notes
- you can replace 7 grams of the cocoa butter with palm shortening for a creamier bar. However, the melting point will be reduced.
- For a stronger chocolate flavour, use 52.2 g of cocoa butter and then add 34.8 g of 100% unsweetened chocolate baking bar and stir until it has melted.
