Unfortunately, not much. What I did find out is that the zucchini is originally from Italy. In fact, the zucchini was formerly often referred to as "green Italian squash."

Since we all know that I love to cook and create healthy recipes but have a strong aversion to washing dishes, I decided to try and come up with a one-bowl chocolate zucchini bread.

How to make this One-Bowl Chocolate Zucchini Bread
Cut the ends off the zucchini and discard. Chop the zucchini into bite-size chunks and place it in the bowl of the food processor.
Turn the food processor on and run it until the zucchini is pureed. Add in the eggs and butter and turn it on for about 30 seconds.
Add the remaining ingredients pulsing between each addition until all ingredients have been incorporated.
Pour the mixture into a loaf pan.
Place the bread in the 350 degrees preheated oven for 50-60 minutes or until cooked. Let cool and remove from the loaf pan.
Substitutions for this One-Bowl Chocolate Zucchini Bread
Almond Flour: use regular AP (not gluten-free) flour but reduce the eggs to 2 instead of 3.
Coconut Flour: replace with almond flour or AP flour (not gluten-free)
Almond Butter: replace with regular butter (not dairy-free) or any other nut butter
Liquid Sweetener: use Lakanto Golden Maple syrup (keto), honey, maple syrup or regular sugar
