This was inspired by my Easy Keto Blueberry Pie Filling which was so easy and also so delicious that I just knew I had to try different types of berries!
Use this keto strawberry sauce on top of Keto Belgian Waffles, drizzled over Almond Flour Crepes stuffed with Salted Peanut Butter Dip or simply mix some in with some Keto Stabilized Whipped Cream for a quick and easy 2-ingredient easy keto dessert.
Keto Strawberry Sauce
This is my favourite keto strawberry sauce recipe. I use this sugar-free strawberry sauce recipe for just about everything you can imagine – I may actually be guilty of eating this by the spoonful directly from the fridge!
We love it on all sorts of easy keto dessert recipes. And, since this one is not only delicious and takes only 5 minutes to make, I can easily whip it up on a Sunday morning to top our waffles for an extra special treat!
This keto strawberry sauce can actually be used to replace the blueberries in my Keto Blueberry Blondies as well as these Keto Blueberry White Chocolate Chip Cookies. You can also use this sugar-free strawberry sauce and make my Easy Blueberry Greek Yogurt Tart and replace the blueberries with a 5-minute keto strawberry sauce instead!
Making Homemade Keto Strawberry Sauce
This easy keto strawberry recipe is so simple!
If you’ve never made a sugar-free strawberry sauce from scratch before, you are in the right place. I am going to walk you through the whole process. Strawberries shine in this sugar-free sauce which is such a versatile sauce.
The keto strawberry sauce is lightly sweetened with just the right amount of sweetener. And then, a little splash of lemon juice gives it the brightness to lighten any day...I just absolutely love it so much that you can easily find me stealing a spoonful of it right from the jar in our fridge!
When strawberries are in season, what better to do with them than make a sauce that just screams summer!
The other day, I picked up pints of fresh strawberries for only $1! Of course, at that price, I had to pick up 5!
And since strawberries are lower in carbs than most other fruit and are also very healthy, I did not feel the least bit guilty.
Strawberries are potent little packages that help to protect your heart, increase HDL (good) cholesterol, lower your blood pressure, and guard against cancer. Packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols, strawberries are a sodium-free, fat-free, cholesterol-free, low-calorie food.
Plus, since an entire cup of strawberries has only 49 calories and 9 grams of net carbs, they are not only super healthy but also one of the fruits that can be eaten on a keto diet.
Keto Strawberry Sauce Ingredients
Let’s talk about the ingredients first. Here are the ingredients you will need to make this 5-Minute keto recipe (the full recipe is below):
Strawberries - You can use either fresh (my preferred option) or frozen. Frozen strawberries may release more water so you may need to cook them slightly longer.
Sweetener - I used allulose for this recipe since I did not want this easy keto strawberry sauce to crystalize when stored in the fridge. Keto recipes that require refrigeration do better with allulose as erythritol-based sweeteners, such as Lakanto, will crystalize a little as they cool. However, if you plan on using this in an easy keto dessert recipe that does not require refrigeration, feel free to use any sugar substitute. Xanthan Gum - Xanthan gum is very popular when it comes to gluten-free and keto recipes. Xantham gum is a thickener that creates the "thick and gooey" factor that typically recipes get from either adding gluten or cornstarch. You are going to stir the xantham gum together with the sweetener so that the xanthan gum will dissolve well and not form a "clump".
Lemon Juice - The acid in the lemon juice balances the sweetness of the fruit. The lemon juice also helps to enhance and bring out the fruit's natural flavour. When I first tasted the sugar-free strawberry sauce, it tasted a little flat. Once I added the juice from a single lemon, this keto strawberry recipe went from good to spectacular!
Optional Ingredient - Butter - Adding butter at the end makes this sauce super shiny and adds just a touch of creaminess to the sauce. Depending on how I use this sugar-free strawberry sauce, I sometimes add butter and sometimes I don't!
Instructions
It’s super easy to make homemade strawberry sauce and since it tastes so good, I always some in my fridge to add to my waffles, use it to top some keto yogurt or drizzle it over some almond sponge cake!
It tastes much better than any store-bought version and has way fewer carbs!
Although the lemon juice in the recipe isn’t required for the sauce to thicken, I think that it does brighten the flavour nicely. (I highly recommend including it!)
Everything cooks together in a saucepan for just a few minutes until it is nice and thick and the fruit does a great job at giving it a gorgeous colour.
This easy keto dessert recipe is as easy as 1-2-3!
- In a heavy, medium saucepan, whisk together the xantham gum and sweetener until there are no xantham lumps.
- Add the chopped strawberries and lemon juice. Cook over medium heat, stirring frequently until thick. If you are using frozen strawberries, this could take anywhere between 3-5 minutes. Stir in any additional ingredients (see variations and tips at the bottom of this post) if you are using these ingredients.
- Remove from heat and cool. Use as desired. To store the easy keto strawberry sauce, place it in a tightly covered jar in the fridge for one week.
The Best Strawberries to Use
Fresh, in-season sweet strawberries from a local source are the best to use for this sauce. However, buying organic strawberries can be quite costly so feel free to use frozen strawberries instead. Frozen strawberries are typically flash-frozen when the strawberries are at their peak in terms of flavour so don't hesitate to use frozen berries instead.
The only difference is that the frozen strawberries will release more water and will take a longer time to break down. You can also thaw the strawberries first at room temperature instead or quickly thaw them in the microwave.
5-Minute Keto Recipe Substitutions
One of the best things about this easy keto dessert is that you can substitute strawberries with any type of fruit you have available. Also, feel free to use a mixture of berries such as blackberries and raspberries for a mixed berry sauce.
Not looking to make this dessert sauce sugar-free? No problem! You can easily replace the allulose with any type of sugar.
f you don't have all the ingredients on hand, there are some swaps you can make for this easy strawberry sauce.
- Swap the xanthan gum for about 1-2 tablespoons of chia seeds. The chia seeds will create a gelatin texture but you will have to wait for a couple of hours before this happens so I suggest starting with only 1 tablespoon and adding more chia seeds if needed after about 2 hours.
- Swap half the strawberries for another berry such as blackberries or raspberries
- If you don't have fresh lemons, use bottled lemon juice
Variations and Tips
Although this recipe only requires 4 basic ingredients, you can add some additional ingredients or modifications to the recipe to suit your taste!
Water - If your sauce is too thick for your liking, simply add an additional tablespoon of water at a time until the desired consistency is reached.
Cinnamon and Salt - Both cinnamon and salt can help to compliment the strawberry flavour as well as bring out the natural fruity taste. These ingredients are optional so feel free to omit them if you don't have any on hand.
Butter — Adding just a tiny bit of butter makes the filling shiny and extra delicious on top.
Vanilla or Balsamic Vinegar - The flavours of either vanilla or balsamic vinegar go really well with strawberries so feel free to give this variation a try!
Lastly, if you want a less "chunky" sauce, simply pour the sauce in a high-speed blender or use an immersion blender, and puree the sauce until it is smooth.
Storage
Store the keto strawberry sauce in the fridge in an airtight jar for up to a week. You can also easily freeze the sauce for up to 3 months.
Top tip
I like to freeze this easy keto dessert sauce in ice cube trays. Once frozen, pop them out of the tray and place them in a freezer bag. Then, when you want to top your waffles or your next keto dessert or yogurt with some strawberry sauce, simply place a single frozen strawberry sauce ice cube in a small bowl until it thaws.

5-Minute Keto Strawberry Sauce

Ingredients
- 1 lb Strawberries, rinsed, hulled and thickly sliced
- ⅓ cup allulose (or another sweetener)
- 1 tablespoon lemon juice, from ½ Lemon
- ¼ tsp xantham gum
Instructions
- In a medium saucepan, combine sliced strawberries, ⅓ cup sugar and 1 tablespoon lemon juice. Place over medium heat and bring to a boil, stirring occasionally. Strawberries will release juice without any mashing required.
- Reduce the heat and simmer for about 5-10 minutes or until the strawberries begin to break down. Whisk in xantham gum and boil for 1 minute. Keep in mind sauce will thicken up slightly as it cools and even more with refrigeration.
