This rich and creamy Sugar-Free Strawberry Fudge is perfect for summer! This easy keto pudding fudge just takes minutes to prepare and sets beautifully every time.

This keto strawberry fudge has all the creaminess you want from fudge with a light strawberry flavour that will keep you reaching for another piece and then another and then another.
Why this Strawberry Fudge Recipe works
Here are a few reasons why you are going to LOVE this keto strawberry fudge:
- Easy - You only need about 5 minutes of hands-on time and then a couple of hours in the fridge (be patient as I swear it is worth it!)
- Room Temperature, Fridge or Freezer - This keto instant pudding fudge can be stored at room temperature (yes...an actual keto fudge that does not have to be refrigerated!!!) in the fridge (slightly creamier) or freezer (slightly firmer) - either way, it is delicious!
- Taste - The perfect strawberry flavour with not too much sweetness. But if you want super sweet sugar-free strawberry fudge, feel free to add in some powdered sugar
- Texture - Think Strawberries and Cream in the shape of fudge! Ultra creamy, this keto pudding fudge tastes just like the old-fashion fudge you use to eat as a kid!

Sugar-free Strawberry Fudge Ingredients
Only 5 basic ingredients are needed to make this keto pudding fudge.
- White Chocolate - I like to use Bake Believe white melting wafers as I feel like they have the best sugar-free white chocolate taste on the market. You can buy these online or you can also find them at Walmart.
- Strawberry Pudding - I have ONLY tried this recipe using Simply Delish Strawberry Pudding. I am unsure how any other sugar-free or keto pudding mix would work.
- Butter - To get the keto instant pudding to turn into fudge, you will need to add some butter to the recipe. For this reason, this strawberry fudge recipe becomes firm at room temperature.
- Heavy Cream - Heavy cream adds the right amount of creaminess and texture. I would not use almond milk or any other unsweetened milk as these milk alternatives contain too much water.
- Optional Strawberry Extract and Freeze-dried Strawberries - To pack in some extra strawberry punch, feel free to add some strawberry extract as well as chopped freeze-dried strawberries. You can omit both of these ingredients but the strawberry flavour will be slightly less.
Keto Instant Pudding Fudge Instructions
This keto strawberry fudge is honestly one of the EASIEST recipes on my blog!

In a small bowl, heat the sugar-free white chocolate, butter, and heavy cream in the microwave for about 30 seconds.

Stir and return the bowl to the microwave for an additional 30 seconds. Once again, stir until all the ingredients have melted and are blended together.

Stir in the pudding mix, strawberry extract (if using), and freeze-dried strawberries (if using).

Spread the mixture into a small dish and smooth out the top. Add additional freeze-dried strawberries if desired.

Allow the keto pudding fudge to firm at room temperature or in the fridge. Cut into 28 pieces and enjoy!
Hint: This keto strawberry fudge sets up quickly so make sure that you have your fudge pan ready to go!
Keto Pudding Fudge Variations
- Chocolate strawberry fudge - you can add the sugar-free ganache topping from this No-Bake Keto Coffee Cheesecake Recipe or use sugar-free chocolate chips rather than white chocolate
- Pudding flavour - You can use pretty much any sugar-free pudding flavour - if you want an easy chocolate fudge, use chocolate pudding and semi-sweet chips
- Vanilla - Sometimes finding sugar-free vanilla pudding is easier than strawberry so simply use the vanilla pudding and add some strawberry extract. You could always stir in some vanilla protein powder, a little at a time, to get some vanilla flavour.
Storage
This keto fudge can be stored at room temperature for up to 5 days or in the fridge for 2 weeks.
It can also be stored in the freezer (again in an airtight container layered with wax paper) for about two months.
Eat the fudge directly from the freezer or let it sit at room temp to thaw a bit, whichever you prefer.

Can I use a different type of milk?
I have not tried different types of milk as this recipe always sets up beautifully with heavy cream. However, if you choose to try a different type of milk, I suggest you check out the Simply Delish Milk Mixing guide on their website as they have an entire section devoted to which kinds of milk work best with their product.
Where can I buy Simply Delish pudding?
You can buy Simply Delish directly from their website. You may also be able to find it at WholeFoods or Amazon.
Can I use sugar-free Jello pudding instead?
I do not believe that Jello has a sugar-free pudding that is strawberry flavoured. However, you could try using vanilla flavour instead and adding some strawberry extract to get the strawberry fudge flavour. Just be aware that most Jello sugar-free products contain Maltodextrin which can spike blood sugar levels and therefore could be bad for your keto diet.
Are freeze-dried strawberries keto-friendly?
Although strawberries are keto-friendly, freeze-dried strawberries have all their water removed and are therefore very concentrated strawberries. This means that each freeze-dried strawberry has too high of a sugar content to be considered keto-friendly. However, in this recipe, the freeze-dried strawberries are dispersed throughout 16 servings and therefore only add less than 1 gram of carb per piece of fudge.
Is this a traditional fudge recipe?
No. Traditional fudge is comprised of crystallized sugars. I personally do not like the grainy texture of traditional fudge. This sugar-free strawberry fudge is much creamier but still firm at room temperature.
Do I need a candy thermometer to make keto fudge?
No. This fudge only requires some basic melting in the microwave and then a quick stir. No thermometer is required!
How do I melt sugar-free chocolate in the microwave?
The best way to melt chocolate without causing it to seize is to add some fat to the chocolate before placing it in the microwave. Also, stirring every 15 seconds as it is melting will also keep it from seizing.
What is the best sugar-free white chocolate to use in this keto fudge recipe?
I love using sugar-free melting wafers that are designed to melt, as opposed to sugar-free chocolate chips. You can still use sugar-free chocolate chips but you will have to stir the chocolate every 15 seconds (instead of 30 seconds) and will need to stir much more than when using wafers.
Where can I buy sugar-free white melting wafers?
I order mine directly from the Bake Believe website. In my opinion, they are the best tasting as well as the most budget-friendly sugar-free melting chocolate.
Can I use Simply Delish Jel instead of instant pudding?
I found that the jel did not work as well as the pudding. There seemed to be quite a bit of separation of liquid when using the jel. However, if you only have the jel, then I suggest following the recipe and adding some strawberry or vanilla protein powder to absorb the liquid.

Ingredients
- 1 cup (4 ounces) sugar-free white melting wafers
- 3 tbsp butter, unsalted, room temperature
- 2 tbsp heavy cream, room temperature
- 1.7 oz Delish Strawberry Instant Pudding Mix
- Optional - freeze dried strawberries and strawberry extract
Instructions
- Line a small (4 x 6-inch) rectangular dish with parchment paper (or aluminum foil) and set aside. *You can also use a plastic reuseable sandwich container instead which will not need to be lined.
- Place the sugar-free white chocolate chips, butter and heavy cream in a medium microwave-safe bowl and heat in 15-second intervals, stirring well after each interval, until smooth.
- Add the strawberry pudding mix, strawberry extract and salt to the bowl. Quickly stir to combine, then pour into the prepared baking dish (do not OVER-STIR as the ingredients will separate).
- Leave at room temperature until set. Slice and serve.

- a little separation will occur when stirring the fudge - stirring the least amount as possible will minimize this.

I would only add a couple of drops of the extract as it can be VERY potent. As for the freeze dried strawberries, add as many as will fit into your macros. Freeze dried strawberries are high in carbs so just be aware of this!
