This recipe was one of the easiest recipes to date. This Rosemary Parmesan Ricotta dish is great as either an appetizer or as a main meal. Simply combining ricotta, eggs, cheese and some spices, this Rosemary Parmesan Ricotta dish is simple yet elegant and sure to be a crowd-pleaser.
Although I served this Rosemary Parmesan Ricotta dish as an appetizer alongside my Almond Flax Seed Crackers, it could easily be turned into a main meal. Roast some asparagus or serve it with a side salad and you have instantly transformed it into a wonderful dinner.
The preparation took only 5 minutes using a simple handheld blender. All the ingredients are placed in 1 bowl so clean up is a snap!
How to make Rosemary Parmesan Ricotta
- Preheat the oven to 400 degrees F. Grease two oven-safe dishes (each dish should be able to contain 2 cups)
- In a medium-size mixing bowl, combine all the ingredients
- Beat ingredients on high for 1 minute
- Divide the mixture between 2 dishes and bake for 30 minutes
How to serve ricotta
- divide the mixture into 4-1 cup ramekin and serve it alongside some roasted vegetables as a main meal
- serve along with some crackers or carrot and celery sticks
- use it as a spread over a slice of Nut and Seed Bread
What if I don't have the right dish?
Any oven-proof dish will do. You could easily bake this an 8 x 8 square baking dish instead. If you do change the type of dish you are baking the ricotta in, you may need to modify the time required for baking. If you are using smaller dishes or a large 8 x 8 dish, bake between 15-20 minutes. If you are using a large dish (such as a 4 cup oven-proof dish), you may need to bake the ricotta for 30-40 minutes.
Can I make this dish ahead of time?
I have actually made this dish and allowed it to cool. Just before your company is about to arrive, simply pop the dish in the oven at 350 degrees F for 10 minutes or until it is heated. The taste and texture is the exact same.
What other flavour combinations can I use?
- use blue cheese with some hot sauce for a Buffalo wing flavour
- use goat cheese with ¼ cup of honey for a sweeter version
- use cheddar cheese with garlic for a garlic bread taste
- use mozzarella, feta and dill for a Mediterranean take
- use shredded cheddar with some chili powder for a Mexican flare

Ingredients
- 15 oz whole milk ricotta
- 2 eggs
- 2.5 oz shredded mozzarella (or any other cheese)
- 1 oz Parmesan
- ¼ cup green onions, sliced
- 1 tbsp chopped fresh rosemary (or 1 tsp dried rosemary)
- 1 tsp garlic powder
Instructions
- Preheat oven to 400 degrees F.
- Grease or spray a 2 2-cup baking dishes.
- In a medium bowl, combine all the ingredients. Beat for 1-2 minutes with a handheld mixer and pour into prepared baking dishes.
- Place in oven on middle rack and bake for 25-30 minutes or until edges start to brown.
