Quick, easy and simple!  Make your own pickled vegetables and I guarantee you will not only save money but will be surprised at how much better they taste when made from scratch.

Ingredients

Units Scale
  • 1/2 lb cucumber, evenly sliced
  • 1/2 lb carrots, evenly sliced
  • 1/2 lb red peppers or cauliflower, evenly sliced or chopped
  • 1.5 cups water
  • 1/2 cup apple cider vinegar
  • 2 tbsp Pickled Spice Mix
  • 1 tbsp coarse sea salt

Instructions

  1. Evenly slice vegetables and pack into clean mason jars.  Leave 1/2 inch space at the top of the jar.
  2. Bring water, apple cider vinegar, Pickling Spice Mix and salt to a simmer and stir until salt dissolves
  3. Pour mixture into vegetable filled jars and let cool for 1 hour
  4. Place lid on jars and refrigerate for at least 48 hours.
  5. Store in the fridge for up to 1 month

Notes

  • Feel free to add hot pepper flakes or some minced garlic to add a little more kick to the vegetables.
  • Please note that the vegetables you choose will change the calculated nutritional information.
