Crustless Frangipane Recipe
After having Mr. Grumbles fall in love with my Frangipane Apple Tart, I knew that I would be making several other versions of frangipane in the future.
Super easy and only a handful of ingredients and only a couple of minutes to put together, frangipanes have quickly become one of my favourite desserts.
Recently, I ended up with too many beautiful strawberries that needed to be used up. Being too lazy to make a crust, I decided to try to create a crustless frangipane recipe...And it worked!
With or without a crust, this keto frangipane recipe is perfect any time of the year!
What is a Frangipane
Frangipane is of French origin. It is a simple combination of sugar, almond flour, butter and some all-purpose flour that is baked in a tart or pie crust.
It can be left plain or filled with fruits such as apple or pears.
These type of recipes only require minimal effort to turn a once carb-heavy dessert into a quick and easy keto frangipane recipe.
Why do I love Sugar-free Frangipane

- they can be made with sugar substitutes for sugar-free or keto versions
- they come together with VERY little effort
- they require only a handful of ingredients
- you can make your own regular crust or graham cracker crust or you can easily omit the crust!
- this recipe only requires 1 dish!!!
Keto Strawberry Almond Frangipane Ingredients
- Butter - You can use unsalted or salted butter. If you use salted butter, do not add any additional salt. Also, be weary of most butter these days. Many companies (including Costco!) have increased the water and decreased the fat in their butter recipes. The best butter today is either Pulgra, or KerryGold.
- Eggs - You will need 3 large eggs that are at room temperature.
- Almond flour - I use BlueDiamond Super-fine Almond flour
- Sweetener - My all-time FAVOURITE sweetener these days that I believe yield consistent desserts is WholeEarth Allulose Baking Blend. If you use an allulose-based sweetener, just be aware that you will have to cover your baked goods while in the oven as allulose browns quicker than other keto sweeteners.
- Vanilla, Almond Extract and Salt - These flavours create the traditional frangipane flavour.
- Sliced Almonds - Sliced almonds are the topper used for this keto almond cake but if you do not have any, you can simply omit this ingredient.
Keto Almond Cake Instructions
This recipe comes together very quickly and even quicker if you do not use a crust!
Step 1 - Prepare the pan and Strawberries
- If you are using a crust, prepare your crust and lightly bake it if necessary. Let the crust cool for at least 10 minutes.
- If you are not making a crust, prepare a springform pan by placing a piece of parchment paper on the bottom of the pan and spraying the pan well.
- Chop the strawberries and place them in a bowl with a splash of lemon juice. Stir and let them sit.
Step 2 - Cream the butter
- Place the butter in a medium-size microwave-safe bowl and cover with a damp paper towel. Cook on high power for 60-90 seconds or until the butter is melted.
- Allow the melted butter to cool for 5 minutes then add the sweetneer and whisk until incorporated. The mixture will be a little grainy at this point.
Step 3 - Add the remaining ingredients
- Add the eggs, one at a time, whisking well after each addition. Add the vanilla and almond extract and the salt. Stir to incorporate.
- Next, add the almond flour and stir, until well mixed.
- Lastly, fold in the strawberries
Step 4 - Bake
- Transfer the mixture to the pie shell or springform pan and spread it to an even layer.
- Sprinkle the almonds evenly over the top.
- Bake on a baking sheet pan for 20-25 minutes OR until the top is a pretty golden brown.
- Then cover lightly with foil and bake for another 10-20 minutes for a total of 30-45 minutes - this depends on whether you are using a crust or not as the crust will take longer to bake.
- The frangipane should no longer be wobbly in the center when given a gentle shake.
What types of keto crust can you use?
For Gluten-free and Keto Options:
- The Best Almond Flour Pie and Tart Crust - this crust should be baked in the oven for about 10 minutes prior to adding the keto strawberry frangipane
- Easy Graham Cracker Crust (Gluten-Free, Keto) - this crust should be baked in the oven for about 10 minutes prior to adding the keto strawberry frangipane
For Lower Carb Options WITH gluten:
- Diamond Nut Crusts (either Walnut or Pecan) - these crusts do NOT need to be baked first but PLEASE be aware that although they are lower in carbs than most store-bought crusts, they DO CONTAIN WHEAT
For Crusts containing gluten:
- Pillsbury Refrigerated Pie Crust - this crust is not low in carbs and does contain wheat. It should also be baked for about 10 minutes prior to adding the frangipane mixture to the crust
- Honey Maid Graham Cracker Crust
How to Store Sugar-Free Frangipane
You could probably cover it and leave it at room temperature for up to 24 hours. Any longer and I would advise storing it in the fridge.
Frangipane freezes beautifully so don't hesitate to wrap half of it up in cling wrap and store it in the freezer for up to a month.
Tips for Keto Frangipane Recipe
- if you don't have any almond flour, you can make your own by simply placing almonds in a food processor until they are ground down to a fine powder
- I suggest using "fine" or "superfine" almond flour (I use the brand from Costco called Kirkland Superfine Blanched Almond Flour)
- Feel free to use a mixture of berries but do not exceed much more than 6 oz as it will make the frangipane too moist
- Feel free to add or reduce the quantity of sweetener in this recipe to suit your taste
- You can easily make this a day ahead of time and store it in the fridge. Allow it to come to room temperature before serving
- Feel free to quickly heat the frangipane in the microwave for 15-20 seconds if you prefer warm desserts
- Drizzle the frangipane with sugar-free strawberry sauce, chocolate fudge sauce or top it with some whipped cream.

Ingredients
- Optional - 1 pie crust
- 6 oz strawberries, diced with a splash of lemon juice
- 1 (115g ) stick unsalted butter, room temperature
- 3 eggs
- 1 ½ cup almond flour
- ⅔-1 cup sweetener (depending on how sweet you like your cake)
- 1 tsp vanilla extract
- ½ tsp almond extract
- ¼ tsp kosher salt
- ¼ cup sliced almonds
Instructions
- Preheat the oven to 350 degrees F. and line a sheet pan with aluminum foil.
- If using a crust, bake pie crust for 10 minutes and set aside. Omit this step if not using a crust and instead, line a 8 0r 9-inch springform pan with parchment paper on the bottom and spray the pan well with cooking spray.
- Chop strawberries and place them in a bowl with a little lemon juice. Stir and set the bowl to the side.
- Place the butter in a medium-size microwave-safe bowl and cover a damp paper towel. Cook on high power for 60-90 seconds or until the butter is melted.

Bake on the prepared sheet pan for 20-25 minutes OR until the top is beginning to turn a golden brown. Then cover lightly with foil and bake for another 10-20 minutes for a total of 30-45 minutes (the crustless frangipane will most likely take less time than the one with a crust). The frangipane should no longer be wobbly in the center when given a gentle shake.
