
One of the hardest things to find when trying to eat clean is a jar of pickles or pickled vegetables. Most brands not only contain sugar, but also many different additives including food coloring!
Why is pickling good for you?
Pickling is a form of fermentation. When vegetables and fruits are fermented, healthy bacteria help to break down the hard-to-digest cellulose, as well as some of the natural sugar. In other words, pickling helps to digest vegetables while keeping their nutritional value at a peak.
This recipe came in handy when I was on my Whole30 journey as a quick way to reduce my cravings as well as to get some extra veggies into my diet.
How to make pickles or pickled vegetables
Pickling vegetables is as easy as 1-2-3! Although you have to wait at least 48 hours before you are able to eat these delicious crunchy treats, the entire hands-on time is under 5 minutes. Cut the veggies, boil the liquids and pour into jars and voila... you have additive and sugar-free pickles or pickled vegetables!
Ingredients
Here are 2 of the main ingredients along with their associated health benefits:
- Apple cider vinegar: the main substance in this vinegar is acetic acid. Acetic acid can kill harmful bacteria or prevent them from multiplying. It is also known to help lower blood sugar and is also believed to be prebiotic. Prebiotics are important as they are necessary food for a probiotic to eat.
- Cucumbers: contain magnesium, manganese and potassium. They also contain Vitamin K and C as well as antioxidants
The neat thing about this recipe is that it is highly customizable. Feel free to modify this recipe to incorporate any odds and ends of vegetables that you have leftover from other recipes.

Pickled Vegetables (Whole30, Low Carb, Mediterranean)
Quick, easy and simple! Make your own pickled vegetables and I guarantee you will not only save money but will be surprised at how much better they taste when made from scratch.
- Total Time: 48 hours 25 minutes
- Yield: 1 jar 1x
Ingredients
- ½ lb cucumber, evenly sliced
- ½ lb carrots, evenly sliced
- ½ lb red peppers or cauliflower, evenly sliced or chopped
- 1.5 cups water
- ½ cup apple cider vinegar
- 2 tbsp Pickled Spice Mix
- 1 tbsp coarse sea salt
Instructions
- Evenly slice vegetables and pack into clean mason jars. Leave ½ inch space at the top of the jar.
- Bring water, apple cider vinegar, Pickling Spice Mix and salt to a simmer and stir until salt dissolves
- Pour mixture into vegetable filled jars and let cool for 1 hour
- Place lid on jars and refrigerate for at least 48 hours.
- Store in the fridge for up to 1 month
Notes
- Feel free to add hot pepper flakes or some minced garlic to add a little more kick to the vegetables.
