Ingredients
- ½ large onion, finely chopped
- 3 tbsp olive oil, divided
- ¼ cup grated Parmesan Cheese
- 3 large eggs, beaten
- 2 tbsp Italian Seasoning
- 2 cups grated zucchini, water removed
- ½ cup almond flour
- 1 tbsp whey protein powder
- 1 tsp baking powder
- ½ cup cheddar cheese, divided
Instructions
- In a small bowl, whisk together the almond flour, baking powder and whey protein powder and set it aside
- Add finely chopped onion, 2 tablespoon olive oil, Parmesan Cheese, beaten eggs and spices in a large bowl. Whisk to incorporate the ingredients. Stir in the zucchini, then the almond flour mixture and ¼ cup of the cheddar cheese
- Place the remaining 1 tablespoon of oil in an oven-proof skillet and heat on high medium-high heat until oil shimmers.
- Carefully pour the mixture into the oven-proof skillet or pie pan and sprinkle the remaining ¼ cup of cheddar cheese over the top.
