These Balsamic Beets and Boursin make the most festive side dish. Prepared in minutes, the hint of sweetness from the balsamic vinegar and roasted beets complements the saltiness of the Boursin cheese for the perfect side dish. Garnish with some sliced green onion and enjoy this dish in under 20 minutes.
I was recently at my sister's house in Quebec and was served the most amazing dish - goat cheese, walnuts, beets and balsamic vinegar.
I couldn't believe how delicious it was and yet how easy she said it was to put together.
So, you may be wondering why I didn't just make the same recipe?
Well, first off, it was not her own. She told me she had found it on the internet (you can find the original one here) and not wanting to copy anyone else, I knew I could not possibly post a "stolen" recipe
Secondly, Mr. Grumbles is not a huge fan of goat cheese. Although I absolutely adore it, he claims that it has a "goat" taste. After 15 years of marriage, I have come to learn that even though we are married, we still desire the right to our own opinion, whether I agree or not.
Finally, I have recently come to the realization that I believe part of my belly issues (you can read about them here, here and here 🙂 are due to a mild intolerance to nuts.
Keeping all those factors in mind, I decided to come up with a goat and nut-free version of this delicious dish!
What kind of beets can I use?
- Organic cooked beets (I bought mine at Costco but I have also seen them at almost all local grocery stores)
- Canned beets - make sure that you drain the liquid and check what shape you are buying as there are sliced and chopped beets
- Raw beets
How do I cook beets?
If you are using raw beets, simply wash them and rub them with some olive oil. Wrap each beet individually in some aluminum foil and place them in an oven preheated to 400 degrees F. for approximately 40-50 minutes, depending on the size of the beets. Let the beets cool and then using a paper towel, simply rub the beets and watch as their skin slides right off!

Can I prepare the Balsamic Beets and Boursin ahead of time?
Absolutely! The great thing about this dish is you can have it all prepped and ready to cook in under 10 minutes. Wrap the Balsamic Beets and Boursin dish with aluminum foil and place it in the fridge. When you are almost ready to eat, simply remove the foil and place it in the oven.
How do I store leftovers?
Place any leftovers (although I doubt there will be many!) in an airtight container for up to 5 days. Simply reheat them in the oven or toaster oven for 10 minutes or until heated through.
Tips and tricks
- Be very careful when preparing beets as the beet juice can stain easily. I typically work over or in the sink to make for easy cleanup.
- Save the beet juice in a container in the fridge. The juice is full of nutrients and can be added to your smoothies or into cookies, cakes or icing batter for a pink/red hue.
- Don't want to make a large serving size? Simply divide the recipe and bake your Balsamic Beets and Boursin at the same temperature for the same amount of time
- If you are preparing this dish ahead of time, either remove the dish from the fridge and let it come to room temperature before placing it in the oven or increase the baking time to 25-30 minutes or until the beets are heated.
- Can't find Boursin? Replace it with any other cheese such as goat, feta or even crumbled blue cheese
- Add walnuts or pecans for an extra crunch
- If you already have something in the oven at a different temperature, feel free to add the beets at the same time. If the temperature is less, you may need to add extra time to make sure that they are nice and warm
- Can you eat this dish cold? ABSOLUTELY!
How to make Balsamic Beets and Boursin
- chop or slice cooked beets into even sizes
- spread beets evenly in a baking dish
- sprinkle a little salt over beats and then pour 2-4 tablespoon of balsamic vinegar over the entire dish
- crumble one wheel of Boursin over the beets
- place in a 400 degree F. oven for 15-20 minutes
- serve warm

Ingredients
- 42.3 oz (1.2kg) cooked beets (about 16 small beets)
- 1 package (5.2 oz) Brousin Garlic and Fine Herbs
- 2-4 tablespoon balsamic vinegar
- ½ tsp salt
Instructions
- Preheat oven to 400 degrees F. Spray a 9 x 11 baking dish and set aside.
- Chop or slice beets evenly and place in dish. Sprinkle with salt and drizzle with olive oil. Crumble cheese over dish.
- Place dish in the oven for 15-20 minutes or until heated through.
