Don't you need an egg to hold the Doritos together?
In this recipe, I am using both chia seeds and flax seeds as egg replacers.
When chia seeds and flax seeds are combined in water and allowed to sit for a couple of minutes, they produce a somewhat gelatinous material, similar to an egg.
If you don't have any chia seeds, you can try using an egg instead and add additional water to be able to create a "dough" consistency

Tips and Tricks for making the best these low carb Dortito tortilla chips
- try and roll them as thin as possible as well as equally thin so that they bake evenly
- rotate the baking sheet every so often to help bake them evenly
- watch them carefully after the 10-minute mark as they can burn
- use a dough scraper and push the edges inward to create even lines as well as to thicken the edges as they have a tendency to bake the fastest and therefore if they are thicker, they will not burn before the rest of the tortillas have baked
- spray the parchment paper or Silpat mats before rolling to help the keto tortillas from sticking
- only place one tray in the oven at a time to help with even baking
- do not add any additional seasoning on top...I tried it to see if I could make them look more "dorito-ish" and it did not work
- if you pull them out of the oven and you realize they are not as crispy as you would like, place them back in the oven (that has been turned off), crack open the door and let them dry out

Keto Copycat Nacho Doritos
After creating the most A-M-A-Z-I-N-G copycat Dorito seasoning, I knew I had to come up with a recipe to make easy keto copycat Doritos. With only a couple of ingredients and limited "hands-on" time, you can make these easy keto copycat Doritos at home.
- Total Time: 5 minutes
- Yield: 8 servings 1x
Ingredients
- 2 tbsp chia seeds
- 2 tbsp golden flax seeds
- ½ cup water
- 1 cup almond flour
- ¼ - ⅓ cup Dorito Seasoning
- 1 - 2 tablespoon chili powder
- 1 tsp salt
- 1 tbsp coconut flour (if mixture seems too sticky)
Instructions
- Combine the chia and flax seeds with the water. Stir to combine and set aside for 10 minutes.
- In a medium-size mixing bowl, add the almond flour, Dorito seasoning and salt. Whisk to combine.
- Add in the chia/flax mixture to the almond flour and stir to combine everything. Place mixture in the fridge for about 30 minutes.
- When ready to make the Doritos, preheat the oven to 375 degrees F.
- Divide the dough in half as I find it easier to get the chips as thin as possible.
- Take 2 pieces of parchment paper or Silpat mats and roll 1 section of the dough between the sheets to a thickness or about ⅛th inch. Score the rectangle into triangular shapes and place in the oven to bake for 8-12 minutes rotating the sheet at about the 5 minute mark.
- While the first tray is baking, repeat rolling and scoring the dough with the second half. When the first tray comes out of the oven, repeat the baking process for the second tray.
- Doritos are done when they begin to brown on the edges. Allow them to cool fully as they will continue to firm as they cool.
