Keto White Chocolate Fudge with Candied Walnuts

  • 1 cup candied walnuts
  • 1/4 cup butter, unsalted
  • 1/2 cup sugar-free white chocolate chips (see post for different brands)
  • OPTIONAL - vanilla and salt to taste

Ingredients

  • 2 cups walnuts, unsalted
  • 1 cup candied walnuts
  • 1-2 tbsp palm shortening (or butter)
  • 1/2 cup sugar-free white chocolate chips (see post for different brands)
  • OPTIONAL - vanilla and salt to taste

Instructions

  1. In a food processor, place 2 cups of nuts and process until mixture becomes the texture of butter.
  2. Add in sugar-free white chocolate chips and 1 tbsp of palm shortening and turn the food processor on and continue until the white chocolate has melted and all ingredients have broken down into a butter type texture.  If the mixture seems to dry, add an additional 1 tbsp of palm shortening.
  3. Taste the mixture and add any salt or vanilla along with the candied walnuts and pulse until only small chunks of nuts remain (5-10 pulses)
  4. Spread mixture in a parchment lined 9 x 5 loaf pan and set in the freezer for 1 hour or until fudge hardens.
  5. Remove fudge from pan and cut into 24-28 squares
  6. Store the fudge in the fridge or freezer.

  • You can sprinkle additional sugar-free white chocolate chips on top if you want for decorations
  • Nutritional information is for the recipe using the ChocZero White Chocolate chips
  • If you want sweeter fudge, use replace 1 cup of walnuts with a cup of candied walnuts.
