- 1 bar (4oz) 100 % unsweetened Cacao Baking bar, chopped
- 3/4 cup half and half
- 1 cup sugar-free chocolate chips
- 1 tbsp unsweetened cocoa powder
- 1/4 cup allulose (or powdered sweetener of choice)
- 1/4 cup peanut butter or nut butter
- 1 tsp vanilla
- 1 cup chopped pecans
- 1 cup sugar-free caramel sauce
Instructions
- In a 4-cup microwave-safe measuring cup (or another dish) add the half and half and the peanut butter. Microwave on high for 1 minute or until hot. Pour the hot mixture over the chocolate and let it sit for 2 minutes. Stir until all the chocolate has melted. Stir in the sweetener, vanilla and unsweetened cocoa powder. If any chocolate has not melted, return the bowl to the microwave for 10 seconds and stir. Repeat the process until all the chocolate has fully melted.
- Pour about 1/2-2/3rd of the chocolate fudge into a silicon loaf pan lined or a loaf pan lined with aluminum foil. Place the fudge in the fridge for 30 minutes to harden slightly.
- Stir the caramel sauce into the chopped pecans. Once the fudge has hardened slightly, spread the caramel pecan mixture over the fudge. Top with remaining chocolate fudge and a sprinkling of chopped pecans and sea salt, if desired.
- Return the fudge to the fridge to set, about 2-4 hours or until firm. Cut into 18 squares.
