And making keto fudge is just one more easy keto holiday dessert recipe that is so much fun to make. It’s so easy to make and I haven’t met a person yet who doesn’t love fudge.
Today I’m sharing this amazing easy Keto Turtle Fudge recipe – so decadent, so rich, so wonderfully scrumptious, you’re going to want to share it with everyone you know.
One of the things I love about this sugar-free chocolate fudge recipe is that it’s a cooked fudge but does not require a candy thermometer. It’s impossible to mess up and tastes like the fudge you buy in candy stores. Maybe even better.
There’s a lot to love about this keto turtle fudge recipe but that ooey, gooey caramel layer is my favourite. Made using either my Easy Keto Microwave Caramel Sauce or a "cheater" peanut butter/maple/caramel mixture, the caramel layer adds just the right amount of salty-sweet to make this chocolate keto fudge absolutely delicious.

Ingredients
Chocolate - This chocolate keto fudge uses 3 different types of chocolate - a 4 oz unsweetened 100% cocoa bar, a tablespoon of unsweetened cocoa powder, as well as some sugar-free chocolate chips. You can use any type of sugar-free chocolate chip from either Lakanto, ChocZero or Thrive Market.
Half-and-half - Half-and-half helps to add some extra creaminess to this easy keto holiday dessert!
Sweetener - I used powdered allulose but you could also use confectioner Swerve. Since this sugar-free chocolate fudge is stored in the refrigerator, I do not suggest using any erythritol-based sweetener as it may crystalize as it cools which will make your fudge slightly grainy. Also, make sure that the sweeter you choose is a direct 1:1 substitution to regular sugar.
Nut Butter - To add some extra nuttiness and even more creaminess to this keto turtle fudge recipe, I added some peanut butter. Feel free to use almond butter, pecan butter or cashew butter.
Pecans - You can not possibly call this turtle fudge without using pecans! The pecans are chopped and stirred into the creamy caramel layer for a nice crunchy contrast.
Caramel sauce - You have 2 options when it comes to the caramel layer. You can either choose to make my Easy Keto Microwave Caramel Sauce or use my "cheater caramel" from my keto Copycat Payday bars which is a simple combination of ½ cup peanut butter (or almond or cashew butter) with ¼ cup maple syrup and ¼ teaspoon caramel extract.
Vanilla and Salt - These two added ingredients help to round out the sweetness of the keto fudge.

Instructions
Making this Keto Turtle Fudge recipe is really easy! Here are the step-by-step directions with pictures.

Stir together the half-and-half, peanut butter and vanilla. Heat in the microwave until steaming, about 2 minutes (stir at the 1-minute mark). Pour the mixture over the chocolate and let it sit for 2 minutes.

Add the powdered sweetener and unsweetened cocoa powder. Stir until all the chocolate has melted

Pour ⅔ of the mixture into the bottom of a parchment-lined (or silicon) loaf pan. Place the pan in the fridge to harden for about 30 minutes. Stir together the caramel and chopped pecans. Once the chocolate layer has hardened slightly, pour the caramel pecan mixture over the fudge.

Pour the remaining keto chocolate fudge over the caramel pecan layer and sprinkle with additional chopped pecans and sea salt, if desired.

Return the loaf pan to the fridge to harden for about 2-3 hours. Remove the fudge from the loaf pan and cut it into 18 squares.
Hint: I like to use a silicon loaf pan since it makes removing the chocolate keto fudge easy to remove and keeps the edges nice and smooth.
Substitutions
- White Chocolate - Use sugar-free white chocolate instead
- Nut-free - Replace the pecans with seeds and use seed butter instead of nut butter
- Dairy-free - Use coconut milk instead of the half and half and use dairy-free chocolate chips.

Keto Turtle Fudge Recipe Tips
- always line your pan with aluminum paper that has an overhang so that you can easily remove the fudge once it solidifies or use a silicon loaf pan
- this fudge recipe is best kept in the fridge or in the freezer
- store the fudge in an airtight container in the fridge for 30 days and in the freezer for up to 6 months
- the caramel will melt at room temperature so don't leave the fudge out for too long
- if the fudge is too solid to cut, simply place it at room temperature for 5 minutes or heat a knife by running it under hot water and then wipe it dry before slicing.
- you can also freeze the fudge to make clean lines for cutting and then store it in the fridge after it has been cut.

Ingredients
- 1 bar (4oz) 100 % unsweetened Cacao Baking bar, chopped
- ¾ cup half and half
- 1 cup sugar-free chocolate chips
- 1 tbsp unsweetened cocoa powder
- ¼ cup allulose (or powdered sweetener of choice)
- ¼ cup peanut butter or nut butter
- 1 tsp vanilla
- 1 cup chopped pecans
- 1 cup sugar-free caramel sauce
Instructions
- In a 4-cup microwave-safe measuring cup (or another dish) add the half and half and the peanut butter. Microwave on high for 1 minute or until hot. Pour the hot mixture over the chocolate and let it sit for 2 minutes. Stir until all the chocolate has melted. Stir in the sweetener, vanilla and unsweetened cocoa powder. If any chocolate has not melted, return the bowl to the microwave for 10 seconds and stir. Repeat the process until all the chocolate has fully melted.
- Pour about ½-2/3rd of the chocolate fudge into a silicon loaf pan lined or a loaf pan lined with aluminum foil. Place the fudge in the fridge for 30 minutes to harden slightly.
- Stir the caramel sauce into the chopped pecans. Once the fudge has hardened slightly, spread the caramel pecan mixture over the fudge. Top with remaining chocolate fudge and a sprinkling of chopped pecans and sea salt, if desired.
- Return the fudge to the fridge to set, about 2-4 hours or until firm. Cut into 18 squares.

Yes! This fudge does not contain any gluten or gluten-based products.
Can you freeze fudge?
Absolutely! I actually prefer to freeze my fudge and eat it directly from the freezer! To freeze fudge, place the fudge in a container that has been lined with parchment or wax paper and separate the layers of pieces of fudge with additional parchment or was paper. Fudge can be frozen for up to 6 months.
How long does fudge last?
This fudge can last in your fridge for up to a month and in your freezer for up to 6 months.
What can I do if my fudge is too soft?
If your fudge turns out too soft, simply place it in the freezer to harden. Then, you can place pieces in the fridge to slightly soften or at room temperature for about 30 minutes to soften.
How do you cut Homemade fudge?
To get really nice clean lines, place your fudge in the freezer for about 30 minutes. Then, use a knife to cut nice straight lines. If the fudge is too hard, run a knife under hot water to heat it and then dry it off before using it to slice the fudge.
