Have you ever had acorn squash? If you haven't, you are missing out on one of the most flavorful types of squash. Although slightly higher in carbs then the spaghetti squash, the nutritional value significantly outweighs it's higher level of carbohydrates.
Who doesn’t love salty sweet? This taco stuffed acorn squash combines the mild sweetness of the acorn squash with the salty, spiciness of taco meat for a deliciously hearty meal.
The Execution
The first step involves cutting the acorn squash.
Take a sharp knife and, starting at the stem, cut through the squash until little resistance is felt.
Continue to rotate the squash while cutting through the middle until you reach the other side of the stem. Take both sides of the squash in your hands and gently twist to separate each section.
Using a spoon, remove all the seeds from the middle and brush the interior of the squash with olive oil. Sprinkle some salt all over the inside of the squash.
Turn the squash cut side down on a baking sheet and roast at 425 degrees F for 20-40 minutes depending on the size of the squash. You will know it is cooked when the outer skin gently gives under pressure.
As the squash is roasting, simply combine the ground turkey and taco spice until thoroughly cooked.
When the squash is done roasting, top the squash with the taco meat and place it under the broiler for a couple of minutes until starting to brown.

Ingredients
- 1 lb ground turkey or other ground meat
- 2 Tbsp taco seasoning
- 1 medium onion, chopped
- 2 acorn squash, roasted
- olive oil and salt
- toppings of choice such as tomatoes, guacamole etc.
Instructions
- Preheat oven to 425 degrees F.
- Cut acorn squash. Divide in two, remove seeds, brush with oil and season with salt. Place in a pan, cut side down.
- Roast squash for 20-40 minutes depending on size. Squash is done when outer skin gives way to gentle pressure.
- While squash is roasting, add ground meat to skillet on medium heat. Cook meat thoroughly. Add onion and continue to cook until onions soften (about 5 mins.).
- Add 2 tablespoon taco seasoning, stir to combine and cook for an additional 5 minutes.
- Once squash is cooked, remove from oven and fill with taco mixture. Place under the broiler for 5 minutes.
- Remove from oven and enjoy!
