Nut-Free Banana Muffins
IF you have ANY bananas that need to be used up, then you must try this recipe.
Why?
Because I have made over 6 batches of these gluten-free chocolate chip banana oat muffins to come up with the perfect proportions of ingredients.
Soft and fluffy on the inside, just like a muffin is supposed to be, chewy in texture and delicious in taste, these muffins are so easy to make that you have just got to give them a try.
Why are these Gluten-Free Chocolate Chip Banana Oat Muffins so great?
- simple ingredients and not very many ingredients
- they turn out moist and fluffy EVERY time!
- you can dump all the ingredients into a single bowl, beat them together and the batter is ready to be baked!
- they are low in calories, oil-free, dairy-free, nut-free and gluten-free!

Why are there only 8 healthy nut-free muffins?
You may be asking yourself why I chose to make only 7 healthy banana muffins. Here are some of the reason:
- there are only Mr. Grumbles and myself eating these muffins - that means that we each get to have over 3 gluten-free chocolate chip banana oat muffins each!
- they are so easy to make that I can make a fresh batch at any time...even after a long day of work
- muffins are always freshest if eaten within a couple of days and since they are so easy to make, I truly don't mind making them
- I realize that I have yet to gain your trust so if the recipe is only for half a batch, I figure my readers have nothing to lose trying this recipe by an unknown food blogger:-)!
What if I want to make 12 Nut-free Banana Muffins?
No problem! All you have to do is double the recipe, feel each muffin well with a little extra batter and bake the muffins an additional 5 minutes!
What ingredient do I need to make these Easy Gluten-Free Chocolate Chip Banana Muffins?
- Oats - I like to use a combination of 1-minute quick oats and old-fashioned oats. If you only have old fashion oats, simply place 1 cut of the old fashion oats in a blender or food processor and process for 15-20 seconds to break the larger oats into smaller oats.
- Coconut flour - this helps to absorb some moisture and keep the cookies nice and fresh.
- Egg
- Banana - Make sure your banana is ripe. If not, add an additional splash of banana extract to bring out the banana flavour.
- Sweetener - You can use sugar-free sugar substitute or regular sugar
- Yogurt - Plain 0% Fat Greek Yogurt tends to work best.
- Chocolate chips - Sugar-free or regular.
- baking powder and baking soda
- salt
- vanilla

What is Marine Collagen?
Marine collagen is a type of collagen derived from the skin and scales of fish, and it's renowned for its high bioavailability—meaning it's absorbed more efficiently by the body compared to bovine or porcine collagen.
It's rich in Type I collagen, the most abundant type found in skin, hair, nails, bones, and connective tissues. As we age, our natural collagen production declines, leading to visible signs of aging and decreased joint function. Supplementing with marine collagen can help support skin elasticity, reduce wrinkles, strengthen hair and nails, and promote joint health.
But not all collagen supplements are created equal, which is exactly why I only use Naked Marine Collagen. It’s sourced exclusively from wild-caught, non-GMO fish in the North Atlantic—free from hormones, heavy metals, and unnecessary additives. What sets Naked apart is their transparency: the product contains only one ingredient—hydrolyzed marine collagen peptides—with no artificial sweeteners, flavors, or colors. It dissolves effortlessly into hot or cold liquids, making it easy to incorporate into any daily routine.
I trust Naked Marine Collagen because it's third-party tested, ensuring purity and potency with every batch. With so many supplement companies adding fillers or using questionable sourcing practices, it's refreshing to find a brand that’s truly clean and effective. I’ve noticed a significant difference in the texture of my skin and strength of my nails since switching to Naked—and it gives me peace of mind knowing exactly what I’m putting in my body.

How do you make these healthy Chocolate Chip Banana Muffins
- Preheat the oven to 350 degrees F. Grease or line muffin tins and set aside.
- In a medium size mixing bowl, beat together the banana, sweetener, yogurt and egg until fully combined (about 2 minutes)
- add the oats, coconut flour, cinnamon, vanilla and salt to the wet mixture and beat for 1 minute.
- add in baking powder and baking soda and beat for 30 seconds.
- stir in chocolate chips (if using) and divide mixture evenly among the muffin tins.
- bake for 20-28 minutes.
Why is the baking time not exact?
Making these healthy nut-free muffins are easy but the only tricky thing can be knowing when they are done. Depending on the material, size and thickness of the muffin wells, the muffins may vary in baking time. Start checking at the 20 minute mark and check every 5 minutes thereafter. IF the tops are beginning to brown, the muffins should be bake through.
Adjusting Macros for Healthy Banana Muffins
Since I am originally from Canada and have moved to the United States, I have quickly realized the difference in serving sizes.
If you prefer larger muffins and want to use them as a meal replacement, simply divide the muffins into 7.
However, if you are looking for fewer calories or a healthy snack, dividing the muffin mixture by 12 creates a smaller muffin and hence, fewer calories.
If you use a sugar substitute, Lily's Stevie-Sweetened Chocolate chips and divide the mixture by 12 muffin tins, each muffin only contains 80 calories.
If you divide the mixture into 8 muffin tins, one muffin is 135 calories.

What can I substitute certain ingredients to make these Gluten-Free Chocolate Chip Banana?
Egg - replace with 1 tablespoon of flax and 3 tablespoon of water
Greek Yogurt - replace with equal amounts of sour cream or coconut cream
Sugar - use any type of sugar including coconut sugar, erythrtitol or any sugar substitute
Oats - use oat flour, cassava flour or regular all-purpose flour
Troubleshooting muffins
I made these muffins a million times to finally get them just right. With that being said, I thought I would include some troubleshooting tips in case a muffin recipe does not turn out as well as you would like (I promise you that it will NOT happen with these muffins!)
Flat Dome
- too much liquid
- overfilling your cupcake wells
- adding too much baking soda or powder
Peaked Dome
- too little liquid
- over mixing
Dry Muffins
- over baking
- too high oven temperature
