Carnivore Cuban Casserole
This recipe was created for the sheer fact that there are only 2 (Mr. Grumbles and I) living in our house.
Since I love to cook, I am constantly trying to create healthy recipes that are perfect for busy people.
The only problem is that sometimes, we end up with too much food!
I mean, let's face it, who wants to make pulled pork for 2 people. Would it even be worth the time?
Keeping that in mind, most of my recipes freeze really well so that you can make a larger batch and then pull out leftovers when the week gets too busy to cook.
Knowing that I had some leftover pulled pork in my freezer, I started to think about different ways of creating a healthy, nutritious, easy one-pan meal.
I have also been trying to come up with different recipes that would be counted as "carnivore". Although this recipe would not be considered pure "Lion's Diet" since it contains dairy ingredients, it can definitely fall under the "carnivore diet", especially if you omit the dill pickles.

Keto Cuban Casserole Ingredients
Here are the ingredients you will need to make this easy keto pork casserole.
- Pulled pork - You will want to use pulled pork that does not contain any sauce.
- Ham - You can use leftover ham or deli ham
- Cheese - you can use Swiss cheese or any other cheese
- Pickles - Omit this ingredient for a carnivore diet
- Mayo - You can use this Avocado Oil Mayonnaise or this Easy Homemade Keto Carnivore Bacon Mayo Recipe
- Heavy Cream
- Mustard

How to Make this Carnivore Casserole
Here are the step-by-step directions along with some pictures to help guide you!
Step 1 - Sauce the pork
- Combine all the sauce ingredients and stir to incorporate. Pour over the pork and stir to combine.

Step 2 - Layer the carnivore casserole
- In a large skillet, add the pork then layer on the ham. Add some cheese and sprinkle some diced dill pickles over the top

Step 3 - Bake
- Place the skillet in the oven at 400 degrees F. for about 20 minutes or until the sauce begins to bubble around the edges.

What if I don't have an oven-proof skillet?
You can easily make this in a regular baking dish. Simply saute the cabbage in butter in a large pan on the stovetop until it begins to soften. Place the cabbage on the bottom of your baking dish and continue following the remaining steps in the recipe.
How can I make this Cuban Casserole into a Cuban Dip?
Although I have not tried this yet, I do plan on doing so in the near future. By simply doubling the liquid ingredient, using diced ham instead of deli slices, and eliminating the cabbage altogether, this Cuban Casserole becomes a quick and easy dip.

Healthy and Easy Cuban Casserole
This quick keto Cuban casserole is the perfect dish for using up leftover pulled pork and is really easy to make. Gluten-Free, Keto, and Carnivore friendly, this easy keto pork casserole recipe can fit any and all your dietary needs.

Ingredients
- 2-3 lbs cooked pulled pork
- 4-6 oz ham (diced or sliced)
- 2-4 oz shredded cheese
- 4-6 oz diced pickles
- ½ cup heavy cream
- ½ cup mayo
- 1-2 tablespoon mustard
- salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees F. Place leftover pulled pork in a medium-sized bowl.
- In a small bowl, whisk together the heavy cream, mayo and mustard. Taste and add additional mustard if you wish.
- Pour the sauce over the pork and toss to coat. Place the pork in a cast iron skillet and spread it along the bottom of the pan. Top with the ham and half the pickles. Add the cheese and the remaining pickles.
- Place the skillet in the oven for 15-20 minutes or until the edges just begin to bubble. Remove and enjoy!
