- 1 egg, beaten
- 1 cup 0% Fat Free Plain Greek Yogurt
- 1/2 cup almond milk (or regular milk)
- 1 cup peanut flour
- 1/2 cup almond flour
- 1/8 cup Sweetener (sugar or sugar substitute)
- 1/8 cup Golden Lakanto (or brown sugar)
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup Homemade Espresso Nutella (Sugar-Free, Keto) (or store bought Nutella)
Instructions
- Preheat the oven to 350 degrees F. Line an 8 x 8 baking pan with parchment paper.
- In a medium-size mixing bowl, add one egg and whisk for about 1 minute. Next, add the greek yogurt, vanilla and milk and whisk until fully incorporated.
- Once the mixture has come together, add in all the dry ingredients, making sure to blend them in fully.
- Pour the mixture into the baking dish and shake it gently to even it out.
- In a glass measuring cup, place 1/4 cup homemade Espresso Nutella (Sugar-Free, Keto) (or storebought Nutella) and heat it in the microwave for about 15 seconds or until it softens. If your Nutella is too thick, add a little coconut oil to the mixture. You are looking for a consistency that will allow you to pour the mixture over the bars.
- In long strips, pour the mixture until there is no more Nutella. Run a chopstick, knife or metal straw, through the Nutella to create swirls throughout. Place the bars in the oven to bake for 30 minutes or until fully cooked.
