This Keto Pizza Bites Appetizer Recipe is such an easy way to feed a hungry crowd with something quick and tasty. By simply making a simple keto and gluten-free batter and then adding all your favourite pizza ingredients, these Keto Pizza Bites come together in minutes!

OK, you guys... so I’m pretty excited about Sunday’s game.
Are you the type of people that actually watch the game, or hang out by the food table and eat?
I do a little of both . . and if the food is good, watch out.
But with most people serving chips and other super "carby" food, I wanted to come up with something that tastes just as good as all the carb-heavy appetizers that everyone is used to eating.
I saw and loved this “stuffed pizza bites” idea a while back and had been waiting and waiting to give it a try.
So, I finally whipped it up as an appetizer for Mr. Grumbles to try and boy did he ever love them!
From all my appetizers and dips recipe, such as my Buffalo Chicken Wing Dip (Whole30, Paleo, Keto), my Sausage Apple Cheese Dip (Gluten-Free, Keto) as well as my Olive Stuffed Meatball Appetizers, this recipe has quickly become one of our favourites.
I think you can have a balance when it comes to Super Bowl food and appetizers in general.
Isn't life all about balance?
A good balance of somewhat healthy and not-so-healthy.

WHAT INGREDIENTS DO YOU NEED TO MAKE THESE GLUTEN-FREE KETO PIZZA BITES
- almond flour and coconut flour
- baking powder, baking soda, and salt
- garlic powder and dried basil
- sour cream, cream cheese and shredded mozzarella
- egg
- diced pepperoni
- pizza sauce

HOW DO YOU MAKE THESE KETO PIZZA BITES?
- Preheat the oven to 400 degrees F.
- Grease or line a 24 cup muffin pan and set it aside.
- In a large bowl, combine all the ingredients except for the pizza sauce and stir to combine.
- Drop 1 tablespoon of the mixture into each muffin well.
- Using the tip of your finger create a little "well" in the center of the mixture.
- Drop 1 teaspoon of pizza sauce into the well
- Repeat to fill all 24 mini muffin wells

- Top each pizza bite with additional cheese, if desired
- Bake in the oven for 8-10minutes or until golden brown on the edges.

- Allow cooling before removing the pizza bites from the muffin well

DO I HAVE TO USE A MINI MUFFIN TIN TO MAKE THESE?
Although I love using my Structured Silicone Muffin pan (which makes it VERY easy to pop the pizza bites out), I liked the size of the mini muffin tin.
If you don't have a mini muffin tin, you can absolutely make these in a regular size muffin tray but you may need to increase the baking time just a bit.

CAN I MAKE THESE KETO PIZZA BITES AHEAD OF TIME?
Absolutely!
You can make these bites 1-2 days ahead of time and just simply reheat them in a 350-degree oven for about 5 minutes.
Or, you can make these and store them in the freezer for up to a month. To serve, simply preheat the oven to 350 degrees and place them in the oven for about 10 minutes.

WHAT TYPE OF DIFFERENT INGREDIENTS CAN I USE TO MAKE THESE KETO PIZZA BITES?
Swap out the fillings to your favourites or build a Create-Your-Own pizza bar and let everyone have fun!
- Mozzarella is the go-to for pizza because of its creamy, mild flavour and its ability to hold everything together, but don’t be shy about trying different kinds of cheese. Muenster is a great choice!
- Of course, bacon crumbles make everything even better, but how about a dollop of jalapeno popper dip, too?
- Add your favourite cooked meats and veggies including bell peppers, onions and black olives!
- Add some ham and a couple of pieces of diced pineapple for a Hawaiian twist.

Keto Pizza Bites are the perfect make-ahead gluten-free appetizer! Easy to make and delicious to eat, these appetizers have all the flavour of a full-size pizza in the size of a mouthful. Make these ahead of time so that you are all ready for your next gathering, big game or holiday get together.
- Total Time: 25 minutes
- Yield: 24 mini pizza bites 1x
Ingredients
- 1 cup almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- 1 tsp garlic powder
- ¼ tsp basil, dried
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup sour cream
- 1 egg
- 2 tbsp cream cheese, softened
- ½ cup mozzarella cheese, shredded
- ½ cup diced pepperoni
- 24 tsp pizza sauce
- OPTIONAL - additional shredded cheese for topping
Instructions
- Preheat the oven to 400 degrees F. Grease or line a 24 cup mini muffin pan and set it aside.
- In a large bowl, combine all the ingredients except for the pizza sauce and stir to combine. Drop 2 tablespoon of mixture into each muffin well. Using your fingers or the bottom of a glass, create a "well" in the center of the mixture. Drop 1 teaspoon of pizza sauce into each well.
- Bake in the oven for 10-12 minutes or until golden brown on the edges.
- Allow to cool before removing biscuits from muffin well. Serve with additional pizza sauce if desired.
