I have been living a grain-free life for many years. It’s not like I have a chip on my shoulder when it comes to wheat. I just think in general, we eat too much of it. That's where this easy and delicious Whole30 Nut and Seed Bread comes into play. So easy to make as well as ridiculously healthy.
What's so bad about wheat?
Unfortunately, in today’s world, they have created what I like to refer to as “super wheat”. When wheat was first created, the amount of gluten (the protein component in the wheat grain) was not as high as it is today.
By genetically modifying the wheat plant, the food industry has been able to create a new wheat variety that has a very high level of gluten. This GMO plant means that less wheat is needed in order to create the same amount of bread.
That’s great news for the wheat industry but bad news for many people that can not tolerate the higher levels of gluten. Hence, the rise in a gluten intolerant population.
Although there are many “gluten free” bread products, most of these products have a lot of additives as well as added sugars. I don't know about you, but most gluten free products also do not taste very good and have a very limited nutritional value.
How to make Nordic Whole 30 Nut and Seed Bread
This nut and seed bread is not only simple to make, but is also high in nutritional value. The execution is simple: measure, stir, bake and enjoy!
Simply combine a mixture of nuts and seeds, stir in the olive oil, eggs and seasonings, pour into a loaf pan and bake. That's it!
You can also slice this bread and place it in the freezer. Pull out a slice or two whenever you have a craving for bread and top it with whatever you have as a spread.
This Whole30 Nut and Seed bread can also be toasted and served as a "cracker" for appetizers such as my Deliciously Easy Baked Ricotta.

Nut and Seed Bread (Whole30, LC, GF)
This recipe only requires some basic ingredients and comes together in minutes. Very satisfying and nutrient dense, this bread will keep you full for hours.
- Total Time: 1 hours 5 minutes
- Yield: 20 slices 1x
Ingredients
- 1 cup walnuts, chopped
- 1 cup almonds, slivered
- 1 cup sunflower seeds
- 1 cup pumpkin seeds
- 1 cup flax seeds
- 1 cup chia seeds
- 5 eggs
- ⅓ cup olive oil
- 1 tbsp rosemary, dried
- 1 tbsp garlic, minced
- 1 tsp salt
Instructions
- Preheat oven to 350 degrees F
- Line a 9 x 5in loaf pan with parchment paper.
- In a large mixing bowl, add all the ingredients and stir to combine thoroughly.
- Pour mixture into loaf pan and press down firmly to make sure that is tightly packed.
- Bake for 55-60 minutes
- Let cool and use parchment paper to remove loaf from pan.
- Slice and enjoy!
Notes
- feel free to substitute any of the nuts and seeds to suit your tastes as long as the total measure is 6 cups or 735 g.
- feel free to change herbs.
- spray the loaf pan before adding the parchment paper in order to help the parchment paper stick to the loaf pan.
