This Easy 4-Ingredient Chorizo dip was so easy to make and absolutely delicious, that you would never guess that it was developed out of pure desperation. How could something so delicious be desperate as well? Well, a couple of weeks ago...
...Mr. Grumbles got a phone call, out of blue, from his best friend's son.
Sweet, right?
Well...yes and no. See, when the "kid" called, he said he wanted to stop by our house to say "hello" on his way to the beach. He also offered to take us out to lunch which was really kind and generous.
So, what's the problem? Well, we live near the beach that was rated the #1 beach in the USA by Dr. Beach.
With that being said, if you don't get to the beach by 9 a.m., parking is scarce. Also, being that it is still the "busy" time of year for our town, the restaurants would also be packed.
Knowing this dilemma, Mr. Grumbles kindly offered for him and his friend to stop over for some quick drinks and appetizers when they were done at the beach.
Now, are you starting to see the problem?
If you look in our fridge, any given day, the food is scarce. Since I make almost everything from scratch, having "quick" food on hand is not readily available in our house.
Is the problem getting clearer? So, with no readily available "appetizers", I had to come up with something quick.
Knowing that I had some leftover homemade chorizo in the freezer from my Chorizo Shrimp Skewers, I knew my appetizer would have to involve chorizo as the main ingredient.
Next, opening the cheese drawer, I noticed a package of cream cheese, Boursin and some shredded cheddar.
So, I decided to combine all the ingredients, cross my fingers and create a chorizo cheese dip.
Was the dip a hit?
Well, if an empty skillet is any indicator of approval, then I would definitely state that this 4-Ingredient Chorizo Dip was a success.
How to make 4-Ingredient Chorizo Dip
- brown your ground chorizo in a cast-iron skillet. If you don't have a cast-iron skillet, use any skillet that is oven-proof. As for the chorizo, you can either buy it at the store or follow my chorizo recipe.
- Once the chorizo has cooked, grab your block of cream cheese and the Boursin cheese and add it to the cast iron skillet with the chorizo. Stir to make sure that it is all well incorporated.
- Once everything is well combined, sprinkle some cheddar cheese over the skillet.
- Finally, place the entire skillet in the oven for 10-15 minutes or until the edges start to bubble. Turn the broiler on "high" for a couple of minutes (watching carefully) to brown the top.
Since Mr. Grumbles company arrived quite a bit later than expected (typical kids these days :-), this dip stayed warm due to the cast iron and was easy to quickly heat up when they did finally arrive.
Easy, delicious and perfect for those "last-minute-guests-who-don't-arrive-on-time"!
