- 2 cups walnuts, unsalted
- 1 cup candied walnuts
- 1-2 tbsp palm shortening (or butter)
- 1/2 cup sugar-free white chocolate chips (see post for different brands)
- OPTIONAL - vanilla and salt to taste
Instructions
- In a food processor, place 2 cups of nuts and process until mixture becomes the texture of butter.
- Add in sugar-free white chocolate chips and 1 tbsp of palm shortening and turn the food processor on and continue until the white chocolate has melted and all ingredients have broken down into a butter type texture. If the mixture seems to dry, add an additional 1 tbsp of palm shortening.
- Taste the mixture and add any salt or vanilla along with the candied walnuts and pulse until only small chunks of nuts remain (5-10 pulses)
- Spread mixture in a parchment lined 9 x 5 loaf pan and set in the freezer for 1 hour or until fudge hardens.
- Remove fudge from pan and cut into 24-28 squares
- Store the fudge in the fridge or freezer.

- You can sprinkle additional sugar-free white chocolate chips on top if you want for decorations

- If you want sweeter fudge, use replace 1 cup of walnuts with a cup of candied walnuts.
