With Thanksgiving and Christmas right around the corner, I wanted to create a delicious yet simple stuffing recipe.
Can you imagine Thanksgiving or Christmas without stuffing or dressing? I most certainly can not.
A turkey without dressing is like a bee without a stinger, a camel without a hump or a cat without whiskers. Since I have started a journey of living a WholeLife (ie. following the Whole30 paradigm 80% of the time and allowing the odd addition of non-Whole30 ingredients 20% of the time), I knew that I had to come up with a Whole30 approved stuffing.
This stuffing comes together in minutes. Cook the sausage and as the sausage is cooking, chop up the vegetables. Once the sausage has cooked, add all the ingredients to the skillet and cook until the vegetables soften.
Once the vegetables have softened, add the vegetables to the sausage and mix thoroughly. Place the stuffing in a baking dish and bake for 30 minutes to help combine the flavors.

Ingredients
- 1 lb sausage (make sure it is Whole30 approved)
- 10 oz. celery, chopped
- 180 g onion (medium), chopped
- 8 oz mushrooms, chopped
- 12 oz riced cauliflower
- 400 g daikon radish, chopped
- 4 tbsp ghee
- 2 tbsp garlic, minced
- 2 tbsp poultry seasoning
- 1 tbsp sage, dried
- 1 tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 350 degrees F. Grease a 9 x 11 baking dish.
- Heat a large skillet on medium heat and add ground sausage. Cook thoroughly. Once cooked, remove sausage with a slotted spoon and place in a large bowl. Leave the sausage drippings in the skillet.
- Add vegetables, butter and seasoning to the skillet. Continue to cook until vegetables soften (about 20-30 minutes)
- Once vegetables have softened, remove from heat and add to sausage mixture. Stir until combined and place in baking dish.
- Cook in oven uncovered for approximately 30 minutes to allow flavors to combine.
Notes
- Feel free to swap out vegetables. Carrots and parsnips work well in this recipe
