Ingredients

  • 1 egg, beaten
  • 1 cup 0% Fat Free Plain Greek Yogurt
  • 1/2 cup almond milk (or regular milk)
  • 1 cup peanut flour
  • 1/2 cup almond flour
  • 1/8 cup Sweetener (sugar or sugar substitute)
  • 1/8 cup Golden Lakanto (or brown sugar)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup Homemade Espresso Nutella (Sugar-Free, Keto) (or store bought Nutella)

Instructions

  1. Preheat the oven to 350 degrees F.  Line an 8 x 8 baking pan with parchment paper.
  2. In a medium-size mixing bowl, add one egg and whisk for about 1 minute.  Next, add the greek yogurt, vanilla and milk and whisk until fully incorporated.
  3. Once the mixture has come together, add in all the dry ingredients, making sure to blend them in fully.
  4. Pour the mixture into the baking dish and shake it gently to even it out.
  5. In a glass measuring cup, place 1/4 cup homemade Espresso Nutella (Sugar-Free, Keto) (or storebought Nutella) and heat it in the microwave for about 15 seconds or until it softens.  If your Nutella is too thick, add a little coconut oil to the mixture.  You are looking for a consistency that will allow you to pour the mixture over the bars.
  6. In long strips, pour the mixture until there is no more Nutella.  Run a chopstick, knife or metal straw, through the Nutella to create swirls throughout.  Place the bars in the oven to bake for 30 minutes or until fully cooked.
