Easy Keto Cookie Bars
The other day, I was looking to make a nice easy recipe. I wanted something that could have a multitude of purposes, one that could fit under different meal "categories".
I wanted to make something that was not too sweet so that Mr. Grumbles could have it for breakfast, yet sweet enough that I could also serve it as a dessert. Finally, I wanted it to be portable so that it could be easily brought as a lunch snack.
Since shortbread is not too sweet, I decided that it would meet the criteria and could be used as a base. By using sugar-free dark chocolate and melting it to form an upper layer, I knew I had the perfect recipe. Finally, making the shortbread into a bar added the essential "easy" factor.

Only 5 ingredients for the keto shortbread bars and then 1 ingredient for the sugar-free chocolate drizzle, these cookie bars are a great treat. Plus, they are only just over 130 calories per bar and less than 0.5 grams of sugar in each!

Keto Shortbread Cookie Bar Instructions
I can almost guarantee you that this will be by far one of the easiest keto recipes you will ever make!
Step 1: Prepare Crust
- In a large bowl, combine all the crust ingredients.

- Once the ingredients are well incorporated, press the mixture firmly into a greased 8 x 4-inch loaf pan. (Tip - line the pan with parchment paper for easy removal)

- Place the dish in the preheated oven and bake for 10-15 minutes or until the crust is starting to brown.

Step 2: Prepare the sugar-free chocolate drizzle
- While the crust is baking, prepare the chocolate coating by placing your chopped chocolate in a large glass measuring cup.
- Place the measuring cup in the microwave in 30-second intervals, stirring after every 30 seconds, until the chocolate is melted.
Step 3: Assemble the cookie bars
- Once the shortbread has cooled slightly, drizzle the chocolate over the bars
- Place the bars in the fridge to harden.

These gluten-free, keto shortbread cookie bars are perfect for breakfast or as dessert. Not too sweet and easy to make, serve these with a cup of joe for the perfect keto breakfast treat.

Ingredients
Shortbread Ingredients:
- 1 cup almond flour
- 3 tbsp unsalted butter, softened
- ¼ cup sweetener (I use Swerve but feel free to use regular sugar)
- 30 grams vanilla whey protein powder (optional)
- Pinch of salt
Sugar-free Chocolate Drizzle (optional)
- 1-2 oz sugar-free chocolate chips
- 1 tsp coconut oil (optional - helps to prevent chocolate from seizing)
Instructions
- Preheat oven to 350 degrees. Line an 8 x 4-inch baking dish with parchment paper and set aside.
- Combine all the shortbread ingredients and mix well. Press firmly into baking dish and bake for 12-15 minutes or until edges are beginning to brown. Remove from oven and let cool slightly.
- In a glass measuring cup, combine the chocolate and coconut oil (if using). Microwave in 30-second intervals, stirring in between until the chocolate has melted. Drizzle over crust, smooth out the top and place in fridge to harden.
Notes
- Store in an airtight container for up to 1 week
- If you do not have a loaf pan, feel free to double the recipe and use an 8 x 8-inch baking dish
