This quick keto Cuban casserole is the perfect dish for using up leftover pulled pork and is really easy to make.  Gluten-Free, Keto, and Carnivore friendly, this easy keto pork casserole recipe can fit any and all your dietary needs.

Ingredients

  • 2-3 lbs cooked pulled pork
  • 4-6 oz ham (diced or sliced)
  • 2-4 oz shredded cheese
  • 4-6 oz diced pickles
  • 1/2 cup heavy cream
  • 1/2 cup mayo
  • 1-2 tbsp mustard
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F.  Place leftover pulled pork in a medium-sized bowl.
  2. In a small bowl, whisk together the heavy cream, mayo and mustard.  Taste and add additional mustard if you wish.
  3. Pour the sauce over the pork and toss to coat.  Place the pork in a cast iron skillet and spread it along the bottom of the pan.  Top with the ham and half the pickles.  Add the cheese and the remaining pickles.
  4. Place the skillet in the oven for 15-20 minutes or until the edges just begin to bubble.  Remove and enjoy!
