I recently stumbled upon an old recipe book.
As I started flipping through the pages, I noticed one of the corners of the pages had been turned over. When I got t the page, it was a homemade marshmallow recipe that my Mum had made notes.
When I looked to see what the recipe called for, I knew immediately that this simple, easy and limited ingredient was the perfect recipe to recreate into a keto, sugar-free and low carb version.
And I am glad I did because I am absolutely in LOVE!!!
If you have never made marshmallows before, PLEASE do not be intimidated. Making marshmallows is probably one of the easiest things (just as easy if not easier as my Homemade Nut Butter recipe) to make and the taste is FAR superior to the store-bought version.
So hold my hand, follow the steps below and make your first batch of homemade marshmallows today!

Here are the ingredients for homemade marshmallows: Water, Allulose, Gelatin, Salt, Vanilla

How to make this Easy Keto Marshmallow Recipe:
Step 1:
- Assemble your ingredients and grease a loaf pan or any other size pan well with cooking spray or butter
- In the bowl of your stand mixer, add ¼ cup of water
- Mix ¼ cup of allulose with 2 tablespoon (which is equal to 2 packets) of Knox Gelatin
- Sprinkle the mixture over the water
- Set the bowl to the side
Step 2:
- In a 2 cup glass measuring cup, add ¼ cup of water and stir in ¾ cup of allulose and ¼ teaspoon of salt
- Microwave on high for 1 minute
- Stir and return the mixture to the microwave for an additional 1 minute or until the mixture boils for about 20 seconds straight (about 3 minutes in total)
Step 3:
- Turn the stand mixer on low to mix the gelatin in the water
- Carefully pour the allulose liquid down the sides of the bowl
- Once allulose has been all poured into the stand mixer, turn the stand mixer on high for 10 minutes
Step 4:
- Once the 10 minutes is up, add ⅛-1/4 teaspoon of any flavour extract and whisk for an additional 1 minute
- Pour the marshmallow mixture into a greased pan and smooth out the top
- Place in the fridge to cool and firm for a couple of hours or overnight
What is Allulose?
- also known as D-psicose, is technically classified as a rare sugar because it can naturally be found in just a few foods, such as kiwi, raisins and figs.
- chemically, it's similar to fructose, the type of natural sugar found in fruit.
- however, unlike fructose or other types of sugar, your body doesn’t process it the same way and therefore has no effect on blood sugar
- it is virtually calorie-free
- it has around 70% of the sweetness of regular table sugar whereas stevia is about 200 times sweeter than table sugar
- if you want to replace sugar with allulose, remember that for every 1 cup of sugar, you will use 1 ⅓ cup of allulose
- unlike other keto and low carb sweeteners, allulose does not crystalize when it cools making it great for certain desserts such as custards, pudding and marshmallows
Can I use another kind of sugar in this recipe?
The only other sugar I would suggest using is regular cane sugar. All other low carb sweeteners will crystalize when they cool which will make these marshmallows gritty.
The only other sweetener that may work is BochaSweet. BochaSweet is a zero-calorie sweetener derived from 100% kabocha that supposedly bakes, cooks, and tastes just like sugar.
I have not tried it as it is relatively expensive but if you do try this recipe with BochaSweet, please let me know how it turns out!
How do you store these Easy Keto Marshmallows?
You can store these marshmallows in the fridge or in an airtight container on the counter. Since I live in Florida, I have a tendency to put everything in my fridge as my house can get fairly warm.
You can place the marshmallows in the freezer as well. They do not harden and I actually like eating them directly from the freezer!
Can you coat the marshmallows?
If you want to coat the marshmallows, simply cut them into the desired size or shape and place them in a Ziploc bag or a large bowl. Sprinkle powdered sugar and toss the marshmallows in the coating.
You can use any powdered sweetener such as Lakanto Powdered Sweetener or Swerve.
I personally don't like the cooling effect that these powdered sugars have so I don't bother with coating them in powdered sweetener.
You could also coat them in unsweetened cocoa powder is you want a slight chocolate taste to the marshmallows.

Are these marshmallows good for making S'mores or roasting them over an open fire?
Unfortunately, these marshmallows do not melt well and do not burn on the outside like regular marshmallows when roasted.

Easy Keto Marshmallow Recipe

- Total Time: 10 minutes
- Yield: 10 servings 1x
Ingredients
- ½ cup water
- 1 cup allulose, divided
- 2 packets of gelatin (equals 2 tbsp)
- ¼ tsp salt
- 1 tbsp vanilla
Instructions
- In a stand mixer with the whisk attachment, add ¼ cup of water. Mix ¼ cup of allulose with gelatin. Sprinkle mixture over the water and set it to the side.
- In a large glass measuring cup (at least a 2 cup measuring cup), add ¼ cup water, ¾ cup allulose and salt. Microwave on high for 1 minute. Remove, stir and return for an additional 1 to 2 minutes, watching it constantly. Once mixture has boiled for about 20 seconds straight, it is ready (if you have a thermometer, you can check the liquid temperature which should be 220-230 degrees F).
- Start the stand mixer on low to incorporate the gelatin into the water. With the stand mixer running on low, carefully add the allulose liquid, allowing the liquid to dribble down the sides of the mixing bowl.
- Once all the allulose is in the mixing bowl, increase the speed to high and allow it to run for 10 minutes. Once the 10 minutes has passed, add any additional extracts and allow it to run for 1 additional minute. Pour marshmallow mixture into dish and smooth out the top. Place mixture in the fridge to solidify for 4 hours or longer.
- Using a spatula, loosen the edges of the marshmallow and flip onto a cutting board. Cut the marshmallow into pieces and either store it directly in the fridge or freezer or toss the pieces in some powdered sweetener before storing.

I made these today and they are just truly fantastic they taste so sweet perfect I've tried many kept marshmallow recipes for the last 5 years not much luck using honey stevia ANYWAY this is the ONE for me now THANK YOU I did not know what allulose was until I saw your recipe I ordered some from amazon I used the better life brand after doing some research I was thinking I could use this out of the mixer in a piping bag to pipe into the center of cupcakes to make twinkies or chocolate stuffed anything or frosting if I frost right away I will try this there are so MANY options very excited over here

My allulose is from FitLane and it does not say if it is powdered but it looks super fine. I think either would work but since it is your first time, I would go with the powdered form of allulose. Let me know how they turn out!
