These gluten-free Nutella Swirl bars are so easy to make and delicious to eat. As a going off to college gift, my mum compiled for myself and each sister, our favourite recipes and placed them in our very first cookbook. Having been home to Canada recently, I became nostalgic for some of those delicious, home-cooked recipes.
I needed to create a gluten-free recipe since my dietary preferences have changed since college.
I try very hard to eliminate all wheat products as well as any prepackaged sauces so some of the recipes need to be adapted to my current lifestyle.
I decided to start remaking some of these recipes such as my Paleo Chocolate Almond Butter Banana Cake with Banana Almond Butter Frosting (Gluten-Free). The recipe directly following this one in my cookbook was a chocolate chip muffin recipe using yogurt instead of any oil.
If you don't know me very well, this may come to you as a surprise but I tend to wake up VERY early on Saturday mornings. Why do you ask? Honestly, I am just too excited for the weekend and to be able to cook and bake my heart out! Crazy, right? Well, crazy or not, this Saturday was no different and so I was up and out of bed by 3 a.m.
What about Mr. Grumbles? Well, he was fast asleep and so since he does not quite share my weekend cooking enthusiasm, I knew I had to try and be as quiet as possible!
So, by only using a whisk and a single bowl, I recreated a gluten-free bar version of one of my favourite muffin recipes.
How to make Gluten-Free Nutella Swirl Bars
Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper.
In a medium-size mixing bowl, add one egg and whisk for about 1 minute. Next, add the greek yogurt, vanilla and milk and whisk until fully incorporated.
Once the mixture has come together, add in all the dry ingredients, making sure to blend them in fully.
Pour the mixture into the baking dish and shake it gently to even it out.
In a glass measuring cup, place ¼ cup homemade Espresso Nutella (Sugar-Free, Keto) (or storebought Nutella) and heat it in the microwave for about 15 seconds or until it softens. If your Nutella is too thick, add a little coconut oil to the mixture. You are looking for a consistency that will allow you to pour the mixture over the bars.
In long strips, pour the mixture until there is no more Nutella. Run a chopstick, knife or metal straw, through the Nutella to create swirls throughout.
Place the bars in the oven to bake for 30 minutes or until fully cooked.
Substitutions for these Gluten-Free Nutella Swirl Bars:
Greek Yogurt - you can easily substitute this with sour cream, cashew yogurt or skyr
Almond Milk - substitute with regular milk
*Peanut flour - substitute with regular all-purpose flour or almond flour (although your bars will be a little denser)
Almond flour - substitute with regular all-purpose flour
Erythritol Sweetener - use sugar, monk fruit, stevia or honey
Lakanto Golden Sweetener - use brown sugar
* Peanut flour is also called powdered peanut butter. It can usually be found with the regular peanut butter. I use a brand called "PB Fit" which I have found at Sam's Club, Walmart as well as my local Publix grocery store.

Ingredients

- ⅛ cup Sweetener (sugar or sugar substitute)
- ⅛ cup Golden Lakanto (or brown sugar)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ¼ cup Homemade Espresso Nutella (Sugar-Free, Keto) (or store bought Nutella)
