I have been making these for several months under the pretext of getting the recipe just right! Truth is, these keto peanut butter truffles were perfect from the first trial but I kept eating them before I got a chance to take the pictures! Here are just of few reasons why you will love these keto peanut butter marshmallow truffles:
Easy to make - All you have to more or less do is melt some peanut butter with some sugar-free syrup, stir in some collagen and sugar-free marshmallows, and then cover each keto truffle in some melted chocolate. You can either use my keto marshmallow recipe or buy some freeze-dried marshmallows from ChocZero.
Healthier - By adding a healthy dose of Naked Collagen Peptide powder to these keto peanut butter truffles, using sugar-free marshmallows as well as high fiber sugar-free syrup, each one of these truffles comes at 110 calories with over 9 grams of fiber and only a total of 4 grams of net carbs!
Cheaper - Buying any type of keto truffle will cost you about $1 per truffle. Making homemade sugar-free marshmallows and using all other store-bought ingredients will only cost you about $2 for the entire batch, or less than $0.17 each! Way cheaper and so much tastier!!!

Keto Peanut Butter Marshmallow Truffle Ingredients
One of the many great things about this recipe is how easily you can swap out ingredients and customize this keto truffle recipe to your liking.
- Peanut Butter -I use Member's Mark Natural peanut butter, but any type of nut or seed butter would also be great. I just recommend tasting the clusters to ensure that it's salted to your liking. You could also use coconut oil or palm oil. Using coconut oil, however, will require these keto chocolate macadamia caramel clusters to be refrigerated.
- Collagen Powder - I used Naked Collagen Powder. It is my favourite collagen powder since it is sourced from pasture-raised cows in Europe. It is odorless, and tasteless, unlike many other collagen powder products on the market!
- Sugar-Free Tapioca Fiber Syrup - KetoGoods makes an amazing Tapioca Fiber Syrup that is full of prebiotic fiber. If you can't order this product depending on where you live, I have also used sugar-free caramel syrup by ChocZero, Lakanto Maple Syrup as well as ChocZero honey.
- Sugar-free Marshmallows - You can make homemade sugar-free marshmallows and cut them into tiny pieces (this is easy to do if you freeze the sugar-free marshmallows first), or you can buy Freeze-dried or mini sugar-free marshmallows from ChocZero.
- Sugar-free Chocolate Chips. If you are going to cover these keto truffles with chocolate you will need to melt some sugar-free chocolate. You can use sugar-free white or regular chocolate. My favourite brand of sugar-free melting wafers is Bake Believe (as a side note, although I love their melting wafers, I do not care for their sugar-free chocolate or white chocolate chips)

Keto Truffle Recipe Step-by-Step Instructions
This no-bake keto truffle recipe comes together quickly in only 5 steps!
Melt the peanut butter and sugar-free syrup in a large bowl in the microwave until melted (about 1 minute). Whisk in the collagen powder and vanilla.
Fold in the marshmallows. Using a cookie scoop (or a tablespoon), divide the mixture into 16 bites and place the bites in the freezer to firm, about 15 minutes
Melt the chocolate and spoon the chocolate over each keto peanut butter truffle. Place in the fridge until the chocolate hardens.

Hint: Make sure to allow the peanut butter mixture to cool ever so slightly to avoid melting the marshmallows.
Can I replace the sugar-free marshmallows?
Yes! Peanuts, almonds, cashews, keto cereal, or keto granola will all work. You could also fold in sugar-free chocolate chips instead!
Can I make these keto truffles nut-free?
Yes. You can use sunflower seed butter or even coconut butter instead.
How can I make these keto truffles more gooey?
If you want to make these more gooey, you have several options. You can omit the collagen powder which will keep these clusters more liquid. You can also add more sugar-free syrup to increase the ratio of liquid to solids.
Do I have to make these in the shape of truffles?
No. You can easily spread the mixture into a lined 8 x 4-inch loaf pan and pour the chocolate over the top to create keto peanut butter marshmallow bars instead of truffles.
What can I use instead of collagen peptide powder?
f you do not have any collagen peptide powder, you can simply add a little of your favourite vanilla protein powder. Only add 1 tablespoon at a time as all protein powders will absorb varying amounts of liquids. You can also completely omit using any collagen or protein powder and these clusters will turn out a little more gooey but just as tasty!
Is collagen powder keto-friendly?
Yes. Naked Collagen powder contains ONLY protein and has zero carbs therefore making it a zero-carb keto-friendly food.

Ingredients
- ½ cup creamy natural peanut butter
- ¼ cup sugar-free tapioca fiber syrup*
- ¼ cup Naked Collagen Peptides
- ½ tsp vanilla extract
- ½ - 1 cup sugar-free marshmallows**
- 4 oz sugar-free chocolate chips
Instructions
- Melt the peanut butter and syrup in the microwave for 30 seconds, or until the peanut butter has melted. Remove the bowl from the microwave and stir in the collagen powder and vanilla until smooth. Allow to cool slightly so that the marshmallows do not melt.
- Add the chopped marshmallows to the bowl and stir until combined. Using a 1-tablespoon cookie scoop, scoop out the mixture and place each cluster onto a sheet lined with parchment or wax paper. Chill in the freezer for 15 minutes or longer.
- While the peanut butter marshmallow truffles are chilling, melt the chocolate in a small metal mixing bowl nested inside a small saucepan one-third full of water. Or, melt chocolate in the microwave using 15-30-second intervals, stirring in between.
- Remove the keto truffles from the freezer and spread (or dip) the melted chocolate over each cluster. Repeat with each tuffle. If any chocolate remains, place the chocolate in a small ziplock bag and snip the very tip of on of the corners. Drizzle any remaining chocolate over each truffle.
- Place the pan in the fridge until the chocolate hardens.
