Keto Strawberry Almond Frangipane - with or without a crust

This Keto Strawberry Almond Frangipane Cake recipe is so easy you have to give it a try!  Delicious almond frangipane studded with diced strawberries served with or without a crunchy sugar-free graham cracker crust is the ultimate spring and summer dessert.  Only a handful of ingredients are needed for this delectable sugar-free frangipane strawberry dessert.

Ingredients

  • Optional - 1 pie crust
  • 6 oz strawberries, diced with a splash of lemon juice
  • 1 (115g ) stick unsalted butter, room temperature
  • 3 eggs
  • 1 1/2 cup almond flour
  • 2/3-1 cup sweetener (depending on how sweet you like your cake)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp kosher salt
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350 degrees F. and line a sheet pan with aluminum foil.
  2. If using a crust, bake pie crust for 10 minutes and set aside.  Omit this step if not using a crust and instead, line a 8 0r 9-inch springform pan with parchment paper on the bottom and spray the pan well with cooking spray.
  3. Chop strawberries and place them in a bowl with a little lemon juice.  Stir and set the bowl to the side.
  4. Place the butter in a medium-size microwave-safe bowl and cover a damp paper towel. Cook on high power for 60-90 seconds or until the butter is melted.
  5. Allow the melted butter to cool for 5 minutes then add the sweetener and whisk until incorporated. The mixture will be a little grainy at this point.
  6. Add the eggs, one at a time, whisking well after each addition. Add the vanilla and almond extracts and the salt. Stir to incorporate.   Add the almond flour and stir until fully incorporated.
  7. Lastly, fold the strawberries into the batter
  8. Transfer the mixture to the pie/tart shell or the springform pan and spread it to an even layer.
  9. Sprinkle the almonds evenly over the top.

     

  10. Bake on the prepared sheet pan for 20-25 minutes OR until the top is beginning to turn a golden brown. Then cover lightly with foil and bake for another 10-20 minutes for a total of 30-45 minutes (the crustless frangipane will most likely take less time than the one with a crust). The frangipane should no longer be wobbly in the center when given a gentle shake.
