Keto Garlic Mushroom Chicken Ingredients
You only need some pretty simple ingredients to make this keto garlic chicken:

- Chicken - I have made this keto mushroom chicken using bone-in chicken breast, boneless chicken breast as well as boneless chicken thighs. All types of chicken work well but just be aware that each cut of chicken will require varying amounts of cooking time due to thickness and whether or not the chicken contains a bone.
- Mushrooms - I use button mushrooms as they are readily available. However, you can always use baby Portobello mushrooms or any other variety of fresh mushrooms.
- Garlic - You will need fresh garlic that you will crush. I LOVE using my Homemade Garlic Confit for a super decadent flavour.
- Seasonings - A combination of salt, pepper, smoked paprika, onion flakes and some additional dried garlic help to add some depth to this easy keto chicken recipe. I also sometimes like to add 1-2 tablespoons of soy sauce drizzled over the dish before placing it under the broiler for a little umami flavour.

Whole30 Garlic Mushroom Chicken Instructions

Combine all the dried spices in a bowl and stir to incorporate. Pat dry the chicken and season all sides with spice mix.

In a 9-inch ovenproof skillet, heat the oil on medium-high heat. While skillet it heating, mince the garlic. Add the chicken and cook for 2-3 minutes (boneless chicken) or 7-9 minutes (bone-in). Flip and cook the other side the same amount of time. Once the chicken is cooked, remove from the skillet and set aside.

In the same skillet, add sliced mushrooms. Sprinkle a little salt and pepper over the mushrooms and continue to cook 5-6 minutes or until mushrooms soften and begin to brown. Add in the garlic and cook until fragrant (about 1 minute). Remove skillet from heat. Add chicken to the skillet, skin side up if using skin-on chicken.

Drizzle with soy sauce if using. Place the ovenproof skillet on the top third oven rack and turn the oven on broil. Broil 3-5 minutes or until chicken is cooked to 165 degrees F.
Hint: Remove the skillet from the broiler and use a meat thermometer to check chicken at the 3 minute mark. Continue to broil until chicken is cooked throughout

What is the internal temperature of cooked chicken?
The internal temperature of cooked chicken should be 165 degrees F. However, I tend to only cook my chicken to 160 degrees F. before removing it and allowing it to sit for 5-10 minutes before serving. The chicken will continue to cook until it reaches 165 degrees F. if left untouched. This ensures a nice moist chicken.
How long does cooked chicken last?
Store this chicken in an airtight container and it will last 3-4 days in the fridge.
What size skillet should you use?
Any size skillet will work for this recipe. I used a 9-inch skillet for this recipe.
How long should I sauté boneless chicken?
For this recipe, since you are going to also brown the chicken under the broiler which will continue to cook the chicken, cook each side for 2-3 minutes for thin chicken breasts or thighs. If you have thick chicken, I suggest slicing the chicken in half lengthwise to create thinner pieces of chicken.
How long should I sauté bone-in chicken?
For bone-in chicken, sauté each side for 7-9 minutes. Make sure that you have allowed your bone-in chicken to warm at room temperature for at least 30 minutes before cooking.

Ingredients
- 2 chicken breasts or thighs, skin on, bone in or boneless skinless*
- 4 tbsp minced garlic
- 8 oz sliced mushrooms
- 2 tsp salt
- ⅛ tsp pepper
- 1 tbsp onion flakes
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tbsp avocado oil (or olive oil)
- Optional - 1-2 tablespoon coconut aminos (or soy sauce for keto)
Instructions
- Place oil in cast iron skillet and heat to medium heat.
- While skillet is heating, sprinkle salt, pepper, garlic powder, smoked paprika and onion flakes on both sides of chicken.
- When oil is hot, add chicken, skin side down to the skillet. Cook 7-9 minutes and turn chicken over. Cook another 7-9 minutes and then remove chicken from skillet and set aside.
- In the same skillet, add mushrooms. Cook mushrooms for 5-6 minutes on medium heat or until starting to brown. Add minced garlic to skillet and stir for 1-2 minutes or until garlic becomes fragrant.
- Remove skillet from heat and place chicken back in skillet with mushrooms and garlic. Place oven-proof skillet under the broiler on high for approximately 3-5 minutes or until skin on chicken begins to brown.
Notes
- *if using boneless, skinless chicken, cook for 2-3 minutes per side and broil for about 3 minutes
- Feel free to add or subtract the amount of garlic.
- Nutritional information is for bone-in, chicken thighs with skin
- If you are using large pieces of chicken, you may need to increase your cooking time. The internal temperature of cooked chicken should be 165 degrees F.
