I am sucker for anything that involves marshmallows. I love plain homemade sugar-free marshmallows, Chocolate Peanut Butter Marshmallow Bars, Lemon Bars with a mashmallow topping or anything else that contains the word "marshmallow"!
I especially like easy keto no bake recipes when they come together quickly and taste amazing. And these Keto Cereal S'mores bars are just that!
They take less than 10 minutes to make, and they’ve got plenty of ooey gooey s’mores goodness without all the carbs, sugar or gluten.

Ingredients
These keto s'mores require only 4 ingredients!
- Butter - I used unsalted butter for these keto cereal bars
- Marshmallows - You can use this Homemade Marshmallow recipe to make your own sugar-free marshmallows. You can also buy sugar-free Marshmallows from ChocZero
- Cereal - I used the keto Honey Graham Catalina Crunch to get the graham cracker flavour that is necessary for all things "s'more". You can actually find these at Costco, Publix or online.
- Chocolate chips - Can't have s'mores bars without chocolate! You can use any brand of sugar-free chocolate chip that you wish or use a broken sugar-free chocolate bar instead.

Instructions
Ready to make these S'mores bars?!!!
In a large microwave-safe bowl, melt the butter most of the way. Add 1 cup of the marshmallows, and continue to cook, stirring the mixture every 15 seconds until they have mostly melted.
Stir in 2 cups of cereal until the cereal is coated with melted marshmallow.
Add ½ cup of the remaining marshmallows (you should still have ½ cup left) and ¼ cup of the sugar-free chocolate chips. Stir to combine and press the mixture into a loaf pan. Sprinkle the top with remaining chocolate chips and marshmallows.
Place the loaf pan under the broil to brown the marshmallows, if desired.
Allow the S'more bars to cool slightly before cutting them into 8 squares.
Hint: Use the wrapper from the butter to press the keto s'mores firmly into the pan. You can also spray a piece of parchment or aluminum foil with cooking spray to help press the s'mores bars firmly into the pan.
Substitutions
This easy keto no bake recipe is amazing but you can always change a few ingredients to suit your dietary needs or to change the flavour!
- Cereal - instead of store-bought keto cereal, you could make homemade cereal like my 5-Minute Skillet Keto Granola.
- Plant-Based - use palm shortening or coconut oil to keep make these a keto plant-based recipe. If you use coconut oil, you may need to keep the bars refrigerated.
- Chocolate chips - use chopped chocolate bars or other flavoured baking chips such as white chocolate or butterscotch chips

Equipment
You will need a large microwave safe bowl, a spoon and a loaf pan for this recipe. There is no need to line your loaf pan with parchment paper as these s'mores bars will not stick. However, I did quickly spray my loaf pan with cooking spray just to be sure!
You can use glass, ceramic or silicon. Silicon is the easiest as you can simply pop the bars right out of the pan for slicing. If you do not have a loaf pan, you can make these bars in an 8 x 8 inch square pan but they will be thinner than what is pictured. You can always double the recipe for thicker bars.
Storage
These keto cereal s'mores bars can be stored at room temperature for a couple of days in an airtight container or in the fridge for up to 5 days. You can also freeze these bars for up to 3 months.
These keto cereal bars taste best at room temperature so make sure that you let them sit on the counter for at least 30 minutes if they are stored in the fridge or freezer.
Top tip
To keep the marshmallow from sticking to your spoon, simply spray your wooden spoon with a light coat of cooking spray!
Are cereal bars keto friendly?
Unfortunately, most cereal bars are not keto friendly as they contain too much sugar. However, using keto cereal reduces the carbs so you can make homemade cereal bars that are ok on a keto diet.
Can I use homemade keto marshmallows?
I have actually not tried making these with homemade marshmallows but if you do and they turn out, let me know!
How can I make these more gooey and less crunchy?
These bars as stated in the recipe have more of a crunchy texture. However, if you want, you can simply add melt more marshmallows for a less crunchy bar.

I just made these with a combination of 3 Wishes Smores cereal, Catalina Crunch Chocolate and Smart for LIfe Edamame Protein Puffs. I used Smallows, Lily's Hot Cocoa chocolate chips and Miyokos vegan butter. I did cut back on the butter and marshmallows a bit to get the calorie count I wanted, but it still came out tasty. I will be making more to freeze, maybe trying the Catalina Honey Graham flavor if I have some.
