Simple...Yes.
Only 2 ingredients...Yup.
Delicious...ABSOLUTELY!
This recipe could never have been possible a year ago.
Why do you ask?
Well, sugar-free white chocolate was not available. But now it is!
Knowing quite a few people that are all about white chocolate instead of other chocolates, I wanted to create a fudge recipe with them in mind. This white chocolate fudge recipe was adapted from my simple Peanut Butter Fudge recipe and it is so so so easy to make. I love making it and keeping some stashed in my freezer for whenever I get a hankering for something sweet.
Wanting to keep this recipe super simple, I decided to eliminate the standard heavy cream based fudge and make this a "no-cook" white chocolate fudge.
Sugar-Free White Chocolate
ChocZero and Lily's White Chocolate Bars both produce a delicious, sugar-free white chocolate chip that tastes just as good as Ghiradelli. These white chocolate chips are made from cocoa butter from South America. Containing no palm oil, no sugar alcohols or artificial sweeteners, these white chocolate chips are a diabetic, keto and low carb person's favourite new treat.
Also, I have recently come across a melting wafer that is made by Bake Believe. Bake Believe No Sugar Added White Melting Wafers are made with real vanilla and are easy to melt. Sweetened with all-natural stevia and made with only non-gmo ingredients these convenient wafers give you all the taste without added sugar. I recently bought these at my local Walmart Grocery store and they are buy far the cheapest sugar-free white chocolate product on the market.

Homemade white sugar-free chocolate chips
Although I have yet to try this recipe, I recently came across a recipe on Gnom Gnom for a white chocolate bar recipe that requires only 4 ingredients. I have gotten as far as buying the mould to make these bars into chocolate chips but have yet found the time to try out her recipe.
If you don't mind the extra sugar, both Ghiradelli and Nestle have white chocolate chips on the market. It turns out that 1 white chocolate chip has only 2.7 calories and 0.3 g of sugar.
I estimate that each cookie has about 4-6 pieces of white chocolate chips in each so in reality, using store-bought regular white chocolate chips will only add about 12-18 calories and 1-2 g of sugar to each cookie.
Not as bad as you thought, right?!
Candied Nuts
When I originally posted this recipe, I used regular walnuts. Since making (and LOVING!) my Keto 5-Minute Caramelized Candied Pecans - Sugar-Free as well as my oven Keto Candied Nuts,I thought I would try to incorporate some candied walnuts instead of just plain walnuts...and I have never looked back!
I use my 5- minute Candied Pecans and swap out the pecans with walnuts. However, you can absolutely make this fudge using pecans, almonds or any other type of nut or seed.
3-Basic Ingredients
Nuts - Like I stated earlier, you can use any type of nut you choose. I used walnuts as they are one of the cheaper nuts on the market and since you will be needing about 3 cups of nuts, I chose to save money! You are going to put 2 cups of walnuts and place them in a food processor until they turn into "butter" consistency. The remaining nuts are thrown in a pan that has some butter and sweetener to create the "candied" nut. You can find my candied nut recipe here. If you don't want to be bothered with making candied nuts, you can eliminate this step altogether.
Palm Shortening or Butter - Palm shortening or Unsalted butter is added to the nuts in the food processor to create the creamy texture we all love when it comes to fudge. You are also going to need a little butter for the pan if you are making the candied walnuts. If you only have salted butter, you can use it but just make sure that you taste the mixture before adding any additional salt. Also, if you are using salted butter, I do not suggest that you use any type of nut that is already salted as it will end up being much too salty.
Sugar-Free White Chocolate - You can now buy sugar-free white chocolate at most local grocery stores. If you can't find it, you can always order it on Amazon. I have made this fudge using ChocZero, Lily's and Bake Believe Melting White Chocolate Wafers. I have also tried making this fudge with Bake Believe's White chocolate Chips but for some reason, these did not seem to work as well.

Recipe Steps
- Place 2 cups of walnuts in a food processor and turn it on.
- After approximately 1-2 minutes, add in the butter and sugar-free white chocolate chips
- Turn the food processor back on until the mixture is fully broken down into butter form - taste the mixture and add some salt and the vanilla - Pulse to incorporate
- Add in an additional ½ cup of candied walnuts and pulse until the nuts have been broken down into smaller pieces
- Spread the mixture in a 9 x 5 loaf pan and place it in the freezer to harden
- Once it has solidified, cut the fudge into 24-28 pieces
Easiest Way To Cut Fudge
To make cutting fudge easy, make sure that your fudge has FULLY set before even thinking of cutting it. Fill a glass with hot water and dip your knife into the water. Remove any water on the knife and use the hot knife to easily slice through the fudge.
Storing fudge?
This fudge can be stored either in the fridge or freezer. In the fridge, the fudge will last for at least 30 days and up to 6 months in the freezer.

Keto White Chocolate Fudge with Candied Walnuts
- 2 cups walnuts, unsalted
- 1 cup candied walnuts
- ¼ cup butter, unsalted
- ½ cup sugar-free white chocolate chips (see post for different brands)
- OPTIONAL - vanilla and salt to taste
- Total Time: 10 minutes
- Yield: 28 pieces 1x
Ingredients
- 2 cups walnuts, unsalted
- 1 cup candied walnuts
- 1-2 tablespoon palm shortening (or butter)
- ½ cup sugar-free white chocolate chips (see post for different brands)
- OPTIONAL - vanilla and salt to taste
Instructions
- In a food processor, place 2 cups of nuts and process until mixture becomes the texture of butter.
- Add in sugar-free white chocolate chips and 1 tablespoon of palm shortening and turn the food processor on and continue until the white chocolate has melted and all ingredients have broken down into a butter type texture. If the mixture seems to dry, add an additional 1 tablespoon of palm shortening.
- Taste the mixture and add any salt or vanilla along with the candied walnuts and pulse until only small chunks of nuts remain (5-10 pulses)
- Spread mixture in a parchment lined 9 x 5 loaf pan and set in the freezer for 1 hour or until fudge hardens.
- Remove fudge from pan and cut into 24-28 squares
- Store the fudge in the fridge or freezer.
